Abstract

技术领域
本发明涉及一种来自于家禽、尤其是来自于产卵多的雌禽的具有改善的低胆固醇效果的蛋,具有:
粮食作物类型和绿色植物类型的脂肪酸ω6和ω3的均衡的脂质部分,符合粮食作物类型的脂肪酸ω6/绿色植物类型的脂肪酸ω3的比例=1:1±10%;
多不饱和脂肪酸和饱和脂肪酸之间均衡的脂质部分,符合多不饱和脂肪酸/饱和脂肪酸的比例=1:1±10%。
背景技术
这种蛋在文件EP 1282367中是已知的,该文件旨在获得一种具有均衡脂质分布的蛋,从而获得一种用于人类的健康食谱且对于动物而言可与大自然产生的产品相比拟的产品。
发明内容
根据本发明的蛋旨在相比于现有技术中的蛋具有改善的低胆固醇作用。
通过术语“改善的低胆固醇作用”,已知在本发明中存在在食用该蛋的人体内与血清胆固醇的显著降低有关的作用。
为此,本发明的特征在于,均衡的甘油三酯部分的sn-2位的脂肪酸ω6和ω3表现出的脂肪酸ω6/脂肪酸ω3的比例介于1:1±10%和1:1.2±10%之间。
在本发明的范围内,观察到均衡的甘油三酯部分的sn-2位的介于1:1±10%和1:1.2±10%之间的该脂肪酸ω6/脂肪酸ω3比例,对应于显著增加的甘油三酯部分的sn-2位的脂肪酸ω3的部分,从现有技术公开的蛋看来,尤其是从标准的蛋看来,并没有改变蛋的均衡脂质分布。
通过术语“显著增大的部分”,已知从本发明来说,相对于脂肪酸的总体重量,甘油三酯部分的sn-2位的脂肪酸ω3的部分相对于脂肪酸的总重量的至少1wt%,优选地对应于脂肪酸的总重量的介于2wt%和4wt%之间。
通过让禽类进食特定食物,主要是富含α亚麻酸(脂肪酸ω3)的食物,从而得到根据本发明的蛋的这种特定组成。
同样,通过将基于α亚麻酸的特殊食用组成加入禽类食物中,和/或通过选择由禽类品种和/或物种定义的家畜,所述家畜另外可按照基于目标食用组成的特别方法喂养,获得的蛋具有甘油三酯部分的sn-2位的脂肪酸ω3的增大的部分而保留了均衡脂质组成。
在此情况下,获得具有改善的低胆固醇效果的蛋在现有技术下无法达到,这是因为,一方面,文件EP 1282367指出禽类食用的大多数脂肪酸ω3倾向于处在蛋的甘油三酯的sn-1/3位,而最重要的脂肪酸处于甘油三酯的sn-2位,并且另一方面,与禽类的新陈代谢相关的自然过程的变化性,对于家畜的特殊种族分布来说,连同基于目标食用组成限定的进食方法,任何情况下都无法预见到,基于特殊进食,具有甘油三酯的sn-2位的脂肪酸ω3的改善分布的蛋能够通过自然手段产生。
因此,由于处于sn-2位的脂肪酸ω3的部分显著增大,根据本发明的蛋准许低胆固醇效果增强并且由此准许显著降低食用该蛋的人体内的胆固醇。
替代性地,根据本发明的蛋所具有的均衡的磷脂部分符合得自动物的脂肪酸ω6/得自动物的脂肪酸ω3的比例=1:3±10%。
有利地,根据本发明的蛋的绿色植物类型的脂肪酸ω3与得自动物的脂肪酸ω3是均衡的,符合绿色植物类型的脂肪酸ω3/得自动物的脂肪酸ω3的比例=5:1±10%。如有必要,根据本发明发的蛋包括的绿色植物类型的脂肪酸ω3的浓度介于每个蛋450mg和600mg之间。
尤其是,根据本发明的蛋具有的得自动物的脂肪酸ω3组成多于每个蛋90mg,并且该蛋的组成包括C20脂肪酸ω3和C22脂肪酸ω3,C20和C22脂肪酸优选地选自由二十碳五烯酸、二十二碳五烯酸以及二十二碳六烯酸组成的组。

根据本发明的蛋包括处于甘油三酯部分的sn-2位的脂肪酸ω3部分相对于脂肪酸的整体重量为大约4wt%,并且保留了粮食作物类型和绿色植物(ω6:ω3)类型的脂肪酸ω6和ω3的均衡脂质部分,该均衡脂质部分符合粮食作物的脂肪酸ω6/绿色植物的脂肪酸ω3的比例=1:1±10%,同样保留了多不饱和脂肪酸和饱和脂肪酸间均衡的脂质部分(P/S),符合多不饱和脂肪酸/饱和脂肪酸的比例=1:1±10%,因此确保了该蛋的低胆固醇作用,这完全是非常可观的。
标准蛋,即并非由根据本发明的家畜产生的,自身具有不均衡的比例ω6:ω3和P/S(约16和0.60),连同处于甘油三酯部分的sn-2位的脂肪酸ω3相对于脂肪酸的整体重量仅有0.21wt%。

Claims (8)
1.一种具有改善的低胆固醇效果的蛋,所述蛋来自家禽、尤其来自于产卵多的雌禽,具有:
粮食作物类型和绿色植物类型的脂肪酸ω6和ω3均衡的脂质部分,符合粮食作物类型的脂肪酸ω6/绿色植物类型的脂肪酸ω3的比例=1:1±10%;以及
多不饱和脂肪酸和饱和脂肪酸间均衡的脂质部分,符合多不饱和脂肪酸/饱和脂肪酸的比例=1:1±10%,
其特征在于,此外,所述蛋具有的均衡的甘油三酯部分的sn-2位的脂肪酸ω6和ω3,符合脂肪酸ω6/脂肪酸ω3的介于1:1±10%和1:1.2±10%之间的比例。
2.根据权利要求1所述的蛋,所述蛋的均衡的磷脂部分符合得自动物的脂肪酸ω6/得自动物的脂肪酸ω3的比例=1:3±10%。

8.一种食物组合物,包括根据权利要求1至7中任一项所述蛋的整体或者所述蛋的蛋黄作为食物成分,尤其为一种适用于人类食用的食物组合物。
