A) preparing raw materials, namely selecting white soft winter wheat with excellent overall quality, low protein content and higher malt leaching content as a main raw material of the red wine flavor wheat beer; the brewed wheat conforms to the GB13186 specification, the moisture of the wheat is less than or equal to 13 percent, the germination rate is more than or equal to 92 percent, the thousand seed weight is more than or equal to 38 grams, the protein is less than or equal to 12 percent, and the anhydrous extract is more than or equal to 84 percent;
B) b, preparing malt, namely soaking the raw material wheat selected in the step A to prepare the malt, wherein the initial steeping degree is kept between 35% and 40%, the steeping degree is increased to 45% to 48% by spraying after the wheat germinates, the steeping temperature is 120 +/-10%, the steeping is kept for 30 +/-2 hours, and the wheat is turned over once every 12-13 hours in the steeping process; controlling the temperature of the product to be 13-17 ℃ 1-4 days after the germination, and increasing the temperature in the fifth day to be not more than 20 ℃;
C) b, crushing the malt, namely selecting the barley malt and the wheat malt prepared in the step B, weighing 30-40 parts of the malt, and crushing the malt through wet crushing or humidifying crushing; the crushing and refining degree of the wheat malt is larger than that of the barley malt; the crushing of the barley malt is best when the hull is broken and the bud is not broken;

F) e, preparing wort, namely boiling the wort filtered in the step E, adding 0.05-1 part of hops during boiling, adding 5-8 parts of concentrated grape juice, 1-3 parts of lactose and 3-6 parts of white granulated sugar after boiling, mixing, standing, clarifying and cooling the wort after mixing and dissolving;
G) f, fermenting the wort, namely transferring the wort cooled in the step F to a fermentation device, adding 0.5-1 part of yeast into the cooled wort, fermenting at 18-20 ℃, and increasing the pressure to 1-1.2bar when the sugar degree is up to 10-12 DEG P; when the sugar degree is reduced to 7-9 ℃ P, preserving the heat for 1-3 days, and then cooling to 0 ℃ for heat preservation;
H) canning the finished product, namely, keeping the temperature of the wort fermented in the step G at 0 ℃ for 5 days, and then carrying out wine industry maturation to obtain the canned finished product;
I) and (4) warehousing finished products, namely storing the whole canned finished products in the step H into a warehouse to wait for goods inspection or ex-warehouse.
