Description
Technical Field
The invention relates to the technical field of foods, in particular to a sports nutritional food formula and a preparation method thereof.
Background
Through the summary analysis of a large number of scientific research results of domestic and foreign sports, the long-time moderate and large-intensity sports mainly have the following effects on human bodies:
1. increased water metabolism: the digestion, absorption, transportation of various nutrients in the body and the excretion of metabolic waste are all carried out by aqueous solutions, and water has the function of maintaining the metabolism of the substances. The sweating is one of the main ways of heat dissipation of the body in sports, and in the middle-intensity sports, the sweating amount is usually 0.5-1.5L/h, the sweating amount can be greatly increased along with the increase of the sports intensity and the increase of the temperature and the humidity of the sports environment, and the sweating amount can reach 2.5L/h in the severe sports under the high-temperature and high-humidity environment. During the marathon exercise, the perspiration volume of the person with excellent performance often exceeds 5L/session. Under the condition that this kind of water metabolism form of sweating increases, if supply moisture in time, can appear the exercise dehydration, will lead to the body temperature to increase, metabolite gets rid of the speed and reduces, and the rhythm of the heart promotes, and respiratory rate increases scheduling problem makes the athletic ability sharply descend, appears life danger even.
2. High-quality energy substance-increased carbohydrate metabolism: in the human body, carbohydrate, fat and protein are three nutrients which can provide energy, and all three energy nutrients produce different intermediate metabolites in the metabolic process, wherein the negative effects of the metabolites of carbohydrate compared with the metabolites of fat and protein on the human body are the lowest. Different exercise intensities can be achieved in the exercise process, and the exercise intensity is generally divided into three types, namely low, medium and high. When the exercise intensity is in the range of 55% -75% VO2max for a long time, the proportion of energy supplied by carbohydrate in a glycolytic energy supply mode is rapidly increased, the sugar reserve in the exercise muscles is reduced, the maintenance of the exercise time is influenced, meanwhile, the lactic acid production amount in the muscles is more than 20 times of that in the resting period, and the muscle soreness and distension feeling are increased. Theoretically, the carbohydrate reserve in the muscle and liver of the body can maintain 70% VO2max for about 90 minutes of moderate exercise, and if the exercise is high, the liver glycogen can be reduced by 55% in 60 minutes of exercise, and the carbohydrate reserve in the muscle of the body can be exhausted after 2 hours of high exercise, so that the exercise capacity is reduced, or the hypoglycemia problem occurs.
3. Increased sodium salt metabolism: during the exercise, the sweat amount of the body is increased, the sweat amount per hour under the high-temperature and high-humidity environment is at least 2.5L, and the electrolyte in the sweat is mainly sodium salt in the form of sodium chloride. The concentration of sodium ions in sweat is 20-80mmol/L, and every 1L of sweat with the sodium ion concentration of 50mmol/L is equivalent to 3g of sodium chloride lost by the body. The sweat amount of the sports crowd is 2.5L per hour, and about 15g of sodium chloride can be lost after the sports crowd takes 2 hours. When the sodium salt reserve of the body is continuously reduced in the movement process and is not actively supplemented, the hyponatremia of the motor can be caused, and the movement medical problems of direction disorder, muscle weakness or spasm, nausea, vomiting and the like can be caused.
4. Increased B vitamin metabolism: thiamine, vitamin B1, in synergistic combination with other B vitamins, converts energy in the food ingested by the body into energy and heat for muscles. Thiamine plays an important role in the metabolic process of carbohydrates, with increased carbohydrate intake and increased thiamine requirements as metabolism increases. Riboflavin, vitamin B2, is involved in the production of energy and normal cellular activities in the body by forming coenzymes, which are primarily involved in the process of harvesting energy from ingested carbohydrates, fats and proteins. Pyridoxine, vitamin B3, is involved in the breakdown of amino acids in muscle to provide energy to the muscle during exercise, as well as in the conversion of lactate to glucose in the liver, and in the breakdown of muscle glycogen to provide energy. Therefore, thiamine, riboflavin and pyridoxine in the B vitamins are all related to the energy metabolism of the body, and the energy metabolism of the body is increased in the exercise process, so that the demand of the three B vitamins is increased.
