In a preferred embodiment, when the dough cutting knife comprises a section (i.e. when the knife teeth of each section are distributed the same), in each section, the knife teeth with the width of 1-1.5 mm in the driving knife teeth 11 and the driven knife teeth 22 account for 20-25%, such as the knife teeth with the width of 1-1.3 mm or 1.3-1.5 mm, the knife teeth with the width of 1-1.5 mm account for 20-22%, 22-24% or 24-25%, the knife teeth with the width of more than 1.5mm and less than 2.5mm in the driving knife teeth 11 and the driven knife teeth 22 account for 50-60%, such as the knife teeth with the width of more than 1.5mm and less than 1.6mm, 1.6-2.0 mm, 2.0-2.3 mm, 2.3-2.4 mm or more than 2.4mm and less than 2.5mm, the knife teeth with the width of more than 1.5mm and less than 2.5mm account for 50-55%, 55% or 56%, the knife teeth with the width of 2.3-2.5 mm, such as the knife teeth and the knife teeth with the width of 2.5mm or 2.5mm, such as the knife teeth account for 50-2.5 mm, the cutter teeth with the width of 2.5-3 mm account for 20-23% or 23-25%.
In a preferred embodiment, when the dough cutting knife comprises more than two sections (i.e. when the cutting teeth of the sections are distributed more than two), in at least one section, the width of the driving cutting teeth 11 and the width of the driven cutting teeth 22 are 20-25%, such as 1-1.2 mm, 1.2-1.3 mm or 1.3-1.5 mm, the width of the cutting teeth of 1-1.5 mm is 20-22%, 22-23%, 23-24% or 24-25%, the width of the cutting teeth of the driving cutting teeth 11 and the driven cutting teeth 22 is 50-60%, such as the width of the cutting teeth of more than 1.5mm and less than 2.5mm is more than 1.5mm and less than 1.6mm, 1.6-2.0 mm, 2.0-2.2 mm, 2.2-2.3 mm, 2.3-2.4 mm or 2.4mm and less than 2.5mm, the width of the cutting teeth of 1.5mm and less than 2.5mm is more than 50-60%, and the width of the cutting teeth of the driving cutting teeth of 1.5mm and less than 2.5mm and 5-55%, for example, the width of the cutter teeth is 2.5-2.7 mm, 2.7-2.8 mm or 2.8-3 mm, and the width of the cutter teeth is 20-22%, 22-23% or 23-25%.
In a preferred embodiment, the width of the driving cutter tooth 11 and the width of the driven cutter tooth 22 are respectively 0.3 mm-30 mm.
In a preferred embodiment, the driving blade teeth 11 partially protrude into the driven blade grooves 21 of corresponding width, and the driven blade teeth 22 partially protrude into the driving blade grooves 12 of corresponding width.
In a preferred embodiment, the dough slicing knife further comprises a transmission mechanism, the transmission mechanism comprises a driving roller 3, a driving gear 4 and a driven gear 5, the driving gear 4 is arranged at one end of the driving knife group 1, the driving roller 3 is connected with the driving gear 4, and the driven gear 5 is arranged at one end of the driven knife group 2 and is meshed with the driving gear 4.
In a preferred embodiment, the dough slicing knife further comprises a transmission mechanism, the transmission mechanism comprises a driving roller 3, a driving gear 4 and a driven gear 5, the driving roller 3 and the driving gear 4 are arranged at two ends of the driving knife group 1, and the driven gear 5 is arranged at one end of the driven knife group 2 and meshed with the driving gear 4.
In a preferred embodiment, the dough cutting knife further comprises a first cutting knife rest 6 and a second cutting knife rest 7, and the first cutting knife rest 6 and the second cutting knife rest 7 are arranged at two ends of the driving knife set 1 and the driven knife set 2.

