Die bekannten Einrichtungen für die Zubereitung von Trinkkaffee, u. a. in Restaurationsbetrieben, arbeiten chargenweise. Auf eine Arbeitsphase folgt jeweils eine Phase, während welcher der Kaffeerückstand aus der Einrichtung entfern wird. In Grossrestaurationsbetrieben kommt etwa bei Banketten der Moment, in dem eine grosse Menge von Trinkkaffee in einem möglichst kurzen Zeitraum allen Gästen soll serviert werden können. Diesem stossweise anfallenden Bedarf sind die bestehenden Einrichtungen nicht gewachsen.
Man behilft sich dadurch dass man die grosse Menge zum voraus zubereitet und bis zum Zeitpunkt des Servierens warmhält. Dabei verliert aber der Trinkkaffee viel an Geschmack und Aroma.
Der Erfindung lag die Aufgabe zugrunde, eine Einrichtung für die Zubereitung von Trinkkaffee nach dem Filtrationsprinzip in Grossrestaurationsbetrieben zu schaffen, also eine Einrichtung, die imstande ist, eine grosse Menge von möglichst gutem Trinkkaffee nach einem kontinuierlichen Arbeitsprinzip in kurzer Zeit, dazuhin noch wirtschaftlich, zu produzieren.
Im Sinne der Lösung dieser Aufgabe wird erfindungsgemäss eine Einrichtung vorgeschlagen, die sich dadurch auszeichnet, dass sie nebst einem Separator, zu dem eine schnell rotierende, an ihrem einen Ende offene Zentrifugentrommel und ein in dieser koaxial angeordnetes Rückstandextraktionsorgan gehören, Mittel zur Zuführung von geröstetem und gemahlenem Kaffee und von heissem Wasser beim offenen Ende der Zentrifugentrommel aufweist.
Weitere Merkmale von Ausführungsformen der erfindungsgemässen Einrichtung ergeben sich aus den Unteransprüchen.
Die Erfindung wird nachfolgend anhand der beiliegenden Zeichnung beispielsweise erläutert. Es zeigen:
Fig. 1 einen Aufriss, grösstenteils im Schnitt nach einer Vertikalaxialebene, einer ersten Ausführungsform, und
Fig. 2 einen schematisierten Vertikalschnitt einer zweiten Ausführungsform.
Das in Fig. 1 dargestellte Ausführungsbeispiel weist ein Gehäuse 1 auf, dessen aus Spritzgussteilen bestehenden Teile la, lb, lc bei ld, le ineinandergeschraubt sind. Die äussere Mantelwand des Gehäuses 1 ist mit einer thermischen Isolierung 2 versehen. Auf der Deckwand des oberen Gehäuseteiles la ist mittels Schrauben 3 ein Support 4 befestigt, auf bzw. an dem eine elektromotorisch angetriebene Kaffeemühle 5 und ein Elektromotor 6 befestigt sind.
Kernstück der Einrichtung ist eine vertikalachsige, oben offene und grösstenteils zylindrische Zentrifugiertrommel 7, deren oberer Randteil 7a nach oben konisch konvergiert. In einem von der Deckwand des Gehäuseteiles la nach oben ragenden Ansatz laa ist ein durch den Motor 6 mittels eines Rundriemens 14 antreibbarer Drehteil 8 unverschiebbar gelagert, dessen obere Hälfte einen zuoberst trichterförmig erweiterten Zentralkanal 9 besitzt, an den sich unten Querkanäle 1C anschliessen, die nach aussen unten geneigt sind und in einen zwischen dem Ansatz laa und der unteren Hälfte des Drehteiles gelegenen Ringraum 11 einmünden.
In diesem arbeitet eine bei laufendem Motor 6 nach unten fördernde, als auf dem Drehteil 8 festsitzender Stab etwa quadratischen Querschnittes ausgebildete Förderschneckenrippe 12, die den gerösteten und in der Kaffeemühle 5 gemahlenen Kaffee zu einer zuunterst am Drehteil 9 befestigten Schleuderscheibe 13 fördert; der von dieser abgeschleuderte Kaffee wird vom Rand 7a der Zentrifugiertrommel 7 aufgefangen.
