Referring to fig. 1 to 3, in an embodiment of the present invention, a method for controlling a cooking appliance 100 is provided, where the cooking appliance 100 includes a heating portion 102, and the method includes:
step S12, obtaining cooking time;
step S14, determining the heating power and the heating time period of the heating part 102 according to the preset heating range and the cooking time period;
in step S16, heating of the heating portion 102 is controlled according to the heating power and the heating time period of the heating portion 102.
The control method in the embodiment of the present invention may be implemented by the cooking appliance 100 in the embodiment of the present invention. Specifically, referring to fig. 2, the cooking appliance 100 includes a heating part 102 and a controller 104, and the controller 104 is connected to the heating part 102. The controller 104 is configured to acquire a cooking time period, and to determine the heating power and the heating time period of the heating portion 102 according to a preset duration range and the cooking time period, and to control heating of the heating portion 102 according to the heating power and the heating time period of the heating portion 102.
The control method and the cooking appliance 100 of the above embodiment can allocate the fire power and the heating time of the heating part 102 according to the preset duration range and the preset cooking time, so that under the condition that the user selects different cooking times, dishes cooked by the cooking appliance 100 can reach a better nutrition level, the taste experience of the cooked food materials is ensured, and the interaction degree between the cooking appliance 100 and the user is improved.
Specifically, the cooking appliance 100 includes, but is not limited to, a gas range, an induction cooker, an electric ceramic oven, an electric rice cooker, an electric steaming oven, an oven, a microwave oven, and the like. In the illustrated embodiment, the cooking appliance 100 is a gas range as an example to explain the embodiment of the present invention. Referring to fig. 3, in the illustrated embodiment, the cooking appliance 100 includes a stove body 106, a pot holder 108, and stove heads 110, a heat switch 114 and a timing switch 116 are disposed on a surface of the stove body, the stove heads 110 may serve as the heating portion 102 of the cooking appliance 100, the number of the stove heads 110 is two, and each stove head 110 corresponds to one heat switch 114. The pot holder 108 is disposed on the surface of the panel of the stove body 106, and the stove head 110 is exposed from the opening of the panel of the stove body 106. Specifically, the burner 110 includes an outer ring portion 118 and an inner ring portion 120, the gas injected by the outer ring portion 118 combusts to form an outer ring fire, and the gas injected by the inner ring portion 120 combusts to form an inner ring fire. During cooking, the pan is placed on the pan support 108, and the gas that the furnace end 110 sprays burns and forms flame, heats the pan. The fire switch 114 is connected to an execution module (the execution module includes a gas valve) of the cooking appliance 100, and is used for controlling the firing, extinguishing, and fire adjustment of the cooking appliance 100, such as controlling the outer ring fire and the inner ring fire to heat the pot at the same time, controlling the magnitude of the fire of the outer ring fire and the inner ring fire, controlling the outer ring fire to extinguish and keeping the inner ring fire to heat the pot, controlling the outer ring fire and the inner ring fire to extinguish, and the like. The firepower or the power can be controlled by controlling the flow of the fuel gas, and the relationship between the firepower or the power and the flow of the fuel gas can be calibrated and stored. The timing switch 116 is used to adjust the time for starting cooking of the cooking appliance 100, so as to adjust the cooking time. The adjustment of the fire power and the reservation of the cooking start time may also be transmitted to the cooking appliance 100 by a terminal communicating with the cooking appliance 100.
In the case where cooking appliance 100 is an induction cooker, a heating coil of the induction cooker may serve as heating portion 102, and in the case where cooking appliance 100 is an electric cooker, an electric heating plate or an electric heating pipe of the electric cooker may serve as heating portion 102. For other cooking appliances 100, the magnitude or power of the heating power may be controlled by electrical parameters such as current, voltage, etc., and specifically, the execution module of the cooking appliance 100 may include a power control module for controlling the power of the electric heating part 102 to achieve the adjustment of the heating power.
In step S12, the cooking time period may be set by the user, and in one example, the selectable range of the cooking time period is [300,2000] S. Specifically, the acquiring of the cooking time period includes at least one of:
acquiring a cooking time period according to an input at an interactive interface of the cooking appliance 100;
receiving the cooking time period transmitted by the terminal. Therefore, the cooking time is flexibly obtained, and the application range of the control method is enlarged.
The control method of the embodiment of the present invention may be implemented by the cooking appliance 100 of the embodiment of the present invention. Specifically, the controller 104 is configured to obtain the cooking time period by at least one of:
acquiring a cooking time period according to an input at an interactive interface of the cooking appliance 100;
receiving the cooking time period transmitted by the terminal.
