A vegetable oil production control system and a production control method, comprising: storing the optimal pressing temperatures of different kinds of vegetable oil raw materials through a storage part; calibrating the corresponding control relation between the current and the heating temperature of a pressing motor of the oil press for different vegetable oil raw materials by a calibration part; adding the vegetable oil raw material into a squeezing part for squeezing; and after the squeezing motor is started, adjusting the heating temperature in real time according to the real-time current of the squeezing motor and the corresponding control relation between the current of the squeezing motor and the heating temperature. The method can be used for oil pressing of vegetable oil materials such as peanuts, corns, soybeans, sesames, castor-oil plants, sunflower seeds, tea seeds, rapeseed, walnuts, flaxseeds, peony seeds and the like, and the pressing temperature is kept at the optimal pressing temperature in the vegetable oil pressing process, so that the oil yield and the oil pressing quality are guaranteed.
