Abstract
The invention relates to a cooking device, comprising: a heatable pan (20) which can be filled with water for generating water vapor; a lid which can close the pot so that a closed space is delimited in the pot; and an accessory plate (30) arranged above the water line in the pan (20), in which accessory plate at least one through-opening (32) is arranged, wherein the accessory plate (30) is connected to the pan (20) in a manner that can be released without damage, and the accessory plate (30) is arranged such that the generated water vapor can flow predominantly through the through-opening (32).
Description
Technical Field
The invention relates to a cooking device, comprising: a heatable pot (Tiegel), which can be filled with water for generating steam; a pan cover that can close the pan such that a closed space is defined in the pan; and an accessory plate disposed above the water line within the pan.
Background
The cooking appliance relates in particular to cooking appliances for professional applications, such as those used in canteens, restaurants and large catering industries.
Cooking devices are known from the prior art, which have a heatable pot in which, in particular, liquid culinary products, such as soups or sauces, are cooked. Furthermore, solutions are also known in which such a pot is used for cooking or steam cooking. Here, the pot is filled with water for generating water vapor, and the culinary articles are typically placed in a container on a support surface above the water. In the case of a closed pot lid, the pot and the pot lid form a closed space. The heated water vapor collects in the space. The cooking product is cooked in such a way that it is not in direct contact with the water. In this way, a gentle cooking process is achieved without extracting valuable contents from the cooking product.
The disadvantage here is that the water vapor present is largely lost each time the lid is opened and must be regenerated only if the lid is closed. This causes the cooking of the remaining cooking product in the pot to be interrupted each time the container is removed or inserted. Thereby, the duration of cooking is prolonged and may in some cases negatively affect the quality of the cooked product.
Disclosure of Invention
The object of the present invention is to provide a cooking device which allows the simultaneous cooking of the cooking products in a plurality of containers and also allows the containers to be removed or inserted without losing the relevant portion of the heated water vapor. Furthermore, the container should be quickly and easily insertable into and removable from the cooking appliance. Furthermore, the cooking device should not be limited to cooking of the culinary article solely by means of water vapor generated by a heatable pot, but can also be used for heating sauces and soups, for example, in a pot.
In order to solve the object, a cooking device is proposed according to the invention, having: a heatable pan which can be filled with water for generating water vapor; and an accessory plate arranged in the pan above the water line, in which accessory plate at least one through-opening is provided, wherein the accessory plate is connected to the pan in a manner that can be detached without damage, and the accessory plate is arranged such that the generated water vapor can flow mainly through the through-opening. This makes it possible to carry out steam cooking without the lid having to be closed in this case, since the heated water vapor flows only intensively through the through-openings, over which the cooking product is positioned. Furthermore, the intermediate plate can be released from the pot without damage, whereby the pot can also be used variably.
Advantageously, a plurality of adapter elements are provided, by means of which the diameter of the through-opening can be varied. It is conceivable here for the adapter element to be designed in the form of a ring and to be inserted into the through-opening. This allows for quick and variable adjustment.
A cover is preferably provided, by means of which the through-opening can be closed. Therefore, when the through opening is not required for cooking the cooking object, the water vapor can be prevented from flowing out from the through opening, so that unnecessary loss of the water vapor can be prevented.
A container for steam cooking of the cooking substance is preferably associated with the through opening. The container simplifies handling of the cooking items.
The container is advantageously arranged such that water vapor flowing out of the through-opening can flow into the side of the container facing the through-opening and can flow out of the side of the container facing away from the through-opening. The water vapor flowing out of the through-opening is therefore guided through the container and circulates the cooking product until it reaches the side of the container facing away from the through-opening.
The containers can be formed at the side through which the water vapor flows, so that a plurality of containers can be stacked on top of one another. This allows a plurality of containers with cooking items to be stacked on the through opening and cooked simultaneously. Furthermore, the heated water vapor flowing out through the through-openings can be used more efficiently, whereby the cooking products of the plurality of containers are passed through by the water vapor in succession and steam cooked. Furthermore, the container can be removed and inserted simply and quickly without excessive loss of water vapor.
At least one separating plate is advantageously provided, by means of which the space defined by the pan and the fitting plate can be divided into a plurality of subspaces.
The subspaces may have different volumes. The available pan bottom surface for different volume starter spaces is also different and large. This causes different thermal powers to be introduced into the subspaces, thereby also providing different amounts of water vapor. Thus, with the aid of the pan, different powers can also be provided and used depending on the cooking substance.
A water level sensor connected to the control device and a shut-off valve for the water inflow of the pan are advantageously provided, so that water can be refilled when required. This simplifies the operation and allows automatic filling of the pan with water.

Detailed Description
A cooking apparatus 10 is schematically shown in fig. 1 and 2.
The cooking apparatus 10 has a heatable pan 20. The pan can be closed by means of a lid. For a better overview, the cover is not shown in the figures.
Furthermore, an accessory plate 30 is provided. The accessory plate is configured for placement in a pan.
In operation, the heatable pot 20 is filled with water, which is heated so that water vapor is generated. The necessary heat can be transported by means of a heating element arranged in the bottom of the pan.
