Abstract
The invention provides a humic acid egg preservative film and a preparation method and a using method thereof, belonging to the field of food preservation. The humic acid egg preservative film is a uniform mixture prepared by using humic acid, chitosan, glycerol, alkyl polyglycoside, guar gum and water as main raw materials, overcomes the problems of resource waste, poor preservation quality and single functionality caused by the preservation of old mechanical eggs, and has the advantages of antibiosis, good preservation effect, convenience in operation, low cost and the like.
Description
Technical Field
The invention belongs to the field of food preservation, and particularly relates to a humic acid egg preservative film as well as a preparation method and a use method thereof.
Background
At present, egg preservative films are researched more at home and abroad, but most of the egg preservative films are only made of paraffin, chitosan, polyvinyl alcohol, propolis and the like, so that the effect is not ideal, and the composite type preservative films are rarely explored. Plant volatile oil is also used as a bacteriostatic agent for egg preservation in some people, but the cost is higher.
The humic acid is a high molecular organic substance generated by decomposing and converting animal and plant remains by microorganisms, has good physiological activity and functions of absorption, complexation, exchange and the like, and can play a good antibacterial effect. However, the use of humic acid as a preservative for eggs has not been reported.
Disclosure of Invention
The invention aims to provide a humic acid egg preservative film which takes environment-friendly degradable chitosan and humic acid as main raw materials, and the prepared product can be directly sprayed to form a film, so that the trouble and high cost of the traditional mechanical egg preservation are avoided.
The invention also aims to provide a preparation method and a using method of the humic acid egg preservative film.

1) dissolving chitosan in acetic acid water solution, adding glycerol, and stirring uniformly to obtain chitosan composite mother liquor;
2) dissolving humic acid in a potassium hydroxide solution to prepare a potassium humate solution;
3) dissolving guar gum in the potassium humate solution prepared in the step 2);
4) uniformly stirring the chitosan composite mother liquor and the potassium humate solution obtained in the step 3) under stirring to obtain humic acid egg preservative film mother liquor;
5) adding alkyl polyglycoside into the mother liquor obtained in the step 4) under stirring to obtain a uniform system.
As a further improvement of the invention, the chitosan is chitosan with acetylation degree of 70-90%, wherein the concentration of acetic acid aqueous solution is 0.5-1.5%, and the weight percentage of chitosan: acetic acid: glycerol: water 20 (0.5-1.5) to (1-3.5): 100.

The preparation method comprises the following steps: firstly, dissolving 15kg of chitosan in 0.5% acetic acid water solution, adding 0.6kg of glycerol after fully dissolving, and uniformly stirring to prepare the chitosan composite mother liquor. The preparation method comprises the following steps: firstly, dissolving 20kg of chitosan in 1.5% acetic acid aqueous solution, adding 0.8kg of glycerol after fully dissolving, and uniformly stirring to prepare the chitosan composite mother liquor. The humic acid egg preservative film can effectively reduce the evaporation of water and the internal dry consumption of eggs, so that the weight loss rate is reduced by 0.8 percent, and meanwhile, the change of the pH value of the treated eggs is obviously lower than that of the untreated eggs, so that the eggs can keep the internal stability of the eggs and the freshness of the eggs.

3) according to guar gum: potassium humate (0.8-2):10, dissolving guar gum in the potassium humate solution prepared in the step 2);
4) uniformly stirring the chitosan composite mother liquor and the potassium humate solution obtained in the step 3) under stirring, then adding alkyl polyglycoside under stirring to obtain humic acid egg preservative film mother liquor with a uniform system, and diluting to a required multiple to obtain a humic acid egg preservative film when in use;
wherein the mass ratio of alkyl polyglycoside to glycerin is 1: 1;
the chitosan is acetylated 70-90%; the mass concentration of the acetic acid aqueous solution is 0.5-1.5%;
the potassium humate is potassium fulvate, potassium ulmoosculate or potassium fulvate;
the alkyl polyglycoside is alkyl polyglycoside 0810, alkyl polyglycoside 1214, alkyl polyglycoside 0814, alkyl polyglycoside 0816, alkyl polyglycoside 1216 or alkyl polyglycoside 1218.
2. The humic acid egg preservative film prepared by the method of claim 1.

The use method of the humic acid egg preservative film as claimed in claim 2, which is characterized in that the prepared mother liquor is diluted by 0-200 times by adding water and placed in a sprayer; then spraying the eggs every 3-5min, and forming a layer of complete preservative film on the surfaces of the eggs after 2-3 times.