As shown in fig. 6 to 8, a combined noodle cutting tool comprises a plurality of noodle cutting tools arranged in parallel in the axial direction, the noodle cutting tools are detachably connected, each noodle cutting tool comprises a driving tool set 1 and a driven tool set 2, the driving tool set 1 and the driven tool set 2 rotate in opposite directions, driving tool teeth 11 and driving tool grooves 12 are distributed on the driving tool set 1, driven tool grooves 21 with widths matched with the widths of the driving tool teeth 11 are arranged on the driven tool sets 2 corresponding to the positions of the driving tool grooves 12, driven tool teeth 22 with widths matched with the widths of the driving tool grooves 12 are arranged on the driven tool sets 2 corresponding to the positions of the driving tool grooves 12, driving tool grooves 12 are formed between two adjacent driving tool teeth 11, driven tool grooves 21 are formed between two adjacent driven tool teeth 22, the combined noodle cutting tool comprises one or a plurality of parallel noodle cutting sections, and the combined noodle cutting tool comprises one or more than two noodle cutting sections, at least one of the section has teeth of at least two different widths.
In a preferred embodiment, at least one of the following technical features is also included:
1) the dough slicing knives are in mortise and tenon joint, and the dough slicing knife shown in the figure 6 is in mortise and tenon joint with the dough slicing knife shown in the figure 7 to obtain the dough slicing combined knife shown in the figure 8;
2) the driving cutter tooth 11 partially extends into the driven cutter groove 21 with the corresponding width, and the driven cutter tooth 22 partially extends into the driving cutter groove 12 with the corresponding width;
3) the widths of the driving cutter tooth 11 and the driven cutter tooth 22 are respectively 0.3 mm-30 mm;
4) the tangent plane combined knife also comprises a transmission mechanism, the transmission mechanism comprises a driving roller 3, a driving gear 4 and a driven gear 5, the driving gear 4 is arranged at one end of a driving knife group 1 in the tangent plane combined knife, the driving roller 3 is connected with the driving gear 4, and the driven gear 5 is arranged at one end of a driven knife group 2 in the tangent plane combined knife and is meshed with the driving gear 4;

In a preferred embodiment, feature 1) the adjacent slicing knives are provided with a tenon 91 and a mortise 101 matching the tenon, respectively, at the contact surface. The tenon (shown in fig. 6) is matched with the mortise (shown in fig. 7), and the cross section of the tenon in fig. 6 is square, but the tenon is not limited to be only applicable to square, and can be square, rectangle, triangle, circle, and the like as long as the tenon is matched with the mortise.
As shown in fig. 3 and 4, the combined cutting-surface knife comprises two cutting-surface knives arranged axially in parallel: the hand-made noodle making device comprises a first noodle cutting knife 9 and a second noodle cutting knife 10, wherein the first noodle cutting knife 9 is used as a first noodle cutting section, the second noodle cutting knife 10 is used as a second noodle cutting section, the two noodle cutting sections can be distributed in the same way (figure 3) or in different ways (figure 4), and in order to obtain the hand-made noodle taste, at least one noodle cutting section is provided with at least two kinds of knife teeth with different widths.
As shown in fig. 3, the first section and the second section are distributed the same, and the combined cutting blade is a section; as shown in fig. 4, the first cutting surface segment and the second cutting surface segment are distributed differently, and the combined cutting surface knife has two cutting surface segments.

