发明背景
大体上本发明涉及糖果制品。更具体的,本发明涉及包衣的口香糖产品及其生产方法。
当然,多种糖果制品的生产已经众所周知。其中一种糖果制品就是口香糖。多年来,糖果制品已经被模压,挤压或者其它方法被成型为各种形状。例如口香糖已被加工成诸如扁条,圆柱,立方体,雪茄烟,丝状咀嚼物等形状。口香糖传统形状的一个例子为丸状。为诸如口香糖的糖果制品提供新的形状或形式可以提高这些产品的市场销售能力,尤其是对年轻的消费者。
除了为口香糖产品提供多种形状和形式,还进行了相当大量的开发活动以加强口香糖的香味释放特征。需要的结果就是延长咀嚼过程中香味的释放。
不仅需要延长香味的释放,而且需要增加香味感。香味感的增加给消费者提供令人愉悦的咀嚼。此外,提高香度也可以给产品提供口气清新的特征。
如上所述,丸形口香糖是糖果工业以及消费者所众所周知的。丸形口香糖可包括被坚硬外壳包裹的口香糖核。与传统丸形口香糖相关的产品是微形包衣小球。这种产品的例子为Chiclet和Mini-Chiclet。这些产品已经市售了很多年,但是这些微型口香糖产品的一个缺点就是在咀嚼过程中香味很快消失。另外,至少其中一些产品在咀嚼过程中没有给消费者提供很多香味。
在生产具有更持久香味和/或香味感增强的口香糖过程中已经进行了很多尝试。本发明的发明者认为这些尝试并没有完全成功,至少对于尺寸减小的包衣口香糖产品而言没有成功。
因此需要改良组分和生产方法从而提供具有改良的香味释放和感觉特征的包衣口香糖产品,尤其是微型口香糖产品。
发明概述
本发明提供了改良的包衣口香糖产品及其生产方法。在这点上,本发明提供的包衣口香糖产品具有延长的香味释放以及增强的香味感,在一个实施方案中,所述增强的香味感可以提供口气清新的特征。即使产品以小的或者减小的尺寸提供也具有这些特征。
为此,本发明提供了一种包衣口香糖产品。产品含有一个包括水溶性部分和水不溶性部分的胶核。水不溶性部分包含至少50%重量的胶核。胶核包括低于5%重量的散装甜味剂(bulk sweetener)。包衣基本上包围胶核。
在一个实施方案中,包衣包括至少50%重量的包衣口香糖产品。
在一个实施方案中,包衣包括至少80%重量的包衣口香糖产品。
在一个实施方案中,胶核不包括任何散装甜味剂。
在一个实施方案中,不溶性部分包括至少65%重量的胶核。

在本发明的其它实施方案中,提供了包衣口香糖产品。产品含有一个包括水溶性部分和水不溶性部分的胶核,水不溶性部分包含至少50%重量的胶核。胶核包括含有至少0.1%重量的胶核的香料,以及低于5%重量的散装甜味剂。包衣基本上包围胶核并含有至少50%重量的包衣口香糖产品。

发明详述
本发明提供了改良口香糖产品及其生产方法。在下述的优选实施方案中,本发明提供了改良包衣口香糖产品及其生产方法。所述产品具有增强的香味释放特征。此外,本发明的产品被设计为和类似类型的产品相比香味感改良。在一个实施方案中,本发明提供了改良的口气清新产品。
本发明的发明者令人意外地发现,通过生产具有高含量胶基和很少或者不含甜味剂的胶组合物,生产了在咀嚼过程中具有改良香味感的产品。这种产品特别优选和丸形口香糖和尺寸减小的口香糖产品,特别是包衣产品一起使用。因为一些减小产品的尺寸较小,消费者在咀嚼初始的小块时能够向口中重新放入或者添加更多的产品。这就给消费者在咀嚼过程中提供了控制咀嚼物大小,香味和/或新鲜度增强的机会。
通常,口香糖组合物一般包括水溶性部分和水不溶性部分。水不溶性部分称为胶基。
水不溶性胶基通常含有任意组合的弹性体,树脂,脂肪和油,软化剂和无机填料。胶基可包括或者不包括蜡。不溶性胶基可以构成大约50到大约95%重量的口香糖,在一个实施方案中,胶基包括大约65到大约75%重量的口香糖。
用于胶基的弹性体增塑剂可以包括但不限于,诸如部分氢化松香的甘油酯,聚合松香的甘油酯,部分二聚松香的甘油酯,松香的甘油酯,松香的季戊四醇酯的天然松香酯,以及诸如来自α-蒎烯,β-蒎烯,和/或d-苧烯的萜烯树脂的合成物,以及上述的任意合适组合。优选的弹性体增塑剂依据特定的应用和所使用的弹性体类型而变化。