In one embodiment, the cooking appliance 100 has an interactive interface through which a user can select a certain recipe and set a cooking time period of the recipe, and the cooking appliance 100 acquires the recipe and the cooking time period according to an input at the interactive interface. In one example, the interactive interface includes a touch key by which the user selects a recipe and corresponding cooking time period. In another embodiment, acquiring the cooking time period includes: receiving the cooking time period transmitted by the terminal. Specifically, the cooking time period may be set by the user at a terminal that establishes wired or wireless communication with the cooking appliance 100, and after the user selects the recipe and the corresponding cooking time period at the terminal, the terminal transmits the recipe and the cooking time period to the cooking appliance 100. Terminals include, but are not limited to, cell phones, tablet computers, personal computers, servers, wearable smart devices, other household appliances (e.g., refrigerators, televisions, air conditioners, range hoods, dishwashers, microwave ovens, etc.). In still another embodiment, the acquiring the cooking time period includes: acquiring a cooking time period according to an input at an interactive interface of the cooking appliance 100; there are two ways to receive the cooking time duration transmitted by the terminal, that is, to obtain the cooking time duration.
In the embodiment of the present invention, the preset duration range may be a duration range measured by the cooking appliance 100 simulating an actual usage scenario of the food material, and the preset duration range may be stored in the cooking appliance 100, or the cooking appliance 100 may obtain the preset duration range from a server. The duration of the cooking may be understood as a relationship between the amount of fire or power of the heating part 102 and the cooking time, and a characteristic duration range is preferably associated with a cooking result for each food material.
In the embodiment of the present invention, the characteristic fire E may be expressed in a vector manner:
P=(P1,P2,...,Pn)
T=(t1,t2,...,tn)
E-P × T-P1 × T1+ P2 × T2+ … + Pn × tn, n being a positive integer. It will be appreciated that in other embodiments, the characteristic duration may be represented in a matrix.
For example, for a steamed custard, the cooking effect is preferably such that the custard is ripe and as non-porous as possible, or the proportion of the area of the custard pores to the area of the custard is less than a threshold value, and if the characteristic heat is too low, the custard cannot be set and formed, and if the characteristic heat is too high, the custard is more old and honeycombed. The preset fire range in which the characteristic fire is located may be [7,11] kw.min, which may be understood as the characteristic fire range. Preferably, the characteristic duration of the heat is in the range of [8,10] kw.min, such as 8kw.min, 10kw.min, or other values between 8kw.min and 10kw.min, which can be experimentally determined by simulating actual usage scenarios, such that the custard is in a just solidified state and the critical point where porosity begins to appear inside the surface.
It should be noted that the embodiment of the present invention is also applicable to all cooking manners with characteristic boiling point cooking mediums, such as self-distribution of the duration and degree of heating of cooking manners such as soup making, water boiling, water steaming, and deep frying. For example, in the case of soup cooking, the soup is a clear soup or a thick soup, and the preset duration range is different. In the case of a soup, the cooking effect can be evaluated by the overall water loss rate of the soup, the content of nutrients (e.g., soluble protein content, amino acid content, free fatty acids, etc.), and organoleptic evaluation properties (e.g., flavor, sweetness, color, body, etc. of the soup). For the cooking effect of other food materials, the preset duration and degree range corresponding to the cooking effect can be specifically calibrated through experiments, and the preset duration and degree range is not expanded one by one.
In some embodiments, the heating part 102 is used for heating a pot, and the control method includes:
controlling the heating part 102 to heat the pot to boil water in the pot;
the heating power and the heating time period of the heating part 102 at the water boiling stage in the pot are determined according to the preset range of the duration and the cooking time period.
Thus, under the condition that the water in the pot is boiling, the cooking parameters corresponding to the cooking time are determined according to the preset duration range and the cooking time to control the heating part 102 to heat the pot, so that the cooking effect of the food material is better.
The control method of the embodiment of the present invention may be implemented by the cooking appliance 100 of the embodiment of the present invention. Specifically, the controller 104 is used to control the heating part 102 to heat a pot to boil water in the pot, and to determine the heating power and heating time period of the heating part 102 at the water boiling stage in the pot according to a preset range of duration and cooking time period.
Referring to fig. 3 and 4, the cooking utensil 100 further includes a temperature sensing probe 112, the temperature sensing probe 112 is connected to the controller 104, and the temperature sensing probe 112 is disposed in the middle of the burner 110. Specifically, the temperature sensing probe 112 penetrates the inner ring portion 120 and protrudes from the inner ring portion 120. During cooking, the pot is placed on the pot support 108 and the temperature sensing probe 112 is pressed down so that the temperature sensing probe 112 can contact with the pot to detect the temperature outside the pot.