As shown in fig. 9 to 11, the present invention provides a tangent plane lantern ring knife assembly, which comprises a plurality of tangent plane knives and a fixed shaft 13 arranged in parallel in the axial direction, wherein each tangent plane knife is provided with a through hole 14 matched with the fixed shaft 13, the fixed shaft 13 penetrates through the through hole 14 and is tightly matched with the through hole, each tangent plane knife comprises a driving knife set 1 and a driven knife set 2, the driving knife set 1 and the driven knife set 2 rotate in opposite directions, driving knife teeth 11 and driving knife grooves 12 are distributed on the driving knife set 1, the driven knife set 2 corresponding to the driving knife teeth 11 is provided with driven knife grooves 21 having a width matched with the width of the driving knife teeth 11, the driven knife set 2 corresponding to the driving knife grooves 12 is provided with driven knife teeth 22 having a width matched with the width of the driving knife grooves 12, the driving knife grooves 12 are formed between two adjacent driving knife teeth 11, and the driven knife grooves 21 are formed between two adjacent driven knife teeth 22, the tangent plane lantern ring cutter assembly comprises one tangent plane section or a plurality of parallel tangent plane sections, the tangent plane lantern ring cutter assembly comprises one or more tangent plane sections, and at least one tangent plane section is provided with cutter teeth with at least two different widths.
As shown in fig. 9 to 11, the fixing shaft is matched with the through hole, and the cross section of the fixing shaft of fig. 11 is square, but the fixing shaft is not limited to be only square, and can be square, rectangle, triangle, circle, etc., as long as the fixing shaft is matched with the through hole.
As shown in fig. 3 and 4, the tangent plane lantern ring knife assembly comprises two tangent plane knives which are axially arranged in parallel: the hand-made noodle making device comprises a first noodle cutting knife 9 and a second noodle cutting knife 10, wherein the first noodle cutting knife 9 is used as a first noodle cutting section, the second noodle cutting knife 10 is used as a second noodle cutting section, the two noodle cutting sections can be distributed in the same way (figure 3) or in different ways (figure 4), and in order to obtain the hand-made noodle taste, at least one noodle cutting section is provided with at least two kinds of knife teeth with different widths.
As shown in fig. 3, the first and second cut sections are distributed identically, and the cut section ring-in cutter assembly is a cut section; as shown in fig. 4, the first and second cut sections are distributed differently, and the cut section ring cutter assembly has two cut sections.
In a preferred embodiment, at least one of the following technical features is also included:
1) the driving cutter tooth 11 partially extends into the driven cutter groove 21 with the corresponding width, and the driven cutter tooth 22 partially extends into the driving cutter groove 12 with the corresponding width;
2) the widths of the driving cutter tooth 11 and the driven cutter tooth 22 are respectively 0.3 mm-30 mm;
3) the tangent plane lantern ring cutter assembly further comprises a transmission mechanism, the transmission mechanism comprises a driving roller 3, a driving gear 4 and a driven gear 5, the driving gear 4 is arranged at one end of a driving cutter set 1 in the tangent plane lantern ring cutter assembly, the driving roller 3 is connected with the driving gear 4, and the driven gear 5 is arranged at one end of a driven cutter set 2 in the tangent plane lantern ring cutter assembly and meshed with the driving gear 4;
4) the tangent plane lantern ring cutter assembly further comprises a transmission mechanism, the transmission mechanism comprises a driving roller 3, a driving gear 4 and a driven gear 5, the driving roller 3 and the driving gear 4 are arranged at two ends of a driving cutter set 1 in the tangent plane lantern ring cutter assembly, and the driven gear 5 is arranged at one end of a driven cutter set 2 in the tangent plane lantern ring cutter assembly and is meshed with the driving gear 4;
5) the tangent plane lantern ring cutter assembly further comprises a first cutter frame 6 and a second cutter frame 7, and the first cutter frame 6 and the second cutter frame 7 are arranged at two ends of the driving cutter set 1 and the driven cutter set 2 in the tangent plane lantern ring cutter assembly;
6) when the tangential ring knife assembly comprises a tangential section (i.e. when the knife teeth of each tangential section are equally distributed), in each tangential section, the cutter teeth with the width of 1-1.5 mm in the driving cutter teeth 11 and the driven cutter teeth 22 account for 20-25%, if the width of the cutter teeth is 1-1.3 mm or 1.3-1.5 mm, the width of the cutter teeth is 1-1.5 mm and accounts for 20-22%, 22-24% or 24-25%, the width of the cutter teeth of the driving cutter teeth 11 and the driven cutter teeth 22 is more than 1.5mm and less than 2.5mm and accounts for 50-60%, if the width is more than 1.5mm and less than or equal to 1.6mm, 1.6-2.0 mm, 2.0-2.3 mm, 2.3-2.4 mm or more than or equal to 2.4mm and less than 2.5mm, the cutter teeth with the width more than 1.5mm and less than 2.5mm account for 50-55%, 55-56% or 56-60%, and the cutter teeth with the width of 2.5-3 mm in the driving cutter teeth 11 and the driven cutter teeth 22 account for 20-25%, if the width is 2.5-2.8 mm or 2.8-3 mm, the knife teeth with the width of 2.5-3 mm account for 20-23% or 23-25%;

