Abstract

The invention relates to a method for the production of Bulgarian white brined cheese with an embossed symbol mark on the product, in particular an embossed image of the trademark or another sign of the manufacturer for its identification in retail stores. The method for the production of Bulgarian white brined cheese with embossed symbol marks on the surface of the product consists of accepting, grading, standardization, storage, thermization, pasteurization, and curdling of the milk, followed by subsequent cutting and repeated stirring of the cheese coagulum, after which it is pressed, cut, salted, packaged, and stored. The pressing is performed as first and second pressing of the cheese coagulum. The first pressing is performed for 15-20 min with 30 10-kilogram weights (4), positioned above slats (12) in a tub (1) with the cheese coagulum for the production of curd (7). The second pressing is performed after untying the strainer (9) and breaking the cheese coagulum with the subsequent placing on top of the cheese coagulum of a coarse rigid plastic grid with openings of 2 mm by 2 mm (10) and with evenly distributed embossed protruding signs (11) formed on its lower side, after which the strainer (9) is tied and above it are placed slats (12) with 45-50 10- kilogram weights (4), which are evenly distributed on them for 60-90 min.
