Description
The The present invention relates to an antimicrobial food casing Process for their preparation and their use as artificial Sausage casing.
A Variety of food casings from different raw materials is known. So there are beside the since Natural casings used for centuries skin fiber intestines (= collagen intestines), intestines on Base of regenerated cellulose, of (thermoplastic) starch as well based on synthetic polymers, in particular polyolefins (such as polyethylene, polypropylene, etc.), polyamides, polyesters, polyvinyl chloride (PVC) and / or polyvinylidene chloride (PVDC). With all this food casing exists the problem that during the Storage, especially under unfavorable climatic conditions, such as high temperature and / or high humidity, easily attacked by microorganisms. In particular, is with to be affected by mold or bacteria. Already In the past, therefore, was looking for ways, an infestation the food casing by microorganisms to prevent or suppress their growth.
Zur Immobilisierung können Harze, Proteine miteiner Vernetzerkomponente, Polyesterund Polyacrylsäureemulsionen verwendet werden (US-A 3 617 312).One Way was to enter the inside and / or outside of the envelope low molecular weight biocide or a combination of different biocides apply and optionally add further additives (DE-A 38 07 070, US Pat. No. 4,867,204). Since the premature release of the mostly water-soluble Biocide is a problem, coatings have been developed in which by additional Components that biocide is immobilized. For immobilization, resins, Proteins with a crosslinker component, polyester and polyacrylic acid emulsions can be used (US-A 3,617,312).
The low molecular weight biocides that are common in the application for Food casings are described, for. As glycerol monolaurate, potassium or Sodium sorbate, propylene glycol, isothiazolone, benzisothiazolone and benzimidazole compounds.

Of the Disadvantage of such compounds is that they have a high effectiveness against many types of mold and bacteria, but mostly not for direct food contact is allowed only at certain envelope materials or can be used in certain procedures. Cellulose-based sausage casings, the a certain permeability own, may therefore only be treated with biocides in very small quantities to prevent migration of the substances on the inside of the food casing.
Surprisingly could the problem of bacteria or mold on food casings though also by the use of oligomeric or polymeric poly (alkylenebiguanides) and / or their hydrohalides which are adsorptive or with the aid of a Crosslinkers are covalently bound to the food casing, to be solved. The poly (alkylenebiguanides) and / or their hydrohalides do not belong to the class of bacteriocins. They can be alone or in combination with additional low and / or high molecular weight biocides or other additives be used. The oligomeric or polymeric poly (alkylenebiguanides) are for themselves taken water-soluble, However, they bind so strongly to the food casing that a migration on the inside of the food casing and on the food itself no longer takes place. It is also advantageous that the common Food casings, especially the cellulose fiber sheaths, though a good permeability for many have low molecular weight compounds, but not for oligomers or Polymers.
Die Löslichkeit der Salze in Wasser beträgt bei 23 °C bevorzugt mindestens 0,5 g/l, besonders bevorzugt mindestens 1 g/l.The present invention accordingly provides a biocide-equipped food casing, which is characterized in that it contains an effective content of at least one oligomeric and / or polymeric poly (alkylene biguanide) and / or a salt thereof. The salt may be derived from an inorganic or organic acid. Preferred salts are hydrohalides, especially hydrochlorides, as well as hydrofluorides, hydrobromides, hydroiodides, borates, acetates, gluconates, sulfonates, tartrates or citrates. Generally preferred are poly (hexamethylene biguanide) hydrohalide (PHMB), especially poly (hexamethylene biguanide) hydrochloride. The solubility of the salts in water is preferably at least 23 ° C. at least 0.5 g / l, more preferably at least 1 g / l.
PHMB ist kommerziell bei Avecia unter dem Produktnamen ®Vantocil IB, bei Clariant als ®Sanitized T96-04 oder bei Zeneca als ®Baquacil erhältlich.PHMB is commercially available from Avecia under the trade name Vantocil IB ®, ® from Clariant as Sanitized T96-04 or Zeneca as Baquacil ®.

