Abstract
Description
Liquor in containers and methods of treating Grains to be added to such Bs are known to be specific from Spirits obtained from fruit, especially fruit brandies, especially because of this to make advertising effective and attractive, so that you can enter the filtered container, in which they are bottled, one or more copies of the fruit (e.g. one Pear, plum, grape, etc.) from which the spirit is made. the unintentional color and taste influences arising in the process The spirit can however only with very expensive technical processes and very imperfect avoided or eliminated. Has continued this approach has the disadvantage that the fruits brought in are often relatively occupy a large proportion of the container volume, so that special vessels with not Standardized dimensions must be used if the container still has one should contain a standardized amount of the spirit. There is also the addition of fruits does not make sense for spirits that are not made from a fruit base.
The invention is based on the object in other ways than by Adding fruits an effective way of advertising in transparent containers Bottled spirits cu create that with easy and economically feasible Process steps should be achievable and which, in particular, if aucii not ultimately, to be applicable to spirits derived from grains.
According to the invention is a spirit drink filled into transparent containers characterized in that animal spirits are swollen to a stable swelling state and grains which have been at least partially freed from soluble constituents by extraction are supplied.
Under grains in the sense used here are intended to mean not only understood cereal bodies (e.g. wheat, rye, barley, maize, irse, rice or the like) but also corporeal seeds of any kind, e.g. the seeds of Apples, pears, carob or the like. Of course you will get those grains choose that have a direct relation to the spirit, e.g. those grains, which themselves or their fruits are used to produce the mash, through their distillation the spirit is obtained, e.g.

The added grains must not change the characteristic Cause the smell and taste of the spirit and, if possible, no color extracts or release contaminating components into the spirit. The bodies are also allowed to not themselves in their appearance or their color over a longer period of time change in such a way (e.g. by swelling, bursting, germination, etc.) that they become unpredictable or impair the ability of the spirit to be consumed. These demands are according to the invention by the previous, driving to a stable state Swelling and extraction of the grains taken into account.
A method of treating the for adding too the Grains specific to spirit are characterized according to the invention in that the air-dry grains in a swelling liquid consisting essentially of diluted Alcohol in a concentration approximately corresponding to the drinking strength of the spirit exists, causes it to swell in heat and then separates it from the swelling liquid.
Through the swelling, the grains are firstly stabilized in terms of volume so that that with the subsequent addition of the spirit no further swelling and volume increase more can take place. Second, the swelling in heat causes a Extraction of the soluble .itoffe a, so that the grains later no soluble substances can give more to the spirit. Thirdly, the swelling in Heat to inactivate the enzyme and active ingredient system of the grains, so that later in the spirit there are no enzyme-related material conversions, which e.g. would be associated with the emergence of further soluble constituents can.
Grains of cereals or fruits are also available in their commercial form Dry form represents a living organism that can be found under suitable climatic conditions can develop into a corresponding plant. In the recording of water, a change in volume occurs due to swelling of the contained in the cells Nutrient reserves (starch, proteins, cell wall components) on, and normally the seed plant embedded in the seed begins by activating its complicated structure Enzyme and active ingredient system the nutrient reserves for their development; to prepare and to control the formation of new cells. This breaks down starch, protein and cellulose, and the changes mentioned occur.
However, the invention is based on the knowledge that the corrugation take place with inactivation of the enzyme system and carried out to a state which then remains stable in the spirit.
For this stabilization it is particularly important that the alcohol-water ratio the swelling liquid is at least approximately the same as that of the spirit.
Swelling is preferably carried out at temperatures above 500 ° C, in particular between about 600 ° C. and 800 ° C., preferably at 650 ° C. By The increase in the volume of the grains achieved by swelling should be achieved with conventional grain sorts be around 35 to 45%. It is advantageous to carry out the swelling during a duration of about an hour.
While the grains later of the spirit are generally very small Amounts are added, see because of the mentioned risk of falsification of the The amount of spirits contained in the Be @@@@ ter can be sent to the previous sources work advantageously with a much smaller amount of liquid. As beneficial the use of roughly equal proportions of grains and swelling liquid has been found proven.
The swelling liquid is absorbed by the grains as it swells and falls. About the increasingly less swelling liquid until the end of the swelling process to use it evenly and to bring it into contact with the grains, that will Swelling is preferably carried out in a closed container, which is around a horizonta oner inclined axis, in particular with about 5 to 10 revolutions per minute, can rotate.
