本发明“避癌香肠”是在制香肠时，往香肠里加入适量维生素C。
由于维生素C能阻碍亚硝酸盐与胺结合，维生素C可阻止香肠里的防腐剂亚硝酸钠在胃内与肉类蛋白中的胺结合，从而抵制亚硝胺的形成。
