Abstract

La invención se relaciona con la industria azucarera, donde el "INHIBIDOR DE LAS ENZIMAS HIDROLASAS, POLIMERASAS Y TRANSFERASAS" puede ser usado para mejorar la calidad de la cana momentos antes del corte al disminuir la concentración en sus jugos de otros oligosacáridos y polisacáridos perjudiciales o para mantener su calidad entre el corte y la molida. El producto consiste en una composición en la que aparecen N-Glicosidos, productos Amadori y polímeros coloreados con capacidad inhibidora de las enzimas involucradas en la degradación de la sacarosa y su transformación en otros oligosacáridos o polisacáridos, ejerce un efecto protector de la cana cuando se aplica en forma de disoluciones acuosas (4 a 10 ppm) a la cana viva, durante la cosecha, la preparación para la molida o se adiciona directamente al jugo e evita las pérdidas de sacarosa.
