Abstract
Des fruits et les légumes sont imprégnés de fluides d'imprégnation d'acide ascorbique pendant un processus de congélation isochore. Les fluides d'imprégnation d'acide ascorbique sont imprégnés dans les pores vides de fruits et de légumes, sans destruction du tissu cellulaire. L'infusion d'acide ascorbique peut empêcher le brunissement des fruits et des produits végétaux, augmenter la teneur en vitamine C des produits, et inhiber la croissance microbienne.
