The invention discloses a control method of a variable-rise-number gas water heater, which comprises the following steps: setting a preset number of liters of the gas water heater; adjusting the opening degree of the gas proportional valve to be matched with the preset ascending number; calculating the required number of liters of the gas water heater according to the monitoring data; judging whether the actual outlet water temperature is within the error range of the set outlet water temperature; and if the actual outlet water temperature is within the error range of the set outlet water temperature, controlling the gas proportional valve to maintain the current work, if the actual outlet water temperature exceeds the error range of the set outlet water temperature, judging whether the required rise number exceeds the preset rise number, and controlling the gas proportional valve to work according to the judgment result. The intelligent variable-lift gas water heater can realize the intelligent variable-lift function of the gas water heater, and fully meets the requirements of users.