5. Increased production of free radicals: during exercise, especially during heavy exercise, the body produces an increased number of free radicals, which are one of the main causes of cell and tissue damage. The intensity of exercise is one of the factors causing the increase in the level of free radicals, and the time of exercise is also an important factor in determining the change in free radicals. The long-term endurance exercise or long-term overload training can cause the increase of the level of free radicals in the body, so that the oxidation resistance of the body is reduced, and the body is fatigued. Endurance exercise experiments of human body and rat show that: free radicals in the body increase significantly after long endurance exercise. After the semiprocess malasone, the production of oxygen free radicals is increased by 40%, when the free radicals are increased sharply and exceed the capability of the organism for clearing the free radicals, the level of antioxidants of tissues is reduced, the organism can generate oxidative stress reaction, and the exercise oxidative stress is one of the main reasons of tissue injury and muscle fatigue.
6. Decrease of nerve excitation: the central nervous system effects motor and behavioral activities through the regulation of neurotransmitters in the motor regions of the cerebral cortex, basal ganglia, etc. Neurotransmitters in the central nervous system are relatively balanced, and motor ability is maintained, and if unbalanced, motor ability is decreased and fatigue is generated. 5-hydroxytryptamine is central inhibitory transmitter in brain tissue, and has effects of promoting sleep, reducing motor neuron excitability, influencing endocrine function, and suppressing appetite. Relevant studies on rats found: at moderate exercise, 5-hydroxytryptamine showed an increase beginning at 60 minutes and peaked by the end of 120 minutes of exercise. The level and activity of 5-hydroxytryptamine in brain increase during long-term exercise, and fatigue of exercise body and center is aggravated. Dopamine is another neurotransmitter which is proved to play a role in central fatigue, and dopamine exhaustion or activity reduction can lead motor capacity reduction and fatigue to occur in advance, and related researches find that: as exercise time increases, dopamine activity and levels decrease, leading to fatigue.
Therefore, the nutrient supplement for the human body in long-time exercise cannot pay attention to the supplement of individual nutrients of energy substances, minerals and vitamins, the influence of long-time moderate-intensity and large-intensity exercise on the human body needs to be comprehensively considered, and the supplemented nutrients need to have scientific and reasonable proportions of supplementing energy, thiamine, riboflavin, pyridoxine, antioxidant substances, blood vessel protecting substances, fat metabolism promoting nutrients, improving nervous states and paying attention to the coordination among the nutrients, particularly carbohydrate and sodium salt.
The existing sports nutritional food of the type has the most energy supplementing substances, namely carbohydrate, various vitamins and mineral substances, and the first aspect of the matching of various nutrients in the formula is that: the characteristics of various metabolic changes of a human body in exercise during long-time exercise are not specifically considered, the formula setting is not targeted, or the nutrient collocation is single, and the synergistic effect among various nutrients is not considered; secondly, the method comprises the following steps: the ratio of important nutrients, namely carbohydrate and sodium salt, is lack of scientific rationality, so that the concentration of the carbohydrate and the sodium salt in the brewed beverage can not be in the range which can be easily digested and absorbed by sports people, or the concentration is too low to play a role in supplementing energy and minerals, or the concentration is too high to easily cause various body discomfort problems. Among people who exercise for a long period of time, at least 20% of people suffer from diarrhea and other gastrointestinal problems during or after exercise, among which too high osmotic pressure of the drink due to improper mixture ratio of carbohydrates, electrolytes and proteins in the drink or intolerance or allergy to drinkers due to special carbohydrates contained in the drink; thirdly, the method comprises the following steps: the characteristics of carbohydrate consumption per hour of a sports human body due to different exercise intensity and time are not considered, and the set content of each product is unscientific.
