Abstract
The invention describes a method for fattening pigs, in particular male, non-castrated pigs, in particular piglets, in which vegetable charcoal coated with a fat forms part of the animal feed. The coating of the biochar with the fat means that when it is added to the feed, the boar odor in the meat from the male, non-castrated pigs is significantly reduced compared to that of the meat from boars fed with the same feed but without the addition of the fat-coated biochar were fattened.
Description
The present invention relates to a method resulting in the reduction of an intense odor of fattening pigs, particularly boar taint in male fattening pigs, by changing the feed. The method according to the invention causes the absorption of odorous substances or their precursors in the intestines of fattening pigs. The method has the advantage of significantly reducing the intense smell of pork, in particular the boar smell that occurs in the slaughtered meat of the majority of male fattening pigs, without castration or hormonal treatment of these animals.
It is known to castrate male piglets within a short time after birth in order to prevent the development of boar taint in the later slaughtered meat. Because the typical boar taint is not formed in the absence of male sex hormones. During the preparation of the invention, it was also shown that female fattening pigs can also have an intense odor in the slaughtered meat.

Borg Jensen und Jensen, Measurement and Prevention of Boar Taint in Entire Male Pigs, Roskilde, Denmark, 12-14 October 1992, Ed. INRA, Paris 1993 (Les Colloques n° 60), beschreiben Analyseverfahren für Skatol im Verdauungstrakt von Schweinen.Borg Jensen and Jensen, Measurement and Prevention of Boar Taint in Entire Male Pigs, Roskilde, Denmark, 12-14 October 1992, Ed. INRA, Paris 1993 (Les Colloques n° 60) describe analytical methods for skatole in the digestive tract of pigs.
The object of the invention is to specify a method with which the development of a strong meat odor, in particular the boar odor, of the subsequent slaughtered meat is significantly reduced during the fattening of pigs, in particular male piglets. The method should preferably run without castration and without influencing the hormonal development of male piglets.
The invention solves the problem with the features of the claims and in particular provides a method for fattening pigs, in particular male, non-castrated pigs, in particular piglets, in which vegetable charcoal coated with a fat forms part of the animal feed. The method or the biochar is characterized in that the biochar is coated with a fat that has a higher melting point than the body temperature of the pigs, which are piglets in particular, in particular a melting point of at least 45 °C or at least 50 °C C, preferably at least 55°C or at least 60°C, for example up to 100°C or up to 90°C or up to 80°C. The coating of the biochar with the fat means that when it is added to the feed, the boar taint in the butchered meat from the male, non-castrated pigs is significantly reduced compared to that of the butchered meat from boars fed with the same feed but without the addition of the fat-coated biochar were fattened.
The boar taint is mainly formed by androstenone and skatole, but indole is also ascribed a contribution and is described as stable-like to faecal-like or as urine-like to sweat-like or as flowery-sweet.
The effect of the addition of biochar according to the invention, which is coated with fat that has a higher melting point than the body temperature of the pigs, is currently explained by the fact that the fat covers the biochar up to the entry into the part of the intestine or closes its pores, in which the odor-forming substances first appear, so that the biochar is freed from the fat in a targeted manner in that part of the intestine in which odor-forming substances or their precursors are adsorbed. It is assumed that lipases, which at least partially break down the fat, only become active in the part of the intestine in which the vegetable carbon is freed from the fat. It is currently assumed that loading the biochar with adsorbed substances according to the invention is only possible in the rear small intestine or in the large intestine, in particular loading the biochar with skatole and/or indole after the breakdown and/or detachment of the fat from the biochar. Another effect of the vegetable charcoal coated with fat can lie in the promotion of beneficial intestinal bacteria, in particular Gram-positive intestinal bacteria gene, e.g. in weaners. Therefore, the coating of the biochar with fat is also referred to as encapsulation with fat.
The fat can be at least one free fatty acid, optionally the fatty acid can be esterified to form a wax, the free fatty acid, the fatty acid component or the alcohol residue of the wax esterified therewith or the wax having a melting point as specified for the fat according to the invention. The fat, in particular the fatty acid and optionally an alcohol residue of vegetable origin esterified therewith, is generally preferably optionally hardened. The alcohol residue is preferably an ethanol residue. Here, at least one free fatty acid, at least one esterified fatty acid, and mixtures of at least two of these are referred to as fat. The melting point of the fat, which can be at least one free fatty acid, at least one wax and/or a mixture of at least two of these, is preferably determined by means of differential scanning calorimetry (DSC). The fat or the fatty acid is optionally hardened, in particular by partial or complete hydrogenation to the saturated fatty acid.
Optionally, the biochar is treated with superheated steam, for example steam at at least 800° C., after the pyrolytic carbonization of purely vegetable starting materials. It has been shown that the specific surface area of the biochar, which is determined, for example, as the BET surface area by means of nitrogen adsorption, does not necessarily have to be high. Therefore, the biochar can have a specific surface area of at least 1000 m2/g, such as activated carbon, or the biochar can be activated or non-activated biochar. The biochar has preferably been loaded with superheated steam, acid or microorganisms following the pyrolytic carbonization of purely vegetable starting materials. The specific surface area, which is measured, for example, as a BET surface area by means of nitrogen adsorption, is preferably at least 300 m 2 /g, preferably at least 500 m 2 /g or at least 800 m 2 /g, e.g. up to 1500 or up to 1000 m 2 /g, for example between 800 and 1500 m 2 /g.
