Abstract
Die Erfindung betrifft ein Verfahren zur Herstellung von Grundstoffen, insbesondere fuer alkoholfreie und alkoholarme Getraenke. Die Erfindung kann in der Getraenkeindustrie sowie in der Industrie, in der aromatisierte Nahrungs- und Genuszmittel hergestellt werden, angewendet werden. Erfindungsgemaesz koennen Grundstoffe, insbesondere fuer alkoholfreie Getraenke mit einem Alkoholgehalt bis zu 0,5 g/100 g und alkoholarme Getraenke mit einem Alkoholgehalt bis zu 4,5 g/100 g hergestellt werden. Die verwendeten Grundstoffe werden direkt durch Fermentation von metabolisierbaren kohlenhydrat- und stickstoffhaltigen Naehrsubstraten mittels aroma- und/oder saeurebildenden Mikroorganismen gewonnen. Citronensäure, wird auch fermentativ hergestellt, in kristalliner Form isoliert und zur Grundstoffherstellung eingesetzt. Bisher ist bei der Herstellung von alkoholfreien und alkoholarmen Erfrischungsgetränken die Anwendung von Grundstoffen, die mikrobiell gewonnene Aromagemische enthalten, noch nicht beschrieben worden. So sind Verfahren bekannt, die aus den durch die Mikroorganismen gebildeten Aromastoffgemischen eine Isolierung und Konzentrierung einer Aromakomponente vornehmen, mit dem Ziel der Gewinnung eines reinen Produktes (z. Bis Jetzt erfolgte aber noch keine Anwendung von solchen Verfahren bei der Herstellung von alkoholfreien und alkoholarmen Getränken, die ein anderes Grundaroma besitzen als durch den Rohstoff (Bierwürze, Fruchtsaft u.a.) ausgeprägt wird. Ein Verfahren zur Gewinnung von einem säuerlichen Getränk mittels milchsäurebildenden Mikroorganismen wird in EP 0.113.055 beschrieben. Dort werden verschiedene Fruchtsäfte mit milchsäurebildenden Mikroorganismen der Gattungen Lactobacillus, Streptococcus oder Pediococcus beimpft. Da der Fruchtsaft bakteriostatische Komponenten enthält, absorbiert man diese Stoffe an verschiedenen Mitteln,'wie Amidharze, Kieselgur, Aktivkohle und Anlonenaustauscherharze, die quarternäre Ammoniumverbindungen enthalten, um eine Anreicherung der Mikroorganismen zu etmöglichen.
