Verfahren zum Imprägnieren von nach bekannten Verfahren entcoffeinierten Rohkaffee bohnen für die Herstellung coffeinfreien bezw. coffeinarmen ldaffees. Die Erfindung betrifft ein Verfahren zur Herstellung von höchstens geringe Men gen Coffein enthaltendem Käffee, welches dadurch gekennzeichnet ist,
dass durch Ex traktion entcoffeinierte Rohkaffeebohnen mit einer höchstens geringe Mengen Coffein ent haltenden Kaffeextraktlösung imprägniert werden, welche bei der Extraktion von Roh kaffeebohnen gewonnenen, höchstens geringe Mengen Coffein enthaltenden Extrakt ent hält und einen höheren Gehalt an im Kaffee extrakt vorkommenden Stoffen aufweist, als den Rohkaffeebohnen bei der Extraktion ent zogen wurde.
Es ist bereits bekannt, entcoffeinierte Rohkaffeebohnen mit dem bei der Entcof- feinierung gewonnenen Extrakte zu dem Zwecke zu imprägnieren, um dem Kaffee die bei der Entcoffeinierung entzogenen, für den Geschmack und das Aroma wertvollen Stoffe wieder zuzuführen. Die Imprägnierung soll hierbei in der Weise erfolgen, dass man die Bohnen mit dem Extrakte versetzt und ihn in die Zellen der Bohnen diffundieren lässt.
Es ist klar, dass hierbei die Bohnen nur so viel Extraktstoffe im besten Falle aufneh men können, dass ein Gleichgewicht des Ge haltes in den Bohnen und in der sie umge benden Imprägnierungsflüssigkeit eintritt. Hiernach bleibt ein erheblicher Rest an E1 traktstoffen von der Wiedereinführung in die entcoffeinierten Bohnen ausgeschlossen, so dass diese auch nie im Geschmack und Aroma, einen unbehandelten Kaffee erreichen kön nen.
Nach dem Verfahren der Erfindung wird der Idealzustand, das heisst die Rückführung einer Menge von Extraktstoffen. die der Menge in unbehandelten Bohnen vollkommen entspricht, dadurch erreicht, dass zur Im prägnierung der Bohnen nicht ausschliesslich die den Bohnen entzogene Extraktmenge oder eine ihr entsprechende verwendet wird, sondern neben dieser und mit ihr zusammen ein Stammextrakt von echter oder künstlicher Rohkaffeextraktlösung, so dass stets die Im prägnierung mit einer Flüssigkeit bewirkt wird, die erheblich grössere Mengen an Ex traktstoffen enthält, als der Menge ent spricht, die aus den zu imprägnierenden Roh bohnen erhalten wurde.
Zu diesem Zwecke ist es erforderlich, bei Eröffnung des Be triebes einmalig sich diesem Stammextrakt zu verschaffen, bezw. selbst herzustellen, um diesen alsdann laufend zusammen mit dem aus den Bohnen jeweilig erhaltenen oder ihm in der Menge entsprechenden Extrakt zur Imprägnierung mit zu verwenden, indem der bei der Imprägnierung zurückbleibende Teil der Flüssigkeit bei der Imprägnierung des nächsten Postens entcoffeinierten Kaffees als Stammextrakt dient. Bei der praktischen Ausführung des Verfahrens wird man natür lich kleine sich ergebende Verluste von Zeit ziz Zeit durch Beschaffung einer entsprechen den Menge neuen Stammextraktes zu erset zen haben.
Das Verfahren kann gleichzeitig im Kreislauf ausgeführt werden und soll anhand der schematischen Zeichnung in einem Aus führungsbeispiel besprochen werden.
a ist eine feststehende, schrägliegende und heizbare Trommel mit im Innern drehbar an geordneter Siebtrommel b. c ist der Eintrag und d der Austrag für das zu behandelnde Gut. Die Trommel ist durch eine Leitung e mit dem Verdampfer f verbunden, der seiner seits durch die Leitung g an den Extrakteur h angeschlossen ist. Mittelst des Hahnes i kann das im allgemeinen schwerere orga nische Lösungsmittel (zum Beispiel Chloro form) -durch die Leitung k abgelassen und die wässerige Extraktlösung durch die Lei tung l nach dem weiteren Verdampfer in. ge schickt werden.
Dieser ist durch die Leitung n an die Trommel angeschlossen.
2000 kg Rohkaffeebohnen werden bei spielsweise in die Siebtrommel eingebracht, in dieser mit Wasser übergossen und etwa. drei Stunden bei zirka 90 C in der in Dre hung versetzten Siebtrommel extrahiert. Die entstandene Extraktlösung wird hierauf durch die Leitung e. nach dem Verdampfer f abgelassen. Hierauf werden die Bohnen mit L'assdampf nachbehandelt, bis dieselben prak tisch völlig ausgelaugt sind, wobei die Ver bindungsleitung e zwischen der Trommel und dem Verdampfer f für den Ablauf des sich bildenden Kondensates offen gehalten wird.
Nach zirka 11/12 stündiger Ausdämpfung wird die Leitung e. geschlossen und im Verdampfer f die Flüssigkeit bis zu einer bestimmten Konzentration eingeengt. Sodann wird die Lösung durch die Leitung g nach dem Ex- trakteur li. geschickt, wo sie durch organische Lösungsmittel, insbesondere Chloroform, Te- trachlorkohlenstoff usw. vom Coffein be freit wird.
Hierauf wird der Hahn i. umge stellt und die wässerige Extraktflüssigkeit durch die Leitung l nach dem Verdampfer in befördert, in welchen vorher bei der erst maligen Inbetriebnahme der Anlage der Stammextrakt eingefüllt worden ist. Die ver einigte Flüssigkeit wird alsdann zur Impräg nierung der entcoffeinierten Bohnen durch die Leitung 3c in die Trommel abgelassen.
Nach erfolgter Imprägnierung, die bei etwa 90 C drei Stunden in Anspruch nimmt, durchläuft der nicht verbrauchte Extrakt wieder die ganze Apparatur und sammelt sich im Behälter in als Stammextrakt, um mit dem bei der Entcoffeinierung eines neuen Postens Rohkaffee gewonnenen caffeinfreien Ex trakte zusammen zur weiteren Imprägnierung verwendet zu werden.
Die Imprägnierung der entcoffeinierten Bohnen wird im ständigen Betriebe zur Er sparnis von Zeitverlusten selbstverständlich stets sofort nach beendeter Auslaugung und nach Abfluss des Kondensates einsetzen, so dass das ganze Verfahren sich ohne Unter brechung im Kreislauf abspielt, wobei zur erstmaligen Imprägnierung zusammen mit dem Stammextrakt eine der zu behandelnden Bohnenmenge entsprechende coffeinfreie Kaffeextrakte verwendet wird.
In der Folge wird als solche jedesmal der bei der Ent- coffeinierung eines Postens Rohkaffee ge wonnene Extrakt zusammen mit dem bei der Imprägnierung eines vorhergehenden Postens zurückgewonnenen Stammextrakt zur Im prägnierung des in Behandlung befindlichen Rohkaffees benutzt.
Soll. an Stelle echten Rohkaffeextraktes ein künstlicher Rohkaffeextrakt verwendet werden, so kann als solcher beispielsweise eine Lösung von 45 Teilen Zucker, 15 Teilen Gerbsäure, 2 Teilen doppelkohlensaurem Na tron und 38 Teilen Wasser oder ein 60 % iger wässeriger Feigenextrakt benutzt werden.
