Abstract
La invención se relaciona con la industria azucarera, donde el "INHIBIDOR DE LAS ENZIMAS HIDROLASAS, POLIMERASAS Y TRANSFERASAS" puede ser usado para mejorar la calidad de la cana momentos antes del corte al disminuir la concentración en sus jugos de otros oligosacáridos y polisacáridos perjudiciales o para mantener su calidad entre el corte y la molida. El "INHIBIDOR" se caracteriza por ser un derivado de los producto de la degradación térmica de la sacarosa obtenidos en presencia de aminas con radicales alquílicos de hasta 10 carbonos con notables propiedades como "INHIBIDOR" de las enzimas involucradas en la transformación de la sacarosa, resultando una mezcla de N-glicósidos y productos Amadori, cuyas propiedades inhibidoras están determinadas por las características estereoquímicas y proporciones de los residuos de los azúcares que forman estos compuestos, y la naturaleza de los grupos alquílicos presentes como sustituyentes de las alquilaminas, compuestos que se acumulan en una proporción entre un 50 y un 90% de1 total de la mezcla. El producto consiste en una composición en la que aparecen N-Glicosidos, productos Amadori y polímeros coloreados con capacidad inhibidora de las enzimas involucradas en la degradación de la sacarosa y su transformación en otros oligosacáridos o polisacáridos, ejerce un efecto protector de la cana cuando se aplica en forma de disoluciones acuosas (4 a 10 ppm) a la cana viva, durante la cosecha, la preparación para la molida o se adiciona directamente al jugo e evita las pérdidas de sacarosa.
