Abstract
The composition and the method are used in the food industryfor making Boza drink in liquid and jelly form for immediateconsumption. The composition contains the following components, inwt.%: cereal products from 10 to 14, flour 0-2, potable water from75 to 85, sweetener 6-8, bread yeast 0.1-0.5 and aromatizer0.01-0.05. The method consists in dry mixing of the componentswhich are wetted in ratio 1:3 and are boiled at 90 to 160°C for1.5-2 h until the yattain a light - to dark beige-colour withlight shade of caramel. The mixture produced is cooled to 12-15°Cand water is added to the cooled paste, the dry substance being atleast 7%. The mixture is strained, bread yeast, sweetener andaromatizer are added, after which it matures at temperature rangefrom 1 to 15°C.2 claims