Innerhalb der Zentrifugiertrommel 7 ist dazu koaxial ein Rückstandsextraktionsorgan 15 angeordnet. Dieses ist als Förderschnecke ausgebildet und besteht im wesentlichen aus schraubenlinienförmig gewundenem Stab mit etwa rechteckförmigem Querschnitt, dessen grössere Seiten sich in Radialrichtung erstrecken; die Windungen dieses Stabes sitzen auf achsparallelen Stegen 16a, die nach oben ragend an dem scheibenförmigen Teil 16b eines Förderrotors 16 einstückig angesetzt sind. Dieser weist auch eine für den Durchlass von heissem Wasser dienende Hohlwelle 16c, 16d auf, von der sich ein mit radialen Wasseraustrittsöffnungen 17 versehener, an seinem oberen Ende geschlossener Abschnitt 16c etwa ebenso weit nach oben erstreckt wie die Stege 16a und der Förderschneckenstab 15.
Die Zentrifugiertrommel 7 sitzt mit ihrem unteren Rand auf einem mit Durchlassausnehmungen 18 für den Kaffeerückstand versehenen Rand eines flachen, scheibenförmigen Teiles 19b eines Tragrotors 19 fest, an welchem Teil 19b innerhalb der Ausnehmungen 18 ein nach unten divergierender Flansch 19c einstückig angesetzt ist, der an seiner Oberseite mit Schleuderschaufeln 19d versehen ist; der Kaffeerückstand wird so durch eine Öffnung 20 hindurch, welche in einem inneren Mantel lba des Gehäuseteiles 1b vorhanden ist, in einen Schacht befördert, der durch den inneren lba und den äusseren lbb Mantel des Gehäuseteiles 1b und durch zwei sich radial zwischen diesen Mänteln erstreckende Stege begrenzt ist, um schliesslich durch einen am Gehäuseteil 1b angesetzten Schnabel lbc herauszufallen.
Der Tragrotor 19 hat einen hohlwellenförmigen Teil 19e, auf welchem der Rotor 21 eines hochtourigen Elektromotors festsitzt. Dieser Rotor 21 ist mittels Wälzlagern 23, 24 drehbar und unverschiebbar in einem in den Innenmantel lba des Gehäuseteiles 1b eingeschobenen Motorstator 22 gelagert. Im hohlwellenförmigen Teil 19e ist mittels zweier Kugellager 25, 26 der untere Abschnitt 16d des hohlwellenförmigen Teils des Förderrotors 16 gelagert. Zuunterst ist an diesem Abschnitt 16d eine Scheibe 16e angesetzt und innenseitig ein dichter Anschluss 27 an einen am Gehäuseteil lc angesetzten Heisswasserzuleitungsstutzen lca mit eingebautem Mengenregulierorgan 28 vorhanden.
Durch eine Leitung 29 ist letzteres an einen thermostatisch oder pressostatisch gesteuerten Wassererhitzer 30 und eine Pumpe 31 angeschlossen.
Zwischen dem Gehäuseteil 1c und dem Motorstator 22 festgeklemmt befindet sich ein in den Innenmantel lba eingeschobenen, innerverzahnter Ring 32, der den Reaktionsring eines Planetenzahnradgetriebes bildet. Der Antriebsteil dieses Getriebes besteht aus einer aussenverzahnten Scheibe 16e, die am unteren Ende des hohlwellenförmigen Teiles 1 9e einstükkig angesetzt ist, somit zu dem durch den Motor 21, 22 hochtourig angetriebenen Zentrifugentrommel-Tragorgan 16 gehört, wogegen der mit vielfach niedrigerer Drehzahl angetriebene Teil dieses Getriebes aus der zum Rückstandförderrotor 16 gehörenden Scheibe 16e gehört, auf welcher die zugleich mit dem Reaktionsring 32 und mit der Scheibe 19e in Eingriff stehenden Planetenräder 33 gelagert sind.
Im Betrieb der eben beschriebenen Einrichtung gibt die Kaffeemühle 5 einen kontinuierlichen Strom von geröstetem und gemahlenem Kaffee an den Zentralkanal des Teiles 8 ab, der durch den Motor 6 mit vorbestimmter (möglicherweise aber innerhalb eines engen Bereichs regulierbaren) Drehzahl angetrieben wird, wodurch dieser Kaffee in wohldosierter Menge durch den Ringraum 11 hindurch weiterbefördert und durch die Scheibe 13 in den obersten Teil der Zentrifugiertrommel 7 abgegeben wird, die durch den Motor 21, 22 sehr hochtourig angetrieben wird.
