Stokjesvlees-stand. De huidige uitvinding heeft betrekking op een stokjesvlees-stand, met andere woorden een inrichting die toelaat vlees op stokjes op een zeer doeltreffende en efficiënte manier te verzamelen en/of uit te stallen.
Men weet dat vlees op stokjes, zoals vleesfakkels, satés en dergelijke, meestal in schoteltjes op elkaar worden gelegd en aldus worden ingevroren in afwachting van de bereiding ervan.
Zulke manier van werken heeft verscheidene nadelen.
Een eerste nadeel is dat de satés, vleesfakkels of dergelijke, door ze op elkaar te leggen, in elkaar gedrukt worden en dus vervormen.
Een ander nadeel is dat op deze wijze, tijdens het invriezen, de vleesfakkels, satés of dergelijke, tegen elkaar vastvriezen.
Bovendien verkrijgt men op deze wijze een trage invriezing met relatief grote ijskristallen die de cellen, waaruit het vlees bestaat, als het ware kapot drukken.
Bij het ontdooien bekomt men dan veel lekverlies uit de voornoemde cellen vermits deze hun water niet meer vasthouden, wat een merkelijk kwaliteitsverlies met zich meebrengt, doordat het vlees eigenlijk uitdroogt en dus taaier wordt.

Een verder nadeel van deze manier van werken is dat, wanneer men één vleesfakkel, saté of dergelijke moet klaarmaken, men het ganse pakket moet ontdooien, wat zeer nadelig kan zijn voor de kwaliteit van de eetwaar, wanneer de andere ontdooide vleesfakkels of dergelijke slechts later worden bereid.
Nog een nadeel van het ontdooien van in één massa ingevroren producten is dat de ontdooiing niet uniform is doordat de buitenste en bovenste producten sneller ontdooien dan de rest.
Wanneer de vleesproducten in massa worden ingevroren, namelijk per 10,20, 30 of meer stuks, zullen zij ook gezamenlijk moeten worden ontdooid, bijvoorbeeld in de microgolfoven, waardoor'steeds een zichtbaar kwaliteitsverlies optreedt doordat de producten die zich aan de omtrek van de massa bevinden, reeds half gaar zijn op een ogenblik dat de producten die zich binnenin de massa bevinden amper ontdooid zijn.
Bij sluitingsdagen moeten de aldus ontdooide, niet verkochte producten dan ook in de frigo worden bewaard met alle mogelijke gevolgen van eventueel lekverlies, uitdroging en of bacteriënontwikkeling.
Nog een ander nadeel van deze manier van werken is dat, de opeenstapeling van vleesfakkels, satés of dergelijke, dikwijls een zeer onsmakelijke indruk geeft, wat belang heeft wanneer zulke vleesfakkels of dergelijke in een koeltoog uitgestald zijn.
De huidige uitvinding heeft dan ook een stand als voorwerp voor het tentoonstellen, invriezen en bewaren of dergelijke

van vleeswaren op stokjes, zoals vleesfakkels, satés en andere bereidingen, waarbij de verschillende vleeswaren, los van elkaar, in of op een geschikte steun worden bevestigd, zodat de producten niet aan elkaar kleven.
Een eerste voordeel hiervan is dat het invriezen van deze aldus opgestelde vleeswaren als het ware individueel geschiedt zodat het mogelijk is één vleesfakkel, saté of dergelijke van de ingevroren hoeveelheid te verwijderen zonder dat alle producten moeten worden ontdooid.
Het feit dat de vleeswaren afzonderlijk kunnen worden ontdooid, maakt het mogelijk zulke vleeswaar snel te ontdooien in de microgolfoven om deze vervolgens te bakken, waarbij de andere vleeswaren in de diepvries blijven, wat een groot voordeel is voor sluitingsdagen en dergelijke.
Bovendien, wanneer zulke vleesfakkels, satés of dergelijke in een doorzichtige koeltoog worden bewaard, geven deze voor de gebruiker een zeer smakelijke indruk en kunnen zij zeer eenvoudig afzonderlijk worden weggenomen, terwijl op ieder ogenblik hun oorspronkelijke vorm behouden blijft.
Tevens heeft zulke opstelling in een koeltoog een geleidelijke ontdooiing als gevolg.
Nog een voordeel van zulke stand volgens de uitvinding is dat het invriezen van een aldus verzamelde hoeveelheid vleesfakkels, satés of dergelijke vlugger kan geschieden, aangezien de koude rechtstreeks omheen de betreffende eetwaar kan doordringen, wat niet het geval is wanneer een massa vleesfakkels, satés of dergelijke, op elkaar gestapeld, worden ingevroren.

