As shown in fig. 6, the air nozzle 2302 of the straight pipe 2305 is vertically arranged upwards, and in this state, the air nozzle 2302 on the straight pipe 2305 is parallel to the air nozzle 2302 on the annular pipe 2301, so that the yellow wine and the sterile air in the same plane can be more fully contacted, and the yellow wine aging efficiency is improved; as shown in a view in fig. 7, the straight pipe 2305 is rotated, the air nozzle 2302 is arranged obliquely upwards, and in this state, sterile air ejected from the air nozzle 2302 on the straight pipe 2305 intersects with sterile air ejected from the air nozzle 2302 on the annular pipe 2301, so that the yellow wine can be in more sufficient contact with the sterile air, and the yellow wine aging efficiency is improved; as shown in the views b and c in fig. 7, the straight pipe 2305 is rotated, the air nozzle 2302 is arranged downwards, and in this state, sterile air sprayed by the air nozzle 2302 on the straight pipe 2305 can be located below the aeration device 23, so that the problem that yellow wine located below the aeration device 23 is not sufficiently contacted with the sterile air is effectively solved, the yellow wine and the sterile air can be in all-around and more sufficient contact, the yellow wine aging efficiency is greatly improved, and the purpose of sobering is achieved.
The invention relates to a sobering process, which comprises the following steps:
s1, cleaning the tank body 1, introducing sterile water into the tank body 1 from the feeding pipe 3, and opening the valve 20 to discharge the sterile water after the tank body 1 is filled with the sterile water;
s2, drying the tank body 1, introducing liquid at the temperature of 50-60 ℃ into the medium layer 103 from the liquid inlet pipe 7, and heating and drying the inner wall of the tank body 1;
s3, pre-cooling the tank body 1: after the tank body 1 is dried, discharging liquid in the medium layer 103, introducing cooling water into the medium layer 103 from the liquid inlet pipe 7, and cooling the tank body 1;
s4, storing yellow wine: injecting the yellow wine which is decocted and cooled at normal temperature into the tank body 1 from the feeding pipe 3, and reducing the temperature of cooling water introduced into the medium layer 103 when the temperature sensed by the temperature sensor 10 is higher than 15 ℃ according to the temperature sensed by the temperature sensor 10; when the temperature sensed by the temperature sensor 10 is lower than 5 ℃, the temperature of cooling water introduced into the dielectric layer 103 is increased, and the temperature in the tank body 1 is controlled to be 5-15 ℃;
s5, sobering up yellow wine: according to the data fed back by the oxygen capacity detector 12, sterile air is introduced into the tank body 1, the step of introducing the sterile air is completed by the aeration device 23, the second motor 24 drives the screw rod 2402 to rotate, the aeration device 23 slowly moves up and down along the guide rod 25, meanwhile, the air nozzle 2302 on the annular pipeline 2301 sprays the sterile air, and in the process of moving up and down of the aeration device 23, the first motor 2308 drives the straight pipe 2305 to rotate, so that the air nozzle 2302 on the straight pipe 2305 rotates.
According to the invention, the yellow wine is stored in the tank body 1 at a low temperature and a constant temperature, and the sterile air is introduced into the tank body 1 according to the data fed back by the oxygen capacity detector 12, so that the environment of storing the yellow wine in the earthenware wine jar is simulated, the yellow wine can be prevented from being putrefactive and acidified, the aging of the yellow wine can be accelerated, and the sobering purpose is achieved, so that the stored yellow wine can achieve the taste of storing the yellow wine in the earthenware wine jar, the defect of poor taste of storing the yellow wine in a large jar is overcome, the storage time of the yellow wine can be greatly reduced, the production efficiency of the yellow wine is improved, the mass production of the yellow wine is facilitated, the labor cost.