Die mittels des Planetenradgetriebes 19e, 33, 32, 16e mit beispielsweise hundertfach untersetzter Drehzahl auch durch den Motor 21, 22 angetriebene Förderschnecke 15 erfasst den in den oberen Teil der Zentrifugiertrommel 7 gelangten Kaffee und fördert ihn in gleichmässig bleibender Menge entlang der Innenseite der Zentrifugiertrommel nach unten, wodurch sich an dieser Innenseite eine Schicht dieses Kaffees ergibt. Auf diese Schicht wird das heisse Wasser gespritzt, das durch die Löcher 17 hindurch austritt. Während der langsamen Wanderung der Schicht nach unten hat das Wasser Zeit, aus dem in der Schicht enthaltenen Kaffee die Aromastoffe zu entziehen.
Es entsteht so der gewünschte Trinkkaffee, der aus der Zentrifugentrommel 7 ausgeschleudert wird und sich in dem durch die Gehäuseteile la, lb begrenzten Ringraum 34 sammelt, bevor er durch die am Gehäuseteil la ausgebildete Tülle lab hindurch ausläuft. Die am unteren Ende der Zentrifugiertrommel 7 antreffende Schicht besteht nur noch aus Kaffeerückstand. Dieser wird durch die Förderschnecke 15 durch die Ausnehmungen 19a hindurch gedrängt, dann durch die Schleuderscheibe 19c und die zugehörigen Schleuderschaufeln 19d durch die Öffnung 20 hindurch in den zwischen den Mantelteilen lba, ibb gelegenen Schacht befördert, um durch den Kanalansatz lbc diesen zu verlassen.
Die pro Zeiteinheit zugeführte Heisswassermenge kann mittels des Regulierorgans 28 dosiert werden; die Temperatur dieses Wassers kann auch eingestellt werden. Diese beiden Einstellungen und jene der pro Zeiteinheit zugeführten Menge von gemahlenem Kaffee (je nachdem ob starker oder weniger starker Trinkkaffee produziert werden soll) genügen, bei einmal gehörig vorbestimmter und konstruktionsmässig festgelegter Vorschubgeschwindigkeit der Schicht pro Umdrehung der Siebtrommel, um die Lieferung von frisch zubereitetem Trinkkaffee der gewünschten Stärke zu gewährleisten.
In der Fig. 2 ist ein zweites Ausführungsbeispiel schematisiert und vereinfacht dargestellt.
Im mittleren Abschnitt eines Gehäuses 41 ist horizontalachsig eine zylindrische Zentrifugiertrommel 42 angeordnet, die am einen Ende offen und am anderen Ende mittels einer Scheibe 43 mit einer Hohlwelle 44 verbunden ist, die im Gehäuse 41 gelagert ist, und durch nicht gezeigte motorische Mittel hochtourig angetrieben wird.
An ihrem von der Scheibe 43 entfernten Ende besitzt die Hohlwelle 44 einen angebauten Zylinder 45, in welchem ein doppeltwirkender Hydraulikkolben 46 arbeitet, dessen Kolbenstange 47 in der Hohlwelle 44 abgedichtet und geführt und innerhalb der Zentrifugentrommel 42 fest mit einer Stösselscheibe 48 verbunden ist.
In der Zentrifugentrommel 42, und zwar etwa in deren Mitte, mündet das offene Ende des Gehäuses 49 einer Förderund Mischvorrichtung 50 aus. Dieses Gehäuse 49 hat ausserhalb des Gehäuses 41 einen Einlassstutzen 49a für gerösteten und gemahlenen Kaffee. Im Bereich dieses Stutzens 49a arbeitet eine zur Vertikalen geneigte Förder- und Mischschnecke 5', deren hohle Welle aussen an eine Zufuhrleitung 52 für heisses Wasser angeschlossen, an ihrem inneren Ende abgeschlossen, im Bereich der Förderrippe aber mit vielen feinen Wasserauslassöffnungen 53 versehen ist.
Im Betrieb dieser Einrichtung bildet sich in der Vorrichtung 50 ein breiartiges Gemisch aus gemahlenem Kaffee und heissem Wasser, welches Gemisch sich im Inneren der Zentrifugentrommel 42 rechts (Fig. 2) der Scheibe 48 als Kranz mit kegeliger Innenoberfläche aufbaut. Aus diesem Kranz wird der Trinkkaffee auszentrifugiert, der im Innenraum 54 des Gehäuses aufgefangen wird und bei 55 aus ihm abfliesst.
