When the handle is required to be fixed on a cooking utensil, the free ends of the holding body 1 and the movable piece I4 are held, the movable piece I4 is forced to rotate into the accommodating groove 1a, the movable piece I4 rotates to drive the movable chuck 3 to rotate, the movable clamping part 3a on the movable chuck 3 approaches the fixed clamping part 2a on the fixed chuck 2 and clamps the utensil between the movable chuck and the fixed clamping part, then the sliding block 6a slides, the locking block 6b1 on the locking piece 6 acts on the acting end part 4e of the movable piece I4, and the locking block 6b1 prevents the movable piece I4 from rotating around the hinge shaft I7, so that locking of a handle clamping state is realized. When the handle is locked in the clamped state, the locking block 6b1 gives a balance force to the acting end 4e, so that the movable part 4 is kept still. When the handle is required to be detached, the sliding block 6a is reversely slid, the locking block 6b1 of the locking piece 6 is separated from the acting end 4e of the movable piece one 4, the free end of the movable piece one 4 rotates outside the accommodating groove 1a under the combined action of gravity or gravity and the opening spring 10, the movable clamp head 3 reversely rotates to enable the movable clamp part 3a to be far away from the fixed clamp part 2a, and the handle is in an open state.

When the acting end 4e is fixed, the acting end 4e of the first movable part 4 moves towards the direction of the holding body 1 and is fixed on the holding body 1, and the first movable part 4 rotates around the first hinge shaft 7 so as to force the free end to move away from the holding body 1; during the rotation of the first movable member 4, the connecting portion 3c of the movable chuck 3 also moves in a direction away from the holding body 1, and the movable chuck 3 rotates about the second hinge shaft 8 so that the movable clamping portion 3a moves upward and approaches the fixed clamping portion 2a; at this time, the movable clamp portion 3a moves from the open position to the clamped position with respect to the fixed clamp portion 2a. Thus, the active end 4e is fixed or released, forcing the free end of the movable element 4 to rotate and thus driving the connecting portion 3c to move the movable clamping portion 3a with respect to the fixed clamping portion 2a between the clamped position and the open position.
When the movable clamping part 3a is positioned at the clamping position, the sliding block 6a slides forwards, and the locking block 6b1 takes the shape of a hook and is clamped on the acting end 4e positioned at the rear end of the movable part one 4, so that the movable part one 4 and the movable clamp head 3 keep balanced. After the lock block 6b1 slides in the opposite direction with the lock member 6, the lock block 6b1 rotates away from the release action end 4e to unbalance the first movable member 4.
