Nach 3 Tagen wird das Tränkmedium gewechselt. Nach 5 Tagen ist die Zuckerkonzentration der Trauben auf 2% abgesunken. Die Trauben haben ihr frisches Erscheinungsbild behalten und werden nun entweder:

- b) zu Rosinen getrocknet
- c) in Tüten kühl aufbewahrt.
