MÉTODOS PARA PRODUZIR UM EXTRATO DE CAFÉ E PARA INTENSIFICAR AROMA ESPECÍFICO DO CAFÉ E REDUZIR SABOR VARIADO EM UM EXTRATO DE CAFÉ. É provido um método para produzir um extrato de café no qual o aroma único de café é intensificado e sabores variados são suprimidos. A presente invenção mistura: um extrato de café obtido por recuperação até que uma porcentagem de extração seja 1,0% a 20,0% (inclusivo); e um extrato de café obtido devido a um extrato sendo submetido a um tratamento de separação de gás de acordo com um método não térmico, o extrato sendo adicionalmente extraído após uma primeira etapa de extração até que a porcentagem de extração aumente em 1,0 a 15,0% (inclusivo).METHODS FOR PRODUCING A COFFEE EXTRACT AND TO ENHANCE SPECIFIC COFFEE AROMA AND REDUCE VARIOUS TASTE IN A COFFEE EXTRACT. A method is provided for producing a coffee extract in which the unique coffee aroma is enhanced and varied flavors are suppressed. The present invention blends: a coffee extract obtained by recovery until an extraction percentage is 1.0% to 20.0% (inclusive); and a coffee extract obtained due to an extract being subjected to a gas separation treatment according to a non-thermal method, the extract being further extracted after a first extraction step until the extraction percentage increases by 1.0 to 15.0% (inclusive).
