Abstract
The meat is treated with 0.01-0.50 wt. % of a gamma-pyrone comprising 3-hydroxy-2 methyl gamma-pyrone, 3-hydroxy-2 ethyl gamma-pyrone, 5-hydroxy-2 methyl gamma-pyrone or mixts. thereof. Storage temp. is -1 to 5 degrees C pref. -1 to 7 degrees C. The compsn. is applied as an aq. soln. to the meat surface which retains its fresh appearance for over 24 hrs.
