Description

  

  Verfahren zur Herstellung einer Polierlösung für Reis.         Es    ist bekannt, dass dem für Nahrungs  zwecke verwendeten     Reis    ein sehr wertvoller       Bestandteil,    das     antineuritische    Vitamin,  durch den Schäl- und     Entkeimungsprozess    ent  zogen wird. Anderseits ist     dier    nicht geschälte  und nicht entkeimte, aber in bezug auf den  Vitamingehalt noch vollwertige     Reis    be  schränkt haltbar.     Ausserdem    ist er infolge des  unansehnlichen Anblicks beim Verbraucher  nicht     beliebt.     



  Gegenstand des vorliegenden     Patentes    ist  ein Verfahren zur Herstellung     einer    Polier  lösung für Reis, durch welche wasserlösliche  Vitamine     dem        geschälten,    entkeimten Reis  mit einer     allein        Anforderungen    entsprechenden       Haftfestigkeit    und Haltbarkeit zugeführt       werden    können und welches dadurch gekenn  zeichnet ist,     dass    die Vitamine in einer Lösung  von     Glukose    und     Dextrin    gelöst werden.

   Man  kann auch zunächst eine wässerige Lösung  der Vitamine     herstellen    und diese mit der       G1        iikose-Dextrinlös@un,g    vermischen.    <I>Beispiel</I>     r:       1000 cm'     Gluko        te-Dextrinlösung    vom spe  zifischen     Gewicht    1,236 = 28      Baums    wer  den in einen     2-Literrundkolben    gegeben und       hierauf    1,200 g Vitamin     B1        (Aneurin)    zuge  setzt.

   Bis     zur        vollständigen    Lösung     wird    kräf  tig     umgerührt,    eventuell das     Gemisch    leicht       erwärmt.        Diese        Lösung    kann sofort nach     der     Herstellung zum Polieren von 200 kg ge  schältem Reis verwendet werden, indem man  sie dem im Polierkessel befindlichen und  energisch gerührten Reis im Verlauf von  etwa 8 Minuten     zutropfen        lässt.            Beispiel   <I>2:

UNTERAN SPRUCH Verfahren nach Patentituspruch, dadurch gekennzeichnet, dass die Vitamine in Nasser döst und diese Lösung einer Lösung von Glukose und Dextrin zugemischt wird.
