Abstract
"TABLETE DE PEQUI (CARYOCAR BRASILIENSE)". A presente invenção introduz uma nova alternativa para o consumo de pequi (Caryocar brasiliense), com a vantagem do produto pronto para consumo, sem necessitar manipular a própria fruta. O produto desenvolvido, constitui-se em um aglomerado sólido com alta vida-de-prateleira, porém de fácil consumo, boa dispersibilidade e solubilidade, mantendo as propriedades sensoriais e a maioria do valor nutricional da fruta in natura. O tablete desenvolvido é totalmente natural, com utilização de processo simples e naturais, protegendo a saúde do consumidor.