根据本发明,口香糖含少量或不含散装甜味剂。本发明的散装甜味剂包括低于5%重量的口香糖核。在一个实施方案中,口香糖不含有任何散装甜味剂。
高密度甜味剂也可存在于本发明的口香糖中。当使用时,高密度甜味剂可构成口香糖胶核的大约0.01%到大约5%重量,并在一个实施方案中为大约0.015%到大约3%重量。这种甜味剂可单独或任意组合包括,但不限于,天冬甜素,丁磺氨盐,阿力甜,邻磺酰苯甲酰亚胺及其盐,纽甜,三氯蔗糖,环己烷氨基磺酸及其盐,甘草甜,二氢抑素(dihydrochalones),索马甜,莫尼林等。
口香糖中香料的含量通常应占口香糖重量的大约0.1%到大约25%的范围中,在一个实施方案中,大约3%到大约20%,并且在另一个实施方案中,为口香糖重量的大约5%到大约15%。调味剂可包括香精油,合成香料或其混合物,包括但不限于来自植物和水果的油,例如柑橘油,水果油,丁香油,冬青油,茴香油,薄荷醇,等等。人工调味剂和组分也用作本发明的香料成分。天然和合成的调味剂可以任意感官上可接受的形式组合。

在一个优选的实施方案中,本发明提供了一种包衣口香糖产品。本发明的包衣可占到整个包衣产品的大约50%到95%重量。在一个实施方案中,大约80到大约90%重量的口香糖产品为包衣。糖或无糖甜味剂也可于包衣组合物中。
在一个优选的实施方案中,本发明被用于生产微型球状的口香糖产品。微型球被包被以提供坚硬的包围壳。U.S专利No.5,667,824,其内容此处引作参考,公开了形成微型圆胶球的方法和设备。其它替代的方法,例如挤压,切割和转鼓可被本领域技术人员采用来生产圆形(球形)核。当然,如果需要,可以生产任何形状。例如,在一个实施方案中,生产丸形产品。
一旦胶核被制备和形成,胶核就被包衣。胶核可通过传统的滚抛(panning)技术被包衣或滚抛来产生包衣微型球胶。包衣中的散装甜味剂非常稳定并高度水溶,且可被容易的加入到制备用于滚抛的溶液中。散装甜味剂可与蔗糖,其它的多元醇组合,或单独用在溶液中作为胶核上的包衣。此外,散装甜味剂也可作为粉末与其它一些传统滚抛方法中常用的粉末混合加入。
传统的滚抛方法通常使用蔗糖进行包被。最新滚抛方法的进展已允许使用其它的碳水化合物来取代蔗糖作为包衣。这些组分包括,但不限于,葡萄糖,麦芽糖,木糖醇(zylitol),氢化异麦芽糖以及其它的新多元醇或其组合。这些物质可与滚抛改性剂混合,所述滚抛改性剂包括,但不限于,阿拉伯树胶,麦芽糖糊精,玉米糖浆,明胶,纤维素类物质,例如羧甲基纤维素,淀粉和改性淀粉,植物胶例如藻酸盐,刺槐豆胶,瓜尔胶和滑石。抗粘剂也可作为滚抛改性剂被添加,其允许使用各种碳水化合物和糖醇来开发新的滚抛或包衣的胶产品。
用于生产包衣胶产品的包衣可含有诸如调味剂,人工甜味剂,分散剂,着色剂,成膜剂和粘合剂的成分。本发明预期的调味剂包括那些本领域公知的香料,诸如香精油,合成香料或其混合物,包括但不限于获自植物和水果的油例如柑橘油,水果香精,椒薄荷油,留兰香油,其它的薄荷油,丁香油,冬青油,茴香油,薄荷醇等等。调味剂可被加到包衣糖浆中,加入量为使得包衣中含有大约0.1%到大约12%重量的调味剂,在一个实施方案中,含有大约2.0%到大约6.0%重量的调味剂(基于干固体)。

