Abstract
CÉLULA DE LEVEDURA SACCHAROMYCES E PROCESSO DE FERMENTAÇÃO USANDO A MESMA. Uma célula de levedura Saccharomyces, preferencialmente uma célula de levedura Saccharomyces cerevisae, compreendendo uma ou mais sequências de ácido nucleico que codificam uma enzima com atividade de nitrato redutase dependente de NADH e/ou uma ou mais sequências de ácido nucleico que codificam uma enzima com atividade de nitrito redutase dependente de NADH. Um processo de fermentação anaeróbica para a produção de um produto de fermentação usando tal célula de levedura Saccharomyces e um coproduto de fermentação produzido.