The fitment plate 30 is releasably locked above the water line within the pan 20 and can be released from the pan 20 without damage. Through-openings 32 are provided in the fitting plate 30, through which the majority of the generated water vapor flows out. It is conceivable here to seal the transition between the fitting plate 30 and the pan 20 by means of a sealing element in order to ensure that only a small or no water vapor loss is caused at the edge of the fitting plate 30.
An adapter element 34 can be associated with the through-opening 32, which is inserted into the through-opening 32 and variably forms the diameter of the through-opening 32.
The adapter element 34 is implemented annularly. It is also conceivable for a plurality of adapter elements 34 with different ring shapes to be inserted into one another in order to increase or decrease the through-opening 32.
Furthermore, if no water vapor is required to flow out of the through opening 32, the through opening 32 may be closed by the cover 36 in order to resist unnecessary loss of water vapor.
Furthermore, a plurality of containers 40 for steam cooking the cooking substance are associated with the through opening 32.
The container 40 has a cylindrical configuration, is positioned on the through opening 32 and is traversed by the heated water vapor flowing out of the through opening 32. The water vapor enters the side 42 of the container 40 facing the through-opening 32 and flows out of the side 44 of the container 40 facing away from the through-opening 32.
The sides 42 and 44 are embodied in the form of a mesh, screen or grid or also in the form of perforated plates, so that a flow through of the water vapor can be achieved. The cooking product is placed on the side 42 in the container 40. In this case, the side 44 must be embodied as a removable cover, so that removal of the food product from the container 40 can be achieved. Alternatively, the side 44 can also be designed open, so that the container 40 is shaped bowl-like.
Further, a plurality of containers 40 may be stacked on top of each other. For this purpose, the container 40 has a shoulder 46 on the side 42. The shoulder is embodied in such a way that, when a plurality of containers 40 are stacked on one another, the shoulder 46 brings about a positive connection in the radial direction.
The water vapor flowing out of the through-openings 32 flows through the stacked containers 40 in this order until it reaches the side 44 of the uppermost container 40. The outer side of the container 40 is closed and water vapour is guided through the container 40. Optionally, the uppermost container 40 may additionally be provided with a vapor permeable lid 48 to prevent too rapid outflow of vapor.
The containers 40 can thus be placed on one another simply, quickly and reliably by means of the shoulder 46. The removal of containers 40 arranged between a plurality of containers 40 is also not a problem, since only the container 40 has to be lifted above in order to remove the desired container 40. The cooking process is interrupted here for a negligibly short time.
According to an example, a separation plate 50 may additionally be introduced in the pan 20. The separating plate 50 here divides the space defined by the pan 20 and the fitting plate 30 into subspaces 52 and 54.
The subspaces 52 and 54 have different volumes, which causes the pot bottoms of the respective subspaces 52 and 54 to also be differently large. Thus, different amounts of heat are introduced into the subspaces 52 and 54 by the heatable pan 20, which causes the amount of water vapor generated in the subspace 54 to exceed the amount of water vapor generated in the subspace 52 in the case of the arrangement described.
According to another example, the cooking apparatus 10 comprises a water level sensor 60 that measures the water level inside the pan 20. The water level sensor 60 is connected to a control device 62 which actuates a shut-off valve 64 for a water inlet 66 of the pan 20, whereby the water can be refilled according to the water level. In the case of the use of a separation plate 50, said separation plate may have a small opening below the water level, so that a continuous equalization of the water level between the subspaces 52 and 54 may be induced.
Claims (9)
1. A cooking apparatus having: a heatable pan (20) which can be filled with water for generating water vapor; a lid capable of closing the pan such that a closed space is delimited in the pan; and an accessory plate (30) arranged above the water line in the pan (20), in which accessory plate at least one through-opening (32) is arranged, wherein the accessory plate (30) is connected to the pan (20) in a manner that can be released without damage, and the accessory plate (30) is arranged such that the generated water vapor can flow predominantly through the through-opening (32).
2. Cooking device according to claim 1, characterized in that a plurality of adapter elements (34) are provided, by means of which the diameter of the through opening (32) can be changed.
3. Cooking device according to claim 1, characterized in that a cover (36) is provided by means of which the through opening (32) can be closed.
4. Cooking apparatus according to claim 1, characterized in that said through opening (32) is associated with a container (40) for steam cooking the culinary article.
5. Cooking apparatus according to claim 4, characterized in that the container (40) is arranged such that water vapour flowing out of the through opening (32) can flow into a side (42) of the container (40) facing the through opening (32) and can flow out of a side (44) of the container (40) facing away from the through opening (32).
6. Cooking device according to claim 4, characterized in that the container (40) is constructed at the side (42, 44) traversed by water vapor such that a plurality of containers (40) can be stacked on one another.
7. Cooking apparatus according to claim 1, characterized in that at least one separating plate (50) is provided, by means of which the space defined by the pan (20) and the accessory plate (30) can be divided into a plurality of subspaces (52, 54).
8. Cooking apparatus according to claim 7, characterized in that the subspaces (52, 54) have different volumes.
9. Cooking apparatus according to claim 7, characterized in that a water level sensor (60) connected to a control device (62) and a shut-off valve (64) for the water inflow (66) of the pan (20) are provided, so that water can be refilled when needed.