The temperature outside the pot detected by the temperature sensing probe 112 can also be used for dry burning prevention, specifically, when the temperature outside the pot suddenly rises to the set fire cutoff temperature for dry burning of the pot, the controller 104 automatically cuts off the gas and extinguishes the fire, thereby preventing the safety problem caused by dry burning of the pot.
In the illustrated embodiment, the temperature sensing probe 112 is a contact type, and since the bottom of the pot contacts the temperature sensing probe 112, the temperature of the bottom of the pot can be regarded as the temperature outside the pot. It is understood that in other embodiments, the temperature outside the pot can be detected by other temperature detecting devices, such as a non-contact temperature detecting device including an infrared temperature detecting device, and the non-contact temperature detecting device can be mounted on a panel or a wall of the cooking appliance 100 for detecting the temperature of the pot body or the temperature of the pot bottom as the temperature outside the pot.
In some embodiments, a control method comprises:
acquiring the temperature outside the pot;
the temperature in the pot is determined according to the temperature outside the pot. So, realized acquireing of temperature in the pan, do benefit to and carry out more accurate control to the temperature of eating the material.
The control method of the embodiment of the present invention may be implemented by the cooking appliance 100 of the embodiment of the present invention. Specifically, the controller 104 is used for obtaining the temperature outside the pot and determining the temperature inside the pot according to the temperature outside the pot.
Specifically, in the embodiment of the present invention, the temperature Tj inside the pot can be obtained by detecting the temperature Ti outside the pot by the temperature sensing probe 112 and seeking the difference Δ T of the temperature difference compensation inside and outside the pot according to the temperature Ti outside the pot, so as to determine the temperature Tj inside the pot, that is, Ti ═ Tj +/Δ T, or Tj ═ Ti- Δ T. The type of pot used is usually fixed for a certain cooking process or program. For example, for the process or program of steaming an egg custard, a metal pot (such as an iron pot or a stainless steel pot) is generally used, so in the cooking apparatus 100, the difference Δ T corresponding to the metal pot may be stored in the cooking apparatus 100 in advance, or the cooking apparatus 100 may be obtained from a terminal. In the case where the cooking appliance 100 determines that the egg-steaming process is used according to the cooking process selected by the user, the controller 104 may select the corresponding difference Δ T so as to calculate the temperature Tj in the pot in the case of subsequently obtaining the pot temperature Ti. However, for different metal pans, the difference Δ T is different due to the difference, but the difference is not large, in this case, the minimum difference in the interval range is usually selected as the difference Δ T of the metal pan. Of course, in other cases, other differences can be selected as the difference Δ T of such cookware.
In some embodiments, the type of pot may also be determined based on the pot selection signal. Specifically, the control method comprises the following steps:
determining the type of the cookware according to the cookware selection signal;
and determining the difference between the temperature outside the cookware and the temperature inside the cookware according to the type of the cookware.
The control method of the above embodiment can be implemented by the cooking appliance 100 of the present embodiment, and specifically, the controller 104 is configured to determine a type of a pot according to the pot selection signal, and determine a difference between a temperature outside the pot and a temperature inside the pot according to the type of the pot.
Thus, the cooking appliance 100 can be adapted to more cookers, and the temperature control is more accurate.
Specifically, the cooking appliance 100 may be provided with a selection button or an interface, after the user selects a certain cooking procedure, the selection button or the interface is used for the user to select a type of a pot to generate a pot selection signal, the controller 104 determines Δ T when receiving the pot selection signal, and then may determine the temperature inside the pot through the Δ T and the detected temperature outside the pot. The types of cookware include, but are not limited to, marmite, glass pot, metal pot (such as stainless steel pot, iron pot or other alloy pot), and the like. The pot selection signal may also be transmitted by a terminal in communication with cooking appliance 100, including but not limited to a cell phone, a tablet computer, a personal computer, a wearable smart device, a server, other household appliances (e.g., refrigerator, television, range hood, dishwasher, microwave oven, etc.).
