Referring to fig. 1, the pressure cooker of the present invention comprises a cooker body 1, wherein the inner wall of the cooker body 1 is provided with a ring-shaped stop table 10. After the pressing, the cooking is carried out by firing, and the pressure plate 4 gradually moves upwards until being close to the inner surface of the cooker cover 7 along with the increase of the pressure in the cooker (the attached figures 1-2 are only schematic diagrams, the inner surface of the cooker cover 7 is not horizontal in practice, so the ascending of the pressure plate does not influence the work of the pressure valve 9, meanwhile, the pressure in the cooker body of the invention refers to that the pressure in the cooker body is obviously higher than the atmospheric pressure during cooking, which can improve the cooking efficiency of food, but the pressure in the cooker body can not be equivalent to the pressure of the conventional pressure cooker on the market due to the air tightness between the through hole in the center of the cooker cover 7 and the sliding rod). After the pressure plate is tightly pressed, the pressure plate is ignited again for cooking, after a period of time, the pressure valve 9 is pulled up again for air release and the operation of pressing the sliding rod 5 downwards, so that the operation can be repeated for many times, and liquid grease separated out in the cooking process of the pig elbow is enabled to be extruded and flow into the oil collecting tank.
Through the operation, the liquid grease precipitated in the high-temperature cooking of the meat is removed, the technical problem that the grease is solidified and is not easy to separate when the meat is taken out of the pot is solved, and the meat is more compact in the pressing process and is beneficial to subsequent slicing treatment. Meanwhile, the separated grease is collected by a special oil collecting tank, and due to the existence of the oil filtering layer, the collected grease is pure and clean and can be used for other cooking operations, so that the utilization rate of food materials is improved.
