Abstract
The method is realized by thermostating the periodically fed whey at a temperature of 45 to 55 degrees C for 5 to 12 hours and then submitting it to fermentation in conditions of fermenting medium circulation, containing micro-organisms of the Lactobacillus bulgaricus type. Alkali carbonate solution is used to maintain the pH circulation flow. The fermented medium is kept at temperatures from 35 to 40 degrees C, the formed carbon dioxide from the alkali carbonate being led from the fermentation vessel to the raw material and to the final product. The method is realized by means of equipment, consisting of a thermostated vessel (1), connected through a pump (4) to the fermentation vessel (2),at the bottom of which, the pump sucker is mounted (5), and the pump blower (5) is connected through a pH-regulator (6) to the top end of a fermentator (2), which is connected itself to a thermostated vessel (3). The top end of the fermentator (2) is connected to the thermostated vessel (1) and to thermostated vessel (3) through pipes (7 and 8).
