Abstract

método para produzir um líquido com conteúdo reduzido de sacarídeo. a presente invenção refere-se a métodos para produzir um líquido que compreende: (a) fornecer um primeiro líquido que compreende um extrato do material vegetal; (b) filtrar o primeiro líquido com um filtro que tem um tamanho de poro entre 4.000 e 100 dalton para gerar um segundo líquido que compreende mais componentes dotados de um tamanho maior do que o tamanho de poro do filtro, incluindo pelo menos 18% dos sacarídeos, e um terceiro líquido que compreende mais componentes dotados de um tamanho menor do que o tamanho de poro do filtro; (c) incubar o segundo líquido com micro-organismos sob condições que permitem uma fermentação até que o conteúdo de sacarídeo do segundo líquido seja reduzido por pelo menos 20% devido à fermentação microbiana; (e) remover pelo menos 80% do álcool ou 80 % dos outros produtos da fermentação do líquido fermentado para obter um quatro líquido; (f) combinar pelo menos uma parte do quarto líquido com pelo menos uma parte do terceiro líquido. a presente invenção fornece adicionalmente líquidos, sucos de fruta e aditivos alimentícios capazes de serem obtidos por esses métodos.