A dough slicing knife comprises a driving knife set 1 and a driven knife set 2, wherein the driving knife set 1 and the driven knife set 2 rotate oppositely, driving knife teeth 11 and driving knife grooves 12 are distributed on the driving knife set 1, driven knife grooves 21 with the width matched with that of the driving knife teeth 11 are arranged on the driven knife set 2 corresponding to the positions of the driving knife teeth 11, driven knife teeth 22 with the width matched with that of the driving knife grooves 12 are arranged on the driven knife set 2 corresponding to the positions of the driving knife grooves 12, driving knife grooves 12 are formed between two adjacent driving knife teeth 11, driven knife grooves 21 are formed between two adjacent driven knife teeth 22, parts of the driving knife teeth 11 are inserted into the driven knife grooves 21 with the corresponding widths, parts of the driven knife teeth 22 are inserted into the driving knife grooves 12 with the corresponding widths, as shown in figure 2, a transmission mechanism comprises a driving roller 3, a driving gear 4 and a driven gear 5, the driving gear 4 is arranged at one end of the driving knife set 1, the driving roll 3 with the driving gear 4 is connected, driven gear 5 locates driven knife tackle 2 one end and with driving gear 4 meshes, the dough cutter still includes first cutter frame 6 and second cutter frame 7, the both ends of initiative knife tackle 1 and driven knife tackle 2 are located to first cutter frame 6 and second cutter frame 7, the dough cutter includes a tangent plane section, and the width occupies 20% for the sword tooth of 1mm in initiative sword tooth 11 and the driven sword tooth 22, and the width occupies 60% for the sword tooth of 2.4mm in initiative sword tooth 11 and the driven sword tooth 22, and the width occupies 20% for the sword tooth of 2.8mm in initiative sword tooth 11 and the driven sword tooth 22.
Mixing flour and water, kneading, adding 35 wt% of water, kneading for 18 minutes, calendering to the thickness of a flour cake of 600 micrometers, shredding with the noodle slicing knife (see black blocks in figure 1 as noodles 8), making dough waves, steaming at the steaming temperature of 100 ℃, steaming for 150 seconds, cutting off (the cutting speed is 76 times/minute), frying and drying, wherein the front part of the oil pan is 125-fold flour, the middle part of the oil pan is 140-fold flour, the tail part of the oil pan is 158-fold flour, and the frying time is 100 seconds, so that the instant noodles with the hand-made noodle taste are obtained.

The instant noodles obtained in examples 1 to 22, comparative example 1 and comparative example 2 were subjected to sensory evaluation of GB/T25005-2010, and the results are shown in Table 1.

A noodle cutter comprises a driving cutter set (1) and a driven cutter set (2), wherein the driving cutter set (1) and the driven cutter set (2) rotate oppositely, driving cutter teeth (11) and driving cutter grooves (12) are distributed on the driving cutter set (1), the driven cutter group (2) corresponding to the position of the driving cutter tooth (11) is provided with a driven cutter groove (21) with the width matched with that of the driving cutter tooth (11), the driven cutter group (2) corresponding to the position of the driving cutter groove (12) is provided with driven cutter teeth (22) the width of which is matched with that of the driving cutter groove (12), the driving cutter groove (12) is formed between two adjacent driving cutter teeth (11), the driven cutter groove (21) is formed between two adjacent driven cutter teeth (22), the noodle cutting knife is characterized by comprising one noodle cutting section or a plurality of parallel noodle cutting sections, the noodle cutting knife comprises one or more than two noodle cutting sections, and at least one noodle cutting section is provided with at least two knife teeth with different widths.

