Dietetický fermentovaný mliečny výrobok sa připraví z
pasteurizovaného mlieka s obsahom tuku 0,05 až 30 %
hmot a s kyslostou max. 20 °T. Mlieko sa inokuluje kulturou
mikroorganizmu Streptococcus thermophilus CCM
4264, následné sa po přidaní b-galaktozidázy fennentuje 5
až 12 h pri teplote od 45 do 29 °C. Na inokuláciu sa okrem
S. thermophilus CCM 4264 može použí‘t Lactobacillus
delbrueckii subsp. bulgaricus CCM 4179 alebo 4180, L.
plantarutn CCM 4266, Kluyveromyces marxianus var.
bulgaricus CCY 43-3-3 a K. marxianus var. lactis eS-Y-1,
jednotlivo alebo vo vzájemných zmesiach v akomkoívek
pomere, v množstve od 1,1.10* do 1,1.108 koloniítvoriacich
jednotiek/dm3.
