Abstract

Agents d'inhibition de la croissance des cristaux de la glace et procédé de préparation d'un extrait de ces agents dans lequel, on extrait le sang de Zoarces viviparus, on le refroidit, on recueille le surnageant constituant le sérum de Zoarces viviparus contenant les agents d'inhibition de la croissance des cristaux de la glace, puis l'on congèle le surnageant. La présente invention concerne également un procédé d'utilisation de ces agents pour la fabrication d'un produit alimentaire.