The dough cutting blade as claimed in claim 1, wherein when the dough cutting blade comprises a dough cutting section, in each dough cutting section, the width of the driving cutter tooth (11) and the driven cutter tooth (22) is 1-1.5 mm, the width of the driving cutter tooth (11) and the driven cutter tooth (22) is more than 1.5mm and less than 2.5mm, and the width of the driving cutter tooth (11) and the driven cutter tooth (22) is 50-60%, and the width of the driving cutter tooth (11) and the driven cutter tooth (22) is 2.5-3 mm, respectively, is 20-25%.
3. The dough cutting knife according to claim 1, wherein when the dough cutting knife comprises more than two dough cutting sections, at least one dough cutting section comprises 20-25% of the driving cutter teeth (11) and the driven cutter teeth (22) with the width of 1-1.5 mm, 50-60% of the driving cutter teeth (11) and the driven cutter teeth (22) with the width of more than 1.5mm and less than 2.5mm, and 20-25% of the driving cutter teeth (11) and the driven cutter teeth (22) with the width of 2.5-3 mm.

The dough slicing knife of any one of claims 1 to 3, further comprising a transmission mechanism, wherein the transmission mechanism comprises a driving roller (3), a driving gear (4) and a driven gear (5), the driving gear (4) is arranged at one end of the driving knife set (1), the driving roller (3) is connected with the driving gear (4), and the driven gear (5) is arranged at one end of the driven knife set (2) and is meshed with the driving gear (4).

The dough slicing knife of any one of claims 1 to 3, further comprising a transmission mechanism, wherein the transmission mechanism comprises a driving roller (3), a driving gear (4) and a driven gear (5), the driving roller (3) and the driving gear (4) are arranged at two ends of the driving knife set (1), and the driven gear (5) is arranged at one end of the driven knife set (2) and is meshed with the driving gear (4).

A tangent plane combination knife is characterized by comprising a plurality of tangent plane knives which are axially arranged in parallel, the tangent plane knives are detachably connected, each tangent plane knife comprises a driving knife group (1) and a driven knife group (2), the driving knife group (1) and the driven knife group (2) rotate oppositely, driving knife teeth (11) and driving knife grooves (12) are distributed on the driving knife group (1), the driven knife groups (2) corresponding to the positions of the driving knife teeth (11) are provided with driven knife grooves (21) with the width matched with that of the driving knife teeth (11), the driven knife groups (2) corresponding to the positions of the driving knife grooves (12) are provided with driven knife teeth (22) with the width matched with that of the driving knife grooves (12), driving knife grooves (12) are formed between two adjacent driving knife teeth (11), driven knife grooves (21) are formed between two adjacent driven knife teeth (22), each tangent plane combination knife comprises a tangent plane section or a plurality of parallel tangent plane sections, the combined tangent plane cutter comprises one or more tangent plane sections, and at least one tangent plane section is provided with cutter teeth with at least two different widths.
10. The combined slicing knife of claim 9, further comprising at least one of the following technical features:
1) the dough cutters are connected in a mortise and tenon mode;
2) the driving cutter tooth (11) is partially inserted into the driven cutter groove (21) with the corresponding width, and the driven cutter tooth (22) is partially inserted into the driving cutter groove (12) with the corresponding width;
3) the widths of the driving cutter tooth (11) and the driven cutter tooth (22) are respectively 0.3 mm-30 mm;
4) the tangent plane combined knife further comprises a transmission mechanism, the transmission mechanism comprises a driving roller (3), a driving gear (4) and a driven gear (5), the driving gear (4) is arranged at one end of a driving knife group (1) in the tangent plane combined knife, the driving roller (3) is connected with the driving gear (4), and the driven gear (5) is arranged at one end of a driven knife group (2) in the tangent plane combined knife and meshed with the driving gear (4);
