Description

  

  Procédé de fabrication d'un extrait aromatique de café.    On connaît de nombreux procédés de  fabrication d'extraits     végétaiLx    aromatiques,  entièrement     solubles    dans l'eau chaude.  



  Par exemple, le procédé décrit dans le bre  vet N  262262     consiste    à traiter une plante ou  une partie de plante, de manière à en séparer,  d'une part, les éléments volatils, aromatiques  et, d'autre part, sous forme de solution  aqueuse, les éléments solubles dans l'eau et  non volatils, puis à concentrer cette solution  aqueuse et à réunir le     coneentrat    ainsi obtenu  avec une partie au moins des éléments volatils       aromatiques    séparés d'autre part..  



  La présente invention concerne un pro  cédé de fabrication d'un extrait aromatique  de café, suivant. lequel on traite du café tor  réfié avec de l'alcool, de manière à en extraire  les éléments volatils, puis avec de l'eau chaude  ou de la vapeur d'eau, pour en extraire les  éléments solubles dans l'eau, on concentre le  liquide provenant de     l'extraction    aqueuse jus  qu'à obtention d'une poudre, on     soumet    la  solution alcoolique à un refroidissement. pour  précipiter les corps     gras,    que l'on élimine,  puis à une distillation     fractionnée,    on réunit.

  En vue d'obtenir un mélange d'aspect sec,  de préférence pulvérulent, on peut lui adjoin  dre un produit tel que par exemple le lactose,  la     sorbite,    la mannite, etc., en quantité juste         suffisante    pour que le produit final conserve  un aspect sec.  



  Le mélange final obtenu     petit    être mis  sous forme de poudre, de tablettes, de gra  nulés ou même de pâte, d'un usage pratique  et facile.  



  Voici un exemple d'exécution du procédé  selon l'invention  500     g    de café fraîchement torréfié et  moulu sont traités dans un     soxhlet    avec un  litre d'alcool à<B>900.</B> Après l'extraction, l'al  cool retenu par le café est chassé par     chauf-          fagedans    un courant de C02 ou dans le vide  et condensé. Le  café ainsi traité est ensuite soumis à une  extraction à l'eau bouillante, puis le liquide  aqueux obtenu est,     :séché    Jusqu'à obtention  d'une poudre. On mélange cette poudre avec  les têtes obtenues ci-dessus et on sèche à basse  température.
