Abstract
"PROCESSO PARA A PREPARAçãO DE PRODUTOS ALIMENTìCIOS DE BATATA FRITA E DE TIRAS DE BATATA FRITA à BASE DE MILHO E TIRAS DE BATATA FRITA à BASE DE MILHO PRé-FRITAS CONGELADAS". São proporcionadas tiras de batata frita à base de milho e um processo de preparação relacionado à estas, onde as tiras são produzidas a partir de uma massa de farinha à base de milho. A massa de farinha à base de milho compreende uma matriz de alimento milho e farinha de milho de diferentes tamanhos de grânulos ou partículas, misturada com água e opcionais constituintes aromatizantes e temperos para formar uma massa de farinha relativamente espessa possuindo uma textura adequada para extrusão e corte para formar tiras alongadas possuindo um tamanho e forma de conformidade geralmente com a da convencional batata frita à base de batata. As tiras de massa de farinha de milho formadas e cortadas podem ser pré-fritas em óleo quente, e em seguida congeladas. As tiras de milho congeladas são subseq³entemente terminadas de preparar para o consumo, preferivelmente através de um acabamento por fritura em óleo quente. Corn-based potato strips and a preparation process related to these are provided, where the strips are produced from a corn-based dough. The corn-based dough comprises a maize food matrix and corn meal of different granule or particle sizes, mixed with water and optional flavoring and seasoning constituents to form a relatively thick dough having a texture suitable for extrusion and cut to form elongated strips having a size and shape conforming generally to that of conventional potato-based crisps. The strips of corn dough formed and cut can be pre-fried in hot oil, and then frozen. The frozen strips of corn are subsequently finished preparing for consumption, preferably through a frying finish in hot oil. The finished corn strips have a corn appetizer flavor in combination with a texture defined by a crinkled outer surface encasing a moist, dough-lined interior.
