Abstract

ABSTRACT OF THE DISCLOSURE
A food product such as a bacon analogue or the like is extruded into a pan or tray and a lid or cover is then engaged upon the tray to enclose the product for smoking, cooking and the like. The tray is provided with a downwardly curved longitudinal edge on one side edge and an upturned angulated edge on the opposite side edge. The cover is provided with an upturned curved longitudinal edge on one side edge engaging the upturned edge of the pan and a down-turned angulated edge on the other side edge engaging the downturned edge of the pan. This permits the closed pan to be suspended vertically by the engage-ment of the upturned edges of the pan and cover with a horizontal bar on a hanger on the conveyor trans-porting the pan through the smoking or cooking pro-cess. Further pans and covers may be suspended from the first pan by engagement of the upturned edges of the subsequent pan with the downturned edge of the upper pan. The engagement of the cover with the pan is furthered by the weight of the pan being sus-pended vertically as aforesaid.

Figure 9 shows schematically a portion of a conveyor collectively designated 34 including han-gers 35 normally provided with hooks 36 upon which product is suspended.

After processing by passing through the smokehouse or cooking area, the trays and covsrs together with the product therein may either be air cooled or brine chilled as desired, Brine chilling can be used because of the close sealing relationship of the cover with the tray so that brine does not en-ter and spoil or contaminate the contents, - , Once chilled, the cover is easily removed ; by swinging the cover sideways relative to the tray in the direction of arrow 38 (see Figure 1)~ If any --slight product leakage has caused the cover to be-. come adhered to the tray, reference should be made to the cut-away portion 39 shown in Figure 1 which ` is overlapped by a corner 40 of the cover shown in phantom in Figure 1. It should be stressed that the configuration of the cover engaging side edges of the tray and the side wall engaging edges of the cover permits a wedg-ing and sealing engagement between the cover and the tray when hung vertically as shown in Figure 9.
' .,,, - , ', Furthermore, it is desirable and preferable that both the tray 10 and cover 11 be made from qtain- -less steel for ease of cleaning and elimination of corrosion or any interaction between the food product -s and the tray and cover.

Claims

WHAT I CLAIM AS MY INVENTION IS:
(1) A product processing pan comprising in combination a base and including at least a pair of spaced and parallel upstanding side walls one on each opposite side edge of said base, a detachable cover for said pan, said cover including a planar main panel covering the open upper side of said pan when installed thereon, cover enga-ging means formed on said side walls of said pan, pan side wall engaging means formed on each longitudinal side edge of said main panel of said cover, said means on said cover co-operatively engaging said means on said pan to detachably secure said cover in substantially sealing relationship upon said pan, said cover engaging means on one of said side walls of said pan comprising an upwardly curved longitudinally extending portion formed on one side wall, said portion curving through approximately 180°.

(2) The invention according to Claim 1 which includes at least one upstanding end wall on one end edge of said base, and at least one depending end wall on the end of said main panel of said cover opposite to the wall upstanding from the base of said pan.

(3) The invention according to Claim 1 in which said cover engaging means comprises a first longitudinally extending flange extending at right angles from the other side wall of said pan, a second longitudinally extending flange depending downwardly and inwardly from the outer edge of said first flange and a third longitudinally extending flange extending inwardly from the lower edge of said second flange and lying substantially spaced and parallel to said first flange.

(4) The invention according to Claim 2 in which said cover engaging means comprises a first longitudinally extending flange extending at right angles from the other side wall of said pan, a second longitudinally extending flange depending downwardly and inwardly from the outer edge of said first flange and a third longitudinally extending flange extending inwardly from the lower edge of said second flange and lying substantially spaced and parallel to said first flange.

(5) The invention according to Claim 1 in which said pan side engaging means on one of said side edges of said cover comprises a longitudinally extending inwardly and downwardly extending flange formed on said one side edge and a further longitudinally extending flange extend-ing inwardly from the edge of said downwardly and inwardly extending flange and lying spaced and parallel with said planar main panel and detachably engaging over said cover engaging means of said one side wall of said pan.

(6) The invention according to Claim 2 in which said pan side engaging means on one of said side edges of said cover comprises a longitudinally extending inwardly and downwardly extending flange formed on said one side edge and a further longitudinally extending flange extend-ing inwardly from the edge of said downwardly and inwardly extending flange and lying spaced and parallel with said planar main panel and detachably engaging over said cover engaging means of said one side wall of said pan.

(7) The invention according to Claim 3 in which said pan side engaging means on one of said side edges of said cover comprises a longitudinally extending inwardly and downwardly extending flange formed on said one side edge and a further longitudinally extending flange extend-ing inwardly from the edge of said downwardly and inwardly extending flange and lying spaced and parallel with said planar main panel and detachably engaging over said cover engaging means of said one side wall of said pan.

(8) The invention according to Claim 4 in which said pan side engaging means on one of said side edges of said cover comprises a longitudinally extending inwardly and downwardly extending flange formed on said one side edge and a further longitudinally extending flange extend-ing inwardly from the edge of said downwardly and inwardly extending flange and lying spaced and parallel with said planar main panel and detachably engaging over said cover engaging means of said one side wall of said pan.
