Schnellpökelverfahren. Das verbreitetste Schnellpökelverfahren ist das Spritzverfahren. Es besteht darin, dass die Kochsalzlake unter Druck Injektions nadeln zugeführt wird, welche bei der Mus- kelspritzung in das Muskelgewebe eingesto chen und bei der Aderspritzung in ein Hauptblutgefäss eingeführt werden. So be handelte Fleischstücke müssen aber bis zur restlosen Durchsalzung noch einige Tage nachgesalzen werden, bis eine gleichmässige und völlige Durchsalzung des Fleisches ein tritt.
Die Notwendigkeit des Nachsalzens von gespritztem Fleisch ergibt sieh aus dem Um stand, dass bei der Muskelspritzung die ein gespritzte Lake zuerst an den Stichstellen der Injektionsnadeln zusammengeballt verbleibt und die gleichmässige Verteilung erst nach zwei bis sechs Tagen eintritt. Ähnlich liegen auch die Verhältnisse bei der Aderspritzung, wo unmittelbar nach der Spritzung wohl das Adersystem mit Lake gefüllt ist, die Durch- salzung der Fleischzellen aber erst nach bis zu acht Tagen eintritt.
Es hat sieh nun gezeigt, dass eine beson ders schnelle Verteilung der in das Fleisch eingespritzten Lake zu erzielen ist, wenn das gespritzte Fleisch, in einem Lakebad schwim mend oder untergetaucht, Schallschwin gungen aasgesetzt wird.
Die Schallschwingungen werden beispiels weise so erzeugt, dass ein Elektromagnet einen Anker anzieht, mit welchem eine in das Lakebad tauchende, ebene oder linsenförmig gewölbte Platte oder Membran gekuppelt ist. Wird der Elektromagnet durch Wechselstrom erregt, so wird entsprechend der Wechsel stromfrequenz der Anker bei jedem Span nungsmaximum angezogen und bei jedem Nullwert der Spannung wieder losgelassen. Die mit dem Anker gekuppelte Platte oder Membran folgt der Ankerbewegung, gerät in Schwingungen und teilt diese direkt dem Lakebad mit.
Da sich in dem so beschallten Lakebad das vorher gespritzte Fleisch befindet, wirken auch die Schallschwingungen auf das Fleisch, dieses bei jedem Schwingungsmaximum zu sammendrückend, bei jedem Schwingungs minimum loslassend. Es kommt eine solche Behandlung einer Massage gleich, welche die Lakeanhäufung bereits innerhalb 15 Minuten Einwirkung im Fleisch verteilt und eine intensive gleichmässige Durchsalzung bewirkt, weiche die Haltbarkeit des Fleisches gewähr leistet.
Das die Schallschwingungen erzeugende Gerät., der Schallsender, wird zweckmässig am Boden eines Fasses oder Bottichs auf gestellt, welches mit einer ausreichenden Menge Lake gefüllt ist. Steht z-Lun Betrieb des Schallsenders der übliche Wechselstrom von 50 Hertz Frequenz zur Verfügung, so ergibt sich eine Schallfrequenz von 100 Hertz.
Es hat sich gezeigt, dass die anzuwendende Schallfrequenz in sehr weiten Grenzen bis zu unhörbaren Schwingungen variieren kann, ohne das Ergebnis zu beeinträchtigen. Somit kommt auch die Verwendung eines ge bräuchlichen Ultraschallgerätes in Betracht.
Um die durch die Schallschwingungen im Lakebad auf das Fleisch entstehende Massage- wirkung gleichmässig und allseitig einwirken zu lassen, ist es zweckmässig, das Fleisch wäh rend der Besehallung zu wenden, was nicht nur von Hand sondern auch mechanisch durch ein Rührwerk oder eine Flüssigkeits- strömung erfolgen kann.
Im allgemeinen reicht eine Beschallung von 15 Minuten Dauer aus.
Rapid curing process. The most common quick curing process is the spraying process. It consists in the fact that the brine is fed under pressure to injection needles which are inserted into the muscle tissue during the muscle injection and inserted into a main blood vessel during the vein injection. The sound vibrations are generated, for example, in such a way that an electromagnet attracts an armature to which a flat or lens-shaped curved plate or membrane is coupled that is immersed in the brine bath. If the electromagnet is excited by alternating current, the armature is attracted at each voltage maximum according to the alternating current frequency and released again at each zero value of the voltage. The plate or membrane coupled to the anchor follows the movement of the anchor, starts to vibrate and communicates this directly to the lake pool.
Since the previously injected meat is in the sonicated brine bath, the sound vibrations also have an effect on the meat, squeezing it at every vibration maximum, letting it go at every vibration minimum. Such a treatment is equivalent to a massage, which distributes the brine accumulation in the meat within 15 minutes and causes an intensive even salting, which ensures the durability of the meat.
The device generating the sound vibrations, the sound transmitter, is expediently placed on the bottom of a barrel or vat which is filled with a sufficient amount of brine. If the usual alternating current of 50 Hertz frequency is available during operation of the sound transmitter, the sound frequency is 100 Hertz.
It has been shown that the sound frequency to be used can vary within very wide limits up to inaudible vibrations without affecting the result. The use of a conventional ultrasound device can therefore also be considered.
In order to allow the massage effect created by the sound vibrations in the brine bath on the meat evenly and on all sides, it is advisable to turn the meat during the filling, which is not only done by hand but also mechanically using a stirrer or a flow of liquid can be done.
In general, a sound exposure of 15 minutes is sufficient.