Optionally, the vegetable charcoal can be coated with carbohydrates in addition to the fat, e.g. with at least one fructo-oligosaccharide and/or galacto-oligosaccharide.
The fat is of vegetable origin and can contain or consist of at least one hardened fatty acid in order to reach the melting point.
The fat, which can be a mixture of different free fatty acids and/or a mixture with fatty acids that can be partially or fully esterified to form a wax, has a melting point of at least 45° C. or at least 50° C., preferably at least 55° C or at least 60°C, for example up to 100°C or up to 90°C or up to 80°C for the total fat forming the coating such that no portion of the coating is liquid below this temperature. This is because the liquefaction of a proportion of the fat that forms the coating of the biochar below this melting point would lead to the release of the surface of the biochar and therefore to the loading of the biochar by adsorption already before the small intestine, and thus to reduced adsorption in the small intestine, especially in it posterior part, and in the large intestine.
The fatty acid is for example at least one C12 to C18 fatty acid, preferably fully saturated, optionally esterified to a wax, for example a C4 to C16 fatty acid esterified with a C2 to C10 alcohol, or a mixture from at least two of these.
Preferred fats are hydrogenated vegetable oils, e.g. from rapeseed, sunflower or palm oil.
The coating of the biochar with the fat is preferably carried out without a solvent, e.g. by mixing the biochar with the fat at a temperature above the melting temperature of the fat and then cooling, optionally subsequent comminution. The mixing can be done by means of a stirrer or an extruder, e.g. a powder mixture of or with the vegetable charcoal and the fat is prepared as a premix at a temperature below the melting point of the fat and these are then mixed at a temperature of at least the melting point of the fat or warmer will. Following mixing of the melted fat with the biochar, the mixture is cooled, e.g., by contact with a chilled surface, which may be, for example, a chilled barrel section of an extruder or a chilled conveyor belt. Alternatively, the mixture of the melted fat with the vegetable charcoal can be cooled by spraying or trickling, optionally with the supply of a cooling medium, e.g.
The fat-coated biochar, which is a mixture of fat with biochar, preferably has a content of at least 50% by weight, more preferably at least 55% by weight, more preferably 60% by weight, even more preferably at least 65% by weight or at least 70% by weight of biochar, or consists of it.
The invention will now be described in more detail by means of an example.
Hardened rapeseed oil, which has a melting point of approx. 65 °C, was used as the fat. This fat was melted at 70 °C and mixed with the same mass of vegetable charcoal in a stirred kettle and, after cooling to room temperature, comminuted. The biochar was powdered pyrolyzed oak wood. The vegetable charcoal coated with the fat in this way had a vegetable charcoal content of 50% by weight. Alternatively, a premix of equal parts by weight of the hardened powdery fat and the biochar was melted with an extruder and the extrudate was chopped into pellet sizes of about 2 to 10 mm.
Lebenstag eingestallt und nach 3 Tagen Eingewöhnung wurden jeweils 6 Tiere über 19 Tage mit Standard-Mastfutter gefüttert, das, bezogen auf die Trockensubstanz enthielt: 53,2 g/kg Rohasche, 191,6 g/kg Rohprotein, 50,6 g/kg Rohfett, 52,4 g/kg Rohfaser, 652,3 g/kg Stickstoff-freie Extraktstoffe, 7,2 g/kg Calcium, 5,4 g/kg Phosphor, 7,2 g/kg Kalium, 2,2 g/kg Magnesium, 51,5 mg/kg Kupfer, 152,8 mg/kg Zink und 408,6 mg/kg Eisen gefüttert, 6 Tiere mit dem Standard-Mastfutter mit einem Zusatz von 2 Gew.-% Pflanzenkohle, die unbehandelt bzw. nicht mit Fett beschichtet war, und 6 Tiere mit dem Standard-Mastfutter mit einem Zusatz von 4 Gew.% der mit Fett beschichteten Pflanzenkohle, die 2 Gew.-% Pflanzenkohle enthielt.18 male piglets that were not castrated were housed on the 21st day of life and after 3 days of acclimatization, 6 animals each were fed for 19 days with standard fattening feed which, based on the dry matter, contained: 53.2 g/kg raw ash, 191 .6 g/kg crude protein, 50.6 g/kg crude fat, 52.4 g/kg crude fibre, 652.3 g/kg nitrogen-free extractives, 7.2 g/kg calcium, 5.4 g/kg phosphorus, 7.2 g/kg potassium, 2.2 g/kg magnesium, 51.5 mg/kg copper, 152.8 mg/kg zinc and 408.6 mg/kg iron, 6 animals fed the standard fattening diet with a Addition of 2% by weight of biochar that was untreated or not coated with fat, and 6 animals with the standard fattening feed with an addition of 4% by weight of the biochar coated with fat, which contained 2% by weight of biochar.
The piglets showed high skatole production capacity as determined by a study performed by Borg Jensen & Jensen (1993) and Lanthier et al. (2006) could be shown.
- The overview derived from this makes it clear that the feeding according to the invention with vegetable charcoal, which is coated with fat, leads to a significant reduction in free indole and free skatole in the colon and in the chyme, both in comparison to the normally fed animals (Control) as also compared to the animals fed the fattening feed with added non-encapsulated biochar (charcoal). SD = Standard Deviation.
