Abstract
Die Erfindung betrifft ein Verfahren zur Konzentrierung von Fluessiglabenzym fuer die Milchdicklegung. Ziel der Erfindung ist es, die den bekannten Verfahren zur Konzentrierung anhaftenden Maengel bezueglich der Wirtschaftlichkeit der Verfahren, der Verluste, des Energiebedarfes und der Umweltbelastung zu beseitigen. Erfindungsgemaess wird das dadurch geloest, dass niedrigkonzentrierte Labloesungen mittels Ultrafiltration bei Retentatueberstroemungen unter 0,5 m3/m2h an Plattenmodulen auf Konzentrierungsgrade zwischen 1:1 und 50:1 gebracht werden und die bei der Ultrafiltration von extraktiv gewonnenen Labloesungen anfallenden Permeate wieder zur Extraktion eingesetzt werden.The invention relates to a method for the concentration of fluessiglabenzym for the milk thickening. Das wirkt sich einschränkend auf die Wirtschaftlichkeit des Verfahrens aus. Ein weiterer wesentlicher Nachteil ist eine unerwünschte Anreicherung aller herkunftsbedingter Begleitstoffe im Endprodukt. Dadurch können die hochkonzentrierten Lablösungen so viskos werden, daß sie nur sehr schwer filtrierbar sind, was für die Konfektionierung erschwerend und verteuernd wirkt. Besondere Bedeutung für die Erhaltung der Lagerstabilität und der milchgerinnenden enzymatischen Aktivität hat die Einstellung auf Aufrechterhaltung eines speziellen ionischen Profiles der Lablösung. Bei der Anwendung derVakuumdestillatin wird dieses im Sumpfprodukt verändert und es kommt zu zusätzlichen Verlusten, besonders im Hinblick auf die Lagerstabilität. Dieser stufenweise geführte Prozeß ist nicht nur zeitaufwendig, sondern begünstigt neben einem mikrowellen Befall und damit verbundenem Verderb der Enzymlösung auch die Auslaugung unerwünschter Gewebebestandteile, insbesondere Schleimstoffe und Fremdproteine durch die lange Kontaktierungszeit mit der Extraktionslösung. Bei der Nachextraktion ist weiterhin von Nachteil, daß keine exakte Einstellung der Labstärke des Endproduktes vorgenommen werden kann.
