Compounds of the formula <IMAGE> in which R denotes an O-bonded mono- or dialkylphenol polyalkylene glycol ether radical, R1 denotes hydrogen or an alkyl radical optionally substituted by -OH and/or -X, R2 denotes an alkylene bridge member optionally carrying a hydroxyl group and X denotes an acid group, optionally in salt form, where the polyalkylene glycol ether radical contains at least 8 alkyleneoxy groups and the alkyleneoxy groups contain 2 - 3 carbon atoms, are useful surfactants. They are suitable for the dispersion of fats, in particular for the preparation of stable oiling agents or fat liquors and for defatting or desizing.