Polyalkylenbiguanide und deren Salze sind seit langem als Desinfektionsmittel bekannt und findet Anwendung in der Lebensmittelindustrie zur Reinigung und Desinfektion von Räumen, Geräten, zur Stabilisierung von Getränken und Wasser.polyalkylene biguanides and their salts have long been known as disinfectants and finds application in the food industry for cleaning and disinfecting rooms, Devices, for the stabilization of drinks and water.
It is used as a local antiseptic in wound healing and in special solutions for cleaning and sterilizing contact lenses. Surprisingly has been shown that this Biocid not only has its effectiveness in solution, but also adsorptively or covalently bound to a surface its effectiveness can still develop.
The Biocid already has a purely adsorptive binding to cellulose surfaces Excellent adhesion and is virtually insoluble in water. Yet a covalent cross-linking on the surface is possible. Suitable as a crosslinker are basically all compounds that have a covalent linkage of the poly (alkylene biguanide) s and / or the corresponding salt with the shell material effect. The are in particular dialdehydes, such as glutaric dialdehyde or glyoxal, also crosslinkers on epichlorohydrin, formaldehyde, isocyanate, Polyamide-epichlorohydrin or epoxy base.
In order to obtain a sufficient biocidal effect, the poly (alkylene biguanide) and / or salt thereof is generally used in an amount of at least 10 mg / m 2 , preferably from 10 to 1000 mg / m 2 , more preferably from 50 to 500 mg / m 2 , applied. Migration to the inside of the surface could not be observed when extracted with various substances that mimic the properties of foods, as well as with various solvents, each at 85 ° C for 4 h.
The Poly (alkylene biguanide) and / or its salt may be more synergistic Way cooperate with another biocide, where already a small amount of poly (alkylene biguanide) to a significant increase in Effectiveness of a for By itself, it leads to much weaker biocides.
Polymethacrylsäurederivate etc..In combination with a substantially weaker biocidic polymer even amounts in the range of 10 to 200 mg / m 2 , preferably in the range of 10 to 100 mg / m 2 can lead to a significant increase in biocidal efficacy. The weak biocidal polymer is preferably derived from the family of polycations. These may be amino-functionalized polymers such as chitosan, polyethylenimine, lysozymes or polyacrylic or polymethacrylic acid derivatives, etc.
The oligomeric or polymeric biocide is alone or in combination with other high or low molecular weight biocides for use in tubular food casings of various types Kind suitable. Furthermore, the biocidal activity by addition of chelating agents, such as ethylenediaminetetraacetic acid (EDTA), citric acid, still be further improved. The biocide is preferably on sheaths Cellulose-based, but it can also be used in polymer shells synthetic plastic such. As polyamide, polypropylene or PVC and textile covers be used.
It Today there are two economically significant production processes of cellulose or fiber casings. These differ essentially in the type of spinnable used Cellulose solutions.
In the hitherto most widely used viscose process, the cellulose is converted into alkali-soluble cellulose xanthate after prior treatment with the aid of carbon disulfide. This solution can be used for the extrusion of tubular cellulose or fiber casings. In fiber casings, a fiber reinforcement, usually a fiber paper, is coated with cellulose xanthate. The cellulose xanthogenate is converted back into so-called regenerated cellulose after the extrusion process under the action of sulfuric acid. The cleaning of tubes of by-products and acid residues occurs when passing through wash baths. The completion of the production line is a drying process to remove excess water from the gel hose.
B. the equipment the covers with a plasticizer, the impregnation the inner and / or outer shell surface with Additional components for controlling the adhesion to the sausage meat, the application of a additional Oxygen and water vapor barrier and the treatment of the shells with Liquid smoke, Flavors and colors are mentioned here. In addition to the until today current impregnation method for Refinement of food casings, can However, finishing components are also added directly to the viscose
Die im Zusammenhang mit dem Viskoseverfahren bekannten und oben beschriebenen Veredelungsschritte können in analoger Weise in das NMMO-Verfahren integriert werden.alternative Methods for derivatizing the cellulose are those in which the cellulose by the action of special solvents or complexing agents directly in solution is brought. Due to its topicality for sausage casing production Here, only the NMMO method is named. The procedure is based on the solubility of cellulose in tertiary Amine oxides, such as N-methyl-morpholine-N-oxide. The related to the viscose known and described above finishing steps can be integrated in an analogous manner in the NMMO process.
