Verfahren zum Aufbrechen des 3Taischekuehens bei der sogenannten geschlossenen Rotweingärung und Einrichtung zur Durchführung dieses Verfahrens. Bei der Rotweingärung bildet sich ati der Oberfläche ein harter, zusammenhängender Maischekuchen, was zur Folge hat, dass die insbesondere in den Traubenhäuten befindli chen Farb- und Aromastoffe nur unvollkom men in die Maischeflüssigkeit eingehen.
Besonders in Weingegenden, wo die Trau ben einen gewissen Mangel an diesen Stoffen aufweisen, besteht die Notwendigkeit, für eine ständige und möglichst innige Vermi schung der festen Bestandteile, insbesondere der Traubenhäute, mit der Maischeflüssig- keit zu sorgen. Zur Erreichung dieses Ziels wurden schon die verschiedensten Versuche unternommen, ohne dass es bisher gelungen wäre, ein auch nur einigermassen befriedigen des Ergebnis zu erzielen.
Das einfachste bekannt gewordene Ver fahren besteht darin, den Maischekuchen von der Oberfläche her auf mechanischem Wege mittels Stampfern oder dergleichen zu zer- brechen. Abgesehen davon, dass dieses Ver fahren grossen Kraftaufwand erfordert, ist- es bei grossen Bottichen nicht ganz ungefähr lich, weil der feste Maischekuchen bisweilen bei entsprechend hohem Pressdruck unver mittelt durchbricht und weil die ausströ mende Kohlensäure leicht zu einer Betäu bung der Arbeiter führen kann.
Im übrigen wird der Maischekuchen mit diesem Verfah ren lediglich in einzelne grosse Stücke zer teilt, die, ähnlich wie grosse Eisblöcke, nahe zu umerteilt wieder an die Oberfläche kom men.
Bei der weiterhin versuchten Anwendung von elektrischen Rührwerken mit Rührpro- geller ist ein verhältnismässig stark dimen sionierter und dementsprechend schwerer Motor notwendig, da die Propellerschraube sich sonst in dem festen Maischekuchen festfrisst. Wenn sie schliesslich den Maische kuchen durchdrungen hat, erfolgt wohl ein Umrühren der Maische; der Maischekuchen jedoch wird durch die Flüssigkeitswirbel nicht abgebaut.
Schliesslich hat man auch schon versucht, durch Aufspritzen eines kräftigen Strahls der Maischeflüssigkeit den Maischekuchen zu zerteilen. Auch dieses Verfahren hat zu kei nem Erfolg geführt, ganz abgesehen davon, dass hierbei in unerwünschter Weise Luft in die Maische gelangt.
Alle diese bekannten Verfahren setzen einen offenen Gärbottich voraus und erfor dern den ständigen Einsatz von mehreren Arbeitern. Sie sind überhaupt nicht anwend bar bei geschlossenen Gärbottichen, wie sie insbesondere zur Erhaltung der Aromastoffe notwendig sind, ganz abgesehen davon, dass es von Vorteil ist, zwecks Einsparung von Baukosten immer mehrere Gärbottiche über einander anzuordnen.
Auf Grund längerer Versuche ist die über raschende Tatsache gefunden worden, dass der Maischekuchen mit verhältnismässig gerin gem Kraftaufwand ohne direkte Einwirkung von mechanischen Hilfsmitteln in einem ge schlossenen Gärbottich aufgebrochen, voll ständig zerteilt und mit der Maiseheflüssig- keit vermischt werden kann, wenn in die unterhalb des Maischekuchens befindliche Maischeflüssigkeit ein inertes Gas, insbeson dere Kohlensäure,
eingepumpt wird. Die unten in die Maischeflüssigkeit mit entspre chendem Druck eingepumpte Kohlensäure dringt in die zwischen den Traubenhäuten des Maischekuchens befindlichen. Hohlräume ein und bewirkt ein Zerfallen des Maische kuchens, der nunmehr - in seine Bestand- teile aufgelöst - in der Maischeflüssigkeit herumgewirbelt wird.
Gegenstand vorliegender Erfindung ist. ein Verfahren zum Aufbrechen des Maische kuchens bei der sogenannten geschlossenen Rotweingärung in geschlossenen Gärbot tichen durch unterhalb des Maischekuchens in die Maischeflüssigkeit eingeführte Gase,
gemäss welchem die sich oberhalb der Maische im Gärbottich ansammelnde Gärkohlensäure m einem Kreisprozess immer wieder in die Maischeflüssigkeit eingeführt wird. Mit Vorteil erfolgt die Einführung der Gärkohlensäure in die Maiseheflüssigkeit am oder nahe am Boden des Gärbottiohs.
In der Zeichnung ist eine zur Durchfüh- rung des Verfahrens gemäss der rdung dienende Anordnung in beispielsweiser'ps- führung schematisch im Schnitt dargestelit: Der vorzugsweise quaderförmige Gärbot tich 1 ist durch den Deckel 2 abgedeckt.
Am obern Teil des Gärbottiche ist das mit der Aussenluft kommunizierende Entlüftungsrohr 3 angeordnet, durch welches die Überschüs- sige Gärkohlensäure entweichen kann.
Neben dem Gärbottich 1 befindet sich die zweek- mässigerweise als Zentrifugalpumpe ausgebil dete Pumpe 5, deren Ansaugrohr 4 im obern Teil des Gärbottichs 1 unterhalb des Dek- kels 2 endet, während das Druckrohr 6i zum Boden des Gärbottichs führt.
