Nach dem Verfahren des Hauptpatents 336246 wird bei dem an sich bekannten Verfahren, der Lufthefefabrikation die Luft in Form besonders feiner Luftbläschen in der Gärflüssigkeit dicht über dem Boden verteilt und unter Benutzung eines Rührwerkes die Aufsteigegeschwindigkeit der Luftbläschen vermindert. Dadurch wird gegenüber dem bisherigen Verfahren zunächst erreicht, daß die Luftmenge in der Gärflüssigkeit bei Zufuhr gleicher Mengen von Luft wesentlich erhöht wird; denn die Luft bleibt wesentlich länger in der Flüssigkeit. Um die gleiche Menge Luft in der Gärflüssigkeit zu haben, wird es deshalb bei Anwendung des neuen Verfahrens einer erheblich verringerten Luftzufuhr bedürfen. Abgesehen von der hierdurch erreichten Kraftersparnis wird die Hefeentwicklung in günstiger Weise beeinflußt, also der Zweck des Belüftungsverfahrens in erhöhtem Maße erreicht.
