Die Verzuckerung stärkemehlhaltiger Stoffe wurde bisher in Brennereien fast ausschließlich durch Malzdiastase bewirkt, da anderweitige Vorschläge, insbesondere diejenigen, welche sich auf die verzuckernde Kraft der Schimmelpilze gründeten, zu einer dauernden praktischen Verwertung bisher nicht geführt haben (vgl. die Betriebskontrolle der Spiritusfabrikation von Dr. Julius Szilägyi, Ber-Hn, Verlag von Max Brandt u. Co., 1907). Oidium lactis war bisher aus dem Grunde so wenig beachtet worden, weil es unter den in den Malzkellern sich ansiedelnden Schimmelpilzen nur selten vorgefunden wurde.
