With the increasing of labor cost, proper personnel are difficult to recruit for the work of kitchen dish washing, the high-temperature and high-humidity environment of a dish washing room is unfavorable for the health of human bodies, and the reduction of the number of people who wash dishes becomes inevitable. At present, in small chain fast food enterprises, a dish washing machine for washing tableware by using high-pressure water is the first choice, and the dish washing mode has to carry out three steps of deslagging, soaking and prewashing before the tableware enters equipment for washing.
The step of removing the residue is to manually remove the fine and broken particles adhered to the surface of the tableware by a hand, and the fine and broken particles are generally removed by a brush or a glove. The soaking is generally to soak solidified protein with strong adhesion on the surface of the tableware in warm water or cold water to soften the residue, and then to manually remove the residue. The pre-washing is to wash and remove oil stains and food residues on the surface of the tableware. These three steps necessitate a dedicated basin at the front of the cleaning apparatus for soaking and pre-washing. These three steps are labor intensive, time consuming, and labor intensive. Currently, the whole commercial cleaning process takes the most time. Under the condition of hand strain, the staff operating the greasy dirt food residues also often participate in the placing work of the tableware after subsequent cleaning, which brings cross contamination of the tableware and great hidden trouble to the cleaning quality of the tableware.