Dank der in Axialrichtung über einen kurzen Weg pulsierenden Bewegung der Scheibe 48 wird dafür gesorgt, dass am freien Ende der Zentrifugentrommel 42 fortlaufend Kaffeerückstand abgeschleudert wird. Dieser wird im Raum 56 gesammelt und tritt durch den Stutzen 57 desselben aus.
Auch in dieser Ausführung ist ein Organ (ähnlich 28) zur Verstellung der pro Zeiteinheit zugeführten Wassermenge und des Dosierungsverhältnisses gerösteter und gemahlener Kaffee zu Wasser vorgesehen.
The known facilities for the preparation of drinking coffee, u. a. in restoration companies, work in batches. The invention was based on the object of creating a device for the preparation of drinking coffee according to the filtration principle in large restaurant establishments, i.e. a device which is capable of producing a large amount of the best possible drinking coffee according to a continuous working principle in a short time and economically to produce.
In terms of the solution to this problem, a device is proposed according to the invention which is characterized in that, in addition to a separator, which includes a rapidly rotating centrifuge drum open at one end and a residue extraction member arranged coaxially in this, means for supplying roasted and having ground coffee and hot water at the open end of the centrifuge drum.

The exemplary embodiment shown in FIG. 1 has a housing 1, the parts la, lb, lc of which are made up of injection molded parts and are screwed into one another at ld, le. The outer jacket wall of the housing 1 is provided with thermal insulation 2. On the top wall of the upper housing part la, a support 4 is fastened by means of screws 3, on or to which a coffee grinder 5 driven by an electric motor and an electric motor 6 are fastened.
The core of the device is a centrifugation drum 7 with vertical axes, open at the top and largely cylindrical, the upper edge part 7a of which converges conically upwards. In one of the top wall of the housing part la upwardly protruding approach laa by the motor 6 by means of a round belt 14 drivable rotary part 8 is immovably mounted, the upper half of which has a funnel-shaped extended central channel 9 at the top, to which transverse channels 1C connect below are inclined downward on the outside and open into an annular space 11 located between the approach laa and the lower half of the rotating part.
In this works a running motor 6 downwards, as a fixed rod on the rotating part 8, formed with an approximately square cross-section, which conveys the roasted and ground coffee in the coffee grinder 5 to a centrifugal disk 13 attached to the bottom of the rotating part 9; the coffee thrown off by this is caught by the edge 7a of the centrifugation drum 7.
For this purpose, a residue extraction element 15 is arranged coaxially within the centrifugation drum 7. This is designed as a screw conveyor and consists essentially of a helically wound rod with an approximately rectangular cross-section, the larger sides of which extend in the radial direction; the turns of this rod sit on axially parallel webs 16a, which are attached in one piece to the disk-shaped part 16b of a conveyor rotor 16, projecting upwards. This also has a hollow shaft 16c, 16d serving for the passage of hot water, from which a section 16c provided with radial water outlet openings 17 and closed at its upper end extends approximately as far up as the webs 16a and the screw conveyor rod 15.
The bottom edge of the centrifugation drum 7 sits firmly on an edge of a flat, disk-shaped part 19b of a support rotor 19, which is provided with passage recesses 18 for the coffee residue, on which part 19b within the recesses 18 a downwardly diverging flange 19c is attached in one piece, which is attached to its Top is provided with centrifugal vanes 19d; the coffee residue is thus conveyed through an opening 20, which is present in an inner jacket 1ba of the housing part 1b, into a shaft which passes through the inner 1ba and the outer 1bb jacket of the housing part 1b and through two webs extending radially between these jackets is limited to finally fall out through a beak lbc attached to the housing part 1b.
The support rotor 19 has a hollow-wave-shaped part 19e on which the rotor 21 of a high-speed electric motor is fixed. This rotor 21 is rotatably and immovably mounted by means of roller bearings 23, 24 in a motor stator 22 pushed into the inner casing 1ba of the housing part 1b. In the hollow-wave-shaped part 19e, the lower section 16d of the hollow-wave-shaped part of the conveyor rotor 16 is supported by means of two ball bearings 25, 26. At the bottom of this section 16d is a disk 16e and on the inside there is a tight connection 27 to a hot water feed pipe lca with a built-in volume control element 28 that is attached to the housing part lc.