In addition, the cooking appliance 100 is also provided with a menu key, and in one example, the user may select the menu "custard" through the menu key. The menu key includes, but is not limited to, a touch key, a knob, a press key, etc., and the selection of the menu may also be transmitted to the cooking appliance 100 by a terminal communicating with the cooking appliance 100. Before the custard is steamed and cooked, the egg liquid of the custard is prepared, and specifically, before the water is cooked, the preparation stage is carried out: the eggs are thrown into a bowl, a proper amount of water is added, and the egg liquid is stirred until the egg liquid is uniformly dispersed. Proper amount of water is added into the pot, the bowl or the plate filled with egg liquid is placed on the grate, or the bowl or the plate filled with egg liquid is directly and partially immersed in the water, the pot cover is covered, and a user selects the egg custard through a menu button.
The step of controlling the heating part 102 to heat the pot to boil the water in the pot can be regarded as a pre-boiling stage, which mainly boils the water in the pot to generate water vapor to cook the food. The controller 104 controls the heating part 102 to heat at a preset power P0 until the water in the pot is detected to be in a boiling state. In the embodiment, under the condition that the temperature Ti of the pot bottom is equal to or more than 100 ℃ and equal to or less than 200 ℃, the controller 104 can determine the temperature Tj in the pot to enable water to boil according to the difference value delta T between the temperature Ti of the pot and the temperature in the pot. In one example, heating portion 102 is heated for a time period t0 ≧ 180 seconds from the start of heating the pot to the determination that water in the pot is boiling. The pre-boiling stage may be performed using a greater fire power of cooking appliance 100. The heating time of the pre-boiling stage is not limited to the heating time determined according to the preset duration range and the cooking time.
In the boiling stage of water in the pot, the firepower and the heating time of the heating part 102 are determined according to the preset duration range and the cooking time, so that the food can be in the preset duration range during cooking, and the cooking effect of the food can be expected.
Specifically, in the case of cooking "custard", specifically, when the egg liquid and the moisture are mixed and stirred at normal temperature and pressure, air enters the egg liquid and is wrapped therein to form bubbles. In the heating process of the egg liquid, the egg liquid mainly carries out a bubble removing stage and a solidification forming stage. In the bubble removing stage, the density of the bottom egg liquid is reduced, so that the bottom egg liquid flows upwards under the action of buoyancy, the top egg liquid flows downwards under the action of gravity, and air dissolved in the egg liquid is expanded and separated out by heating in the flowing process.
The extent of spreading during the denaturation of the native protein of the egg liquid during the coagulation forming stage depends on the length and temperature of heating and is related to the specific protein. That is, the egg liquid can be solidified and molded by controlling the heating time and the heating power, that is, the duration of heating.
Therefore, in the embodiment of the present invention, the relevant duration data may be obtained by testing the process of cooking the "custard" according to the cooking effect of the set "custard" and stored in the cooking appliance 100, or the cooking appliance 100 may be obtained from a terminal. The related duration data is characteristic duration data corresponding to the cooking effect.
The characteristic duration may be such that the bubble removal stage is performed with 1 or 2 or more firepowers and the coagulation forming stage is performed with 1 or 2 or more firepowers, depending on the set cooking time period. The duration of each fire is related to the characteristic duration.
In one example, the cooking appliance 100 has 10 fire gears, wherein 9 fire is 3.9KW, 5 fire is 1.5KW, and 1 fire is 0.7 KW. According to the setting of cooking effect, the characteristic duration of heat is about 9kw.min, after the water in the pot is boiled, the effect of the egg custard steamed by the combination of heating for 4min at 5 grades and heating for 4min at 1 grade is basically the same as the effect of the egg custard steamed by heating for 13min at 1 grade. For the former duration, the total cooking time is 8min, for the latter duration, the total cooking time is 13min, so that the former duration is adopted for cooking under the condition that the cooking time set by the user is 8min, and the latter duration is adopted for cooking under the condition that the cooking time set by the user is 13 min. In the case where the user does not set the cooking time period, the cooking appliance 100 cooks with a default of one duration, preferably with a combination of two types of firepower, and the latter type of firepower is lower than the former type of firepower, while satisfying the duration within the characteristic duration range. Of course, one scheme can be preferred from the energy source perspective, and the distribution can also be carried out randomly, so that the fire power distribution scheme is not limited.
In another example, the firepower of 1 st gear is 0.1kw, and the total cooking time is about 90min, so the combination of firepower and cooking time is to make the combined duration in the characteristic duration range.
For cooking other food materials, the cooking effect of the food material can be set, then a corresponding characteristic duration range is obtained through testing, and the corresponding characteristic duration range is stored in the cooking appliance 100 or the terminal, and can be used as a preset duration range.
Referring to fig. 5, in some embodiments, the control method includes step S18: when the heating time period of heating part 102 is finished, heating part 102 is controlled to be turned off and cooking appliance 100 is controlled to issue a completion notice.
