Description
Bekanntlich trüben sich Weine, Liköre, Fruchtsäfte und andere pflanzliche Extrakte (Absude von Rinden und Hölzern) unter der Einwirkung von Kälte; filtriert man sie, so tritt unter der Einwirkung von Luft, insbesondere beim Schütteln, eine neue Trübung auf. Der Erfinder hat nun ermittelt, daß diese Erscheinung, wie dies durch eine große Anzahl von Versuchen festgestellt worden ist, darauf beruht, daß die pflanzlichen Extrakte, insbesondere diejenigen, welche tanninhaltige Stoffe oder Tannin enthalten, wenn sie gleichzeitig der Einwirkung von Luft und Kälte unterworfen werden, unlösliche Stoffe von einer noch nicht näher festgestellten chemischen Beschaffenheit absetzen, die als »Phlobaphene« bezeichnet werden, und daß diese Absetzung selbst nach einer neuen Erhöhung der Temperatur der Flüssigkeit durch die Wirkung der dabei sich lösenden Luft fortdauert. Der Erfinder hat ferner festgestellt, daß verschiedene im Wein enthaltene Säuren geeignet sind, durch die im Wein bei niedriger Temperatur gelöste, wahrscheinlich ozonisierte Luft oxydiert zu werden, indem sie teilweise in Weinsteinsäure übergehen, die, sofern man in Gegenwart einer hinreichenden Menge von Kali oder Kalk arbeitet, in Form von Bitartraten ausfällt, und die sich andernfalls mit dem Alkohol verbindet, um Äther zu bilden. Der Erfinder hat des weiteren festgestellt, daß, wenn die Temperatur von neuem bis auf 25 bis 350 C. erhöht wird, diese oxydierende Wirkung nicht nur nicht aufhört, sondern noch energischer auftritt, derart, daß in irgendeinem Wein ο. dgl., aus welchem man die Bitartrate durch Filtration bei niedriger Temperatur ausgeschieden hat, bei gewöhnlicher Temperatur während des Freiwerdens der Luft, die in ihm bei niedriger Temperatur gelöst war, eine weitere Ausfällung von Bitartraten und von Phlobaphenen stattfindet. Diese Behandlung kann schon genügen, um alle Stoffe, die durch Abkühlung und Oxydation abgeschieden werden, auszufällen.