A very important aspect of the swelling is a rupture to avoid the skin of the grains. Any damage to the grain skin would not only affect the appearance of the grains, but also the release of soluble or also favor solid components in the spirit. In an advantageous embodiment the invention You largely injure the corneal skin as a result exclude that the swelling is carried out in a closed container, wherein the amount of grain filled in is selected in relation to the container volume so that After swelling, the grains fill the container with mutual pressure. Under Pressing is understood to be a mutual pressure that is sufficient that the grains Form an immobile mass in the container. this creates mutual chafing the horns and thus damage to the seed skin, which has become soft and sensitive avoided by abrasion. In addition, the mutual pressing of the grains a part of the penetrated swelling liquid is pressed out again and thereby the Extraction favors. Preferably the amount of grain is in relation to the container volume chosen so that after swelling there are still free spaces between the pressing Grains remain that allow the swelling liquid to drain off. The required The relationship between the amount of grain and the volume of the container can be easily determined by trial and error find out and of course depends on the type of grains to be treated and on the degree of swelling desired.
As mentioned, the swelling is followed by an extraction of the soluble ones Components. In order to drive this further, one can after swelling in heat the grains for a further time, in particular about 10 to 60 times the swelling time, treat with the swelling liquid, especially at room temperature, before this is separated.
For even more extensive extraction, after separating the Source liquid a post-extraction in one or more stages by means of a Perform extraction liquid. During this re-extraction, the Grains are preferably still in mutual compression in the container in order to damage to the cornea and renewed swelling in the extraction fluid to prevent.
The re-extraction can be done at room temperature, but is advantageous carried out in heat, in particular at about 30 to 500 C. The extraction liquid is preferably used in each extraction step in an amount that is about residual amount of swelling liquid remaining after swelling, generally about 20 to 40k of their initial quantity. Used preferably man also used as extraction liquid alcohol, especially in one of the drinking strengths concentration appropriate to the spirit. Compliance with the required alcohol concentration as well as avoiding any influence on the taste that is foreign to the spirit the easiest way to use it as a swelling liquid and / or as an extraction liquid a spirit of the same or similar kind as that to which the grains are added should be used.
After all the swelling and extraction stages have been carried out, the The grains are then stored in a layered layer with the ready-to-drink spirit or in a suitable form Way when filling the spirit into the transparent container.
The invention is explained in more detail with reference to the following exemplary embodiment explained.
100 kg air-dry wheat grains with approx. 11% moisture should be treated and stabilized in such a way that they can be put into bottled grain brandy can be added.
The specified amount of grains is used together with 1001 Eorn brandy from 38% by volume, if desired after preheating to 30 to 400 C, in a lockable Filled container, which is rotatably mounted about a horizontal or inclined axis is. The container should be made of a non-corrosive material, e.g. glass or stainless, polished steel, and if possible be provided with a heating jacket. Man hold the mixture for about an hour at 650 C, with the container at 5 to Rotates 10 revolutions per minute.
The dry grains initially have a volume of 122 1, the Mix the grains with the brandy a volume of 174 1. After the hour Treatment, the mixture has a total volume of 20, l.
According to this, the increase in volume of the swelled wheat grains is approximately 41%. The volume of the container is to be reduced to less than the stated final volume, i. dimensioned only slightly over 200 1, so that the grains according to ae. Swelling the volume Fill in tightly packed, but with free spaces between them.
The container is then left at room temperature for approx. Rotate for 50 hours. Then the freely draining through a fine-meshed sieve, strong brown colored liquid can be removed. She still has a remaining amount of about 30 l. Their extraction content is 4.3 g of dissolved components per 100 cc. The optical extinction value can be used as a measure of the extraction content serve at a wavelength of 540 µ. In the example it is 0.273.
A liquid extraction is then carried out at room temperature or higher Temperature under the same rotation speed using each 20 to 30 1 grain brandy as extraction liquid. The first stage lasts 73 Hours and leads to an extract content of 3.1 g per 100 ccm in the runoff Extraction liquid corresponding to an absorbance value of 0.123. The second Stage lasts 65 hours up to an extract content of 2.30 g per 100 ccm or one Absorbance value of 0.58, the third stage lasts 55 hours and gives an extract content of 1.60 g per 100 ccm or an extinction value of 0.042.
With a total treatment time of 243 hours, i.e. about 10 days, the extract content is reduced to 36% and the extinction value to 15% of the initial values. In the standing process, this would require at least four times the time and three to five times the amount of liquid. One achieves this advantage. through the use of the rotating container, which means that the liquid level is not always above the amount of grains, as is the case with the standing method, but only up to or even below the axis of rotation or even below it. Due to the immobile swollen seeds, which form a common solid body with the container wall, the liquid can ideally move in the exposed interstices, so that effective wetting and treatment is obtained while largely sparing the grains. The intensity of the post-extraction can be increased by warming up using the heating jacket of the container. The duration of the individual post-extraction stages is advantageously based on the respective diffusion equilibrium.