The latter is connected through a line 29 to a thermostatically or pressostatically controlled water heater 30 and a pump 31.
Clamped between the housing part 1c and the motor stator 22 is an internally toothed ring 32 which is pushed into the inner casing 1ba and which forms the reaction ring of a planetary gear transmission. The drive part of this gear consists of an externally toothed disk 16e, which is attached in one piece to the lower end of the hollow shaft-shaped part 1 9e, thus belonging to the centrifuge drum support member 16 driven at high speed by the motor 21, 22, whereas the part driven at a much lower speed belongs to this Gear from the disc 16e belonging to the residue conveying rotor 16, on which the planetary gears 33, which are simultaneously in engagement with the reaction ring 32 and with the disc 19e, are mounted.
In operation of the device just described, the coffee grinder 5 emits a continuous flow of roasted and ground coffee to the central channel of the part 8, which is driven by the motor 6 at a predetermined (but possibly within a narrow range adjustable) speed, whereby this coffee in A well-dosed amount is conveyed on through the annular space 11 and discharged through the disc 13 into the uppermost part of the centrifugation drum 7, which is driven very high-speed by the motor 21, 22.
The screw conveyor 15, which is also driven by the motor 21, 22 by means of the planetary gear 19e, 33, 32, 16e with, for example, a hundred times reduced speed, detects the coffee that has reached the upper part of the centrifuging drum 7 and conveys it in a constant amount along the inside of the centrifuging drum below, resulting in a layer of this coffee on this inside. The hot water that emerges through the holes 17 is sprayed onto this layer. During the slow downward migration of the layer, the water has time to extract the aromas from the coffee contained in the layer.
The result is the desired drinking coffee, which is thrown out of the centrifuge drum 7 and collects in the annular space 34 bounded by the housing parts la, lb before it runs out through the spout lab formed on the housing part la. The layer at the lower end of the centrifugation drum 7 consists only of coffee residue. This is pushed by the screw conveyor 15 through the recesses 19a, then conveyed by the centrifugal disk 19c and the associated centrifugal blades 19d through the opening 20 into the shaft located between the casing parts lba, ibb, in order to leave it through the channel attachment lbc.
The amount of hot water supplied per unit of time can be dosed by means of the regulating member 28; the temperature of this water can also be adjusted. These two settings and those of the amount of ground coffee supplied per unit of time (depending on whether strong or less strong drinking coffee is to be produced) are sufficient, with a properly predetermined and structurally determined feed speed of the layer per revolution of the sieve drum, to deliver freshly prepared drinking coffee to ensure the desired strength.
In Fig. 2, a second embodiment is shown schematically and simplified.
In the middle section of a housing 41, a cylindrical centrifugation drum 42 is arranged with a horizontal axis, which is open at one end and connected at the other end by means of a disk 43 to a hollow shaft 44 which is mounted in the housing 41 and is driven at high speed by motor means not shown .
At its end remote from the disk 43, the hollow shaft 44 has a built-on cylinder 45 in which a double-acting hydraulic piston 46 operates, the piston rod 47 of which is sealed and guided in the hollow shaft 44 and firmly connected to a ram disk 48 within the centrifuge drum 42.
The open end of the housing 49 of a conveying and mixing device 50 discharges into the centrifuge drum 42, to be precise approximately in the middle thereof. Outside the housing 41, this housing 49 has an inlet connection 49a for roasted and ground coffee. In the area of this connection piece 49a, a conveyor and mixing screw 5 'inclined to the vertical works, the hollow shaft of which is connected on the outside to a supply line 52 for hot water, closed at its inner end, but is provided with many fine water outlet openings 53 in the area of the conveyor rib.
When this device is in operation, a pulpy mixture of ground coffee and hot water forms in the device 50, which mixture builds up inside the centrifuge drum 42 on the right (FIG. 2) of the disk 48 as a ring with a conical inner surface. The drinking coffee, which is collected in the interior 54 of the housing and flows out of it at 55, is centrifuged out of this wreath.
Thanks to the movement of the disk 48 pulsating in the axial direction over a short path, it is ensured that coffee residue is continuously thrown off at the free end of the centrifuge drum 42. This is collected in space 56 and exits through the nozzle 57 of the same.
In this embodiment, too, an element (similar to 28) is provided for adjusting the amount of water supplied per unit of time and the dosage ratio of roasted and ground coffee to water.