在一个实施方案中,如上面所述,包衣开始以液体糖浆的形式存在。在一个实施方案中,糖浆含有从大约30%到大约85%重量的前面所述的包衣成分,以及大约15%到大约70%重量的溶剂例如水。在一个实施方案中,硬化包被过程在一个转盘中进行。更复杂的涂胶机例如由Driam和Dumoulin所生产的也可被使用。
一种可加以利用的硬化包衣胶产品的包衣方法被公开在U.S专利No.5,536,511中,其内容此处引作参考。此方法可被修改来满足被包衣产品的需要。

试验1
实施例2和6的配方被用于生产微型包衣胶球。最终的小球产品含有60%重量的包衣。这些胶球在隐瞒味道试验中测试。在胶使用者中对香味和口气清新特性进行试验。四个胶球被提供给参与者咀嚼。总的来说,该产品与其它市售的包衣口香糖产品相比,56%的参与者认为该胶产品使口气更加清新,45%的参与者认为具有更长久的香味。
一些参与者被允许”再添加”(当他们咀嚼起始的四块时添加胶球到口中)。结果显示与其它口香糖产品比较,59%的参与者认为所述产品使口气更清新,47%的参与者认为所述产品香味更持久。
应该理解此处描述的本发明优选实施方案的多种变化和修改对于本领域技术人员是显而易见的。这些变化和修改可在不离开本发明的精神和范围以及不削弱其优点的情况下得以进行。因此,这些变化和修改发明也包括在所附的权利要求中。
Claims (31)
1.一种包衣口香糖产品,其含有:
包括水溶性部分和水不溶性部分的胶核,水不溶性部分为胶核的至少50%重量,胶核包括低于5%重量的散装甜味剂;以及
包围胶核的包衣。
2.根据权利要求1所述的包衣口香糖产品,其中包衣为包衣口香糖产品的50%-95%重量。
3.根据权利要求1所述的包衣口香糖产品,其中包衣为包衣口香糖产品的80%-90%重量。
4.根据权利要求1所述的包衣口香糖产品,其中胶核不包括任何散装甜味剂。
5.根据权利要求1所述的包衣口香糖产品,其中不溶性部分为胶核的至少65%重量。
6.根据权利要求1所述的包衣口香糖产品,其中产品为球形。
7.根据权利要求1所述的包衣口香糖产品,其中胶核包括0.1到25%重量的香料。
8.根据权利要求1所述的包衣口香糖产品,其中胶核不含蜡。
9.根据权利要求1所述的包衣口香糖产品,其中包衣包括:
0.1%到12%的香料;
0.05%到1.0%重量的人造甜味剂;以及
0.1%到5%重量的分散剂。
10.一种包衣口香糖产品,其含有:
包括水溶性部分和水不溶性部分的胶核,水不溶性部分为胶核的至少50%重量,胶核包括含有胶核的至少0.1%重量的香料,以及低于5%重量的散装甜味剂;以及
包围胶核的包衣。
11.根据权利要求10所述的包衣口香糖产品,其中胶核不含任何散装甜味剂。
12.根据权利要求10所述的包衣口香糖产品,其中不溶性部分为胶核的至少65%重量。
13.根据权利要求10所述的包衣口香糖产品,其中产品为球形。
14.根据权利要求10所述的包衣口香糖产品,其中包衣包括:
0.1%到12%重量的香料;
0.05%到1.0%重量的人造甜味剂;以及
0.1%到5%重量的分散剂。
15.根据权利要求10所述的包衣口香糖产品,其中产品为丸状。
16.根据权利要求10所述的包衣口香糖产品,其中胶核为无糖型。
17.一种改良包衣口香糖产品香味感的方法,其包括提供包衣口香糖产品的步骤,所述包衣口香糖产品包括一个胶核,所述胶核含有至少50%重量的胶基和低于5%的散装甜味剂。
18.权利要求17所述的方法包括用糖浆包衣包被胶核以生成包衣口香糖产品的步骤。
19.权利要求17所述的方法,其中胶核不包括任何散装甜味剂。
20.权利要求17所述的方法包括利用滚抛工艺生产包衣口香糖产品的步骤。
21.一种包衣口香糖产品,其含有:
包括水不溶性部分的胶核,水不溶性部分为胶核的至少50%重量,胶核包括低于5%重量的散装甜味剂;以及
包围胶核的包衣。
22.根据权利要求21所述的包衣口香糖产品,其中包衣为包衣口香糖产品的50%-95%重量。

24.根据权利要求21所述的包衣口香糖产品,其中胶核不包括任何散装甜味剂。
