<B>MATERIAL PéCTICO MODIFICADO<D>.Um material péctico modificado tem uma estrutura de ramnogalacturano com cadeias laterais de açúcares neutros dependentes da mesma. O primeiro grupo de cadeias laterais compreende cadeias relativamente curtas, retas, de açúcares neutros, e um segundo grupo de cadeias laterais compreende cadeias altamente ramificadas de açúcares neutros. Galactose compreende, preferivelmente, pelo menos 6% em peso, dos açúcares neutros, e o peso molecular do material péctico modificado está na faixa de 5.000 a 100.000, e mais preferivelmente é de 10.000.
