In conclusion, in the food, the blueberry, the cassia seed, the medlar and the chrysanthemum are used as main substances for inhibiting the damage of eye retinal cells to achieve the effect of protecting and improving eyesight, meanwhile, the medlar, the chrysanthemum and the vitamin C are used as free radical scavengers to dredge the microcirculation of eye blood vessels to achieve the effect of protecting, lutein esters are used as main components for supplementing the development of eyes for organisms, the development of eyes is promoted, the eyesight is protected, then, auxiliary materials are used for enhancing the flavor of the food, the eating feeling of the food is improved, the requirements of eaters are met, and the expected effect is achieved.
In the invention, the food is prepared from the following raw materials in parts by weight: 10-15 parts of blueberries, 0.25-0.35 part of lutein esters, 8-9 parts of medlar, 5-8 parts of cassia seeds, 5-8 parts of chrysanthemum, 0.5-0.8 part of vitamin C and 8-9 parts of auxiliary materials. In the mixture ratio, the blueberry is used as the main component of the food, and the blueberry flavor can be used as the main flavor of the food, so that the food can meet the taste selection of teenagers, and the eating feeling is better.
The invention also provides a preparation method of the food for protecting eyesight, which mainly comprises the following steps:
mixing blueberry, medlar and water, squeezing, and making into pomace and fruit juice; mixing the pomace with ethanol, soaking, and performing solid-liquid separation to obtain filter residue; carrying out enzymolysis on the filter residue, and drying to obtain powder I; concentrating the fruit juice, and mixing with filler to obtain powder II; pulverizing semen Cassiae and flos Chrysanthemi into powder III; mixing the powder I, the powder II, the powder III, the lutein ester and auxiliary materials, and tabletting to obtain the food.
Specifically, when the blueberries and the medlar are mixed with water, the mass ratio of the blueberries to the water is 1 (1.5-1.8). At the moment, the effective components in the blueberries and the medlar can flow out along with liquid in the squeezing process, so that the phenomenon that when the water content is too small, the effective components are remained on pomace too much, and the separation difficulty is high is avoided. And when the moisture content is higher, the obtained juice concentration is lower, and the concentration cost is higher, so that the preparation cost is higher.
In this application, in the mixing process of blueberry and matrimony vine, need cut up to make effective component in blueberry and the matrimony vine can furthest dissolve out, increase extraction efficiency.
It should be noted that the particle size of the blueberry and the medlar is 2mm-3 mm.
After the fruit juice and the pomace are prepared, the pomace can be mixed with ethanol, and after immersion, solid-liquid separation is carried out to obtain filter residue. Ethanol is used as a degreasing solvent, so that the pomace can be subjected to enzymolysis, and the expected enzymolysis effect is achieved.
In the application, the ethanol is absolute ethanol, and the feed-liquid ratio of the pomace to the ethanol is 1 (3-5) g/L. In this application, select anhydrous alcohol as degreasing solvent, avoid moisture to cause the influence to the degrease, promote degrease efficiency. Moreover, the fruit residues and the sewage ethanol are mixed according to the feed liquid ratio, so that the degreasing effect of the fruit residues is better, the waste of absolute ethyl alcohol can be avoided, and the cost performance of food is improved.
In the application, the dipping time is 20min-40min, and the dipping temperature is 30 ℃ to 35 ℃. The pomace is soaked in the absolute ethyl alcohol for 20min to 40min, so that the degreasing effect of the pomace is good, and meanwhile, the absolute ethyl alcohol can be reused for many times, so that the cost is saved.
In the application, after the filter residue is prepared, the digestion and absorption effects of the food are poor due to the fact that the filter residue contains more macromolecular substances, and the eating effect is poor. Based on this, the preparation method of the application carries out enzymolysis on the filter residue, and the enzymolysis mainly comprises the following steps: mixing the filter residue with alkaline protease, performing enzymolysis at 40-45 deg.C for 20-25 min, inactivating enzyme, and performing solid-liquid separation to obtain solid I; mixing the first solid with alpha-amylase, performing enzymolysis at 65-70 deg.C for 20-25 min, inactivating enzyme, performing solid-liquid separation to obtain second solid, and drying to obtain first powder.
The alkaline protease can carry out enzymolysis on peptide bonds of proteins under alkaline conditions, so that a macromolecular protein structure is converted into a small molecular peptide chain or amino acid, the food is easy to digest and absorb, and the action effect is better. Alpha-amylase, on the other hand, is capable of hydrolyzing glucosidic bonds within starch to dextrins, oligosaccharides and monosaccharides under acidic conditions. Therefore, after the filter residue is sequentially subjected to the enzymolysis process of the alkaline protease and the alpha-protease, the prepared powder I is rich in dietary fibers, so that the satiety of eaters is enhanced, the food is suitable for being eaten by obese people, and the applicability is stronger.
It should be noted that after the powder I is prepared, the addition amount of the powder I can be adjusted according to the specific conditions of people who eat the powder I, so that the dietary fiber content of the food is suitable for different people to eat, and the effect is good.
Adjusting the pH value of the filter residue to 8-9 before mixing the filter residue with alkaline protease, and adjusting the pH value of the first solid to 4.5-5.5 before mixing the first solid with alpha-amylase. The pH value of the filter residue is adjusted to be alkaline, so that the activity of the alkaline protease is stronger, and the enzymolysis effect is better. The pH value of the first solid is adjusted to be acidic, but the activity of alpha-amylase is stronger, and the enzymolysis effect is better.
The concentration of alkaline protease was 0.3 wt% and the concentration of alpha-amylase was 0.4 wt%. When the concentration of the alkaline protease and the alpha-amylase is higher, the enzymolysis speed is higher, the control is not easy, the enzymolysis of the filter residue and the solid is easy to be excessive, and when the concentration is lower, the enzymolysis speed is lower, the enzymolysis time is longer, and the preparation period is longer.
Concentrating the obtained fruit juice by 5-7 times, and mixing with filler to obtain powder II; the filler can be microcrystalline cellulose, starch, etc.
Drying semen Cassiae and flos Chrysanthemi, pulverizing, and making into powder III;
then stirring the powder I, the powder II, the powder III, the lutein ester and the auxiliary materials at 300-450 rpm for 20-40 min, uniformly mixing and tabletting to obtain the food.
The food prepared by tabletting can be conveniently carried, stored, transported and the like, and has stronger convenience.
It should be noted that when the tabletted food is prepared, a proper amount of adhesive can be added according to actual conditions, so that the tabletted food is not easy to loosen and has better preservation effect.
