Abstract

The method is applied in biotechnological production for the creation of a broad line of curative preparations. The protein concentrate has high protein content and a regulated content of mineral substances and lactose, enriched with valuable metabolites of milk-acidic bacteria and biologically active substances. Following the method, the proteins of preliminarily treated through acidic-thermal coagulation milk and raw milk is extracted. The so-derived concentrate is subject to diafiltration with deionised water and an herbal extract, it is pasteurised and treated biologically with clean crops from the milk-acidic bacteria Lb.bulgaricus, Lb.acidophilus, Str.termophilus in a combination with yeast of the Sach.lactis type. The permeate, derived after the ultrafiltration, is used as a nutritious milieu after additional biological enrichment through the combination of a combined yeast of milk-acidic bacteria and yeast, after which the derived biomass is added to the concentrate before drying and after membranous segregation.