Both in principle, different production processes lead to cellulose or fiber-reinforced cellulose casings, the for the Production of liquid smoke impregnated sausage casings are suitable. For the invention therefore plays the manufacturing process of the starting material no role The packaging of the cases following the respective process may include the production of roll goods, bindings and gathering the roll goods to caterpillars.
Of the Application of the biocid-active component on the shell surface can inline or online by spraying, Diving or roller application. It is also possible while the shirring process the sheaths equipped with the biocide. An addition of the biocides to the viscose with subsequent regeneration the cellulose is also possible.
The Biocide can concentrated or diluted solutions on the material surface applied or metered into the viscose. The determination the surface concentration carried out with help a nitrogen determination according to Kjeldahl.
Food casings Synthetic plastic are mainly produced by extrusion processes. The application of the biocide is expedient by spraying, dipping or when assembling the roll goods.
The biocide equipment of textile covers becomes like the covers on cellulose or polymer base by spraying, dipping or packaging the roll goods performed.
Be the food casing according to the invention in the first Line as artificial Sausage casings, especially for Raw sausage, boiled sausage or cooked sausage.
The following examples serve to illustrate the invention. In it, the microbiological efficacy was examined by inoculating the outside of the casing with various molds. For this purpose, pieces of defined size were cut out of the food casings and inoculated with a germ suspension in saline-peptone solution. The fungicidal activity was determined against Aspergillus niger ATCC 16404 and Penicillium nalgiovense ATCC 10472. The inoculation strength was max. 10 2 per example for Aspergillus niger and 10 4 for Penicillium nalgiovense. Subsequently, after 3, 7, 14 and 21 days of storage at room temperature and 100% humidity, a microbiological approach was carried out. For this purpose, the examples were incubated on a YGC agar (yeast-glucose-chloramphenicol) for 5 days at 25 ° C humidity. Subsequently, the germ count was determined. In addition, after 14 and 21 days of storage at room temperature and 100% humidity, a purely visual or microscopic evaluation of the examples was carried out. The results are shown in Tables 1 and 2. It can be seen very clearly from Examples 1 and 2 that a significant fungicidal action is already present at a concentration of 10 mg / m 2 or more.
Tabelle 3: Extraktionsuntersuchungen zu PMHB auf einer Nahrungsmittelhülle auf Cellulosebasis The adhesion of the biocide to the casing was examined by extraction tests on a cellulose based casing. For this purpose, the shell was treated with water at 30 ° C. for 30 minutes and at 80 ° C. for 4 hours. This was followed by a determination of the biocide concentration on the shell. Table 3 provides an overview of the results. Under the respective extraction conditions, no significant decrease in PNMB concentration was observed. It is replaced by a watering only loosely adsorbed PHMB even at low temperatures of 30 ° C in small quantities from the shell. This assumption is corroborated by the comparison of the residual amount of biocide using much harder extraction conditions (4 hours at 80 ° C) which does not enhance the PMHB release from the shell. Table 3: Extraction studies on PMHB on a cellulose-based food casing
The fungicidal activity of less potent biocides was significantly enhanced by small amounts of PHMB. This was demonstrated by the example of a mixture of chitosan with PHMB (Table 4).
The Examples 1 to 22 were obtained by external spraying of roll stock with dilute Vantocil IB solution produced. The order quantities of Biocid on the sausage casings were by spraying with solutions accordingly graduated concentration achieved.
Diese waren nach dem Standard-Viskoseverfahren hergestellt.to Preparation of the comparison, Examples 1 to 5, 9 to 13 and 17 to 22 Nalo fiber casings used of caliber 95. These were according to the standard viscose process produced.
Die Hüllen wurden nach einem Standard-Extrusionsverfahren gefertigt.to Preparation of Examples 6, 7 and 14, 15 became a standard NaloSlice colorless from unoriented, non-shrinkable polyamide in caliber 60 used. The covers were manufactured according to a standard extrusion process.