Door deze snelle invriezing blijven de ijskristallen eerder klein waardoor de cellen in het vlees niet, of in ieder geval veel minder, kapot worden gedrukt.
Bij ontdooiing krijgt men hierdoor weinig zogenaamd lekverlies, waardoor het product sappiger en malser blijft, met andere woorden waardoor het kwaliteitsverlies door het invriezen en ontdooien zeer gering is.
De stokjesvlees-stand volgens de uitvinding die de voornoemde en andere voordelen vertoont, bestaat tot dit doel hoofdzakelijk uit een steun waarin, op geschikte afstanden ten opzichte van elkaar, blinde gaten zijn voorzien, waarvan de afmetingen zodanig zijn dat zij een stokje van een vleesfakkel, saté of dergelijke in een stand kunnen houden die co-axiaal is met de betreffende blinde gaten.
Met het inzicht de kenmerken van de uitvinding beter aan te tonen, zijn hierna, als voorbeelden zonder enig beperkend karakter, enkele voorkeurdragende uitvoeringsvormen weergegeven van zulke stokjesvlees-stand volgens de uitvinding, met verwijzing naar de bijgaande tekeningen, waarin :
Figuur 1 een meest voor de hand liggende verticale opstelling weergeeft van vleesfakkels, satés of dergelijke ; figuren 2 en 3 uitvoeringsvarianten weergeven van figuur 1.
In figuur 1 is een stokjesvlees-stand 1 weergegeven die om het even welke platte vorm kan vertonen, namelijk vierkantig, rechthoekig, ovaal, cilindrisch of welke andere

vorm dan ook, waarbij, afhankelijk van het soort en de grootte van de vleesfakkels, satés of dergelijke 2, op regelmatige afstanden in deze steun 1 blinde gaten 3 zijn aangebracht, waarvan de afmetingen voldoende groot zijn om steun te bieden aan het stokje 4 van een vleesfakkel, saté of dergelijke 2.
Het is duidelijk dat op deze wijze wordt verkregen dat de vleesfakkels, satés of dergelijke 2 op zeer ordentelijke wijze, mooi, bijvoorbeeld volgens een regelmatig patroon, geschikt zijn in de steun 1 en dit steeds op een zodanige wijze dat de vleesfakkels, satés of dergelijke 2 mekaar niet raken, en deze eetwaren afzonderlijk kunnen worden weggenomen.
In figuur 2 is een uitvoering weergegeven waarbij de steun 1 de vorm bezit van de helft van een omwentelingslichaam met andere woorden, hetzij half cilindrisch is uitgevoerd, hetzij half bolvormig, hetzij nog volgens een andere vorm, is uitgevoerd, en, waarbij de voornoemde blinde gaten 3 radiaal gericht zijn aangebracht.
In figuur 3 is nog een uitvoeringsvorm weergegeven, waarbij de vleesfakkels, satés of dergelijke 2 aangebracht zijn in blinde gaten 3 die in de omtrek van een schijfvormige steun 1 zijn voorzien, waarbij al dan niet in het bovenoppervlak van zulke steun 1 nog bijkomende blinde gaten 3 kunnen worden aangebracht, waarin de vleesfakkels, satés of dergelijke 2 op de wijze, zoals weergegeven in figuur 1, zijn aangebracht.
Het is duidelijk dat men op deze wijze een stokjesvlees-stand bekomt, waarbij het invriezen van de elkaar niet rakende eetwaren 2 vlugger en zeer doeltreffend

geschiedt ; waarbij het verwijderen van één ingevroren vleesfakkel, saté of dergelijke 2 op zeer eenvoudige wijze kan geschieden ; waarbij deze vleeswaren op geen enkele wijze in of tegen elkaar kleven en aldus volledig in alle omstandigheden hun oorspronkelijke vorm behouden ; en waarbij, wanneer zulke stokjesvlees-stand in een koeltoog is geplaatst, de koeling beter behouden blijft, enerzijds, en, de hoeveelheid vleesfakkels, satés of dergelijke 2, een smakelijker uitzicht blijven behouden, anderzijds.
Vanzelfsprekend is de huidige uitvinding geenszins beperkt tot de hiervoor beschreven en in de tekeningen weergegeven standen, doch zulke stokjesvlees-stand kan in allerlei vormen en afmetingen worden verwezenlijkt, zonder buiten het kader van de uitvinding te treden.

Due to this rapid freezing, the ice crystals remain rather small, so that the cells in the meat are not, or at least much less, crushed.
During defrosting, this causes little so-called leakage loss, so that the product remains juicier and more tender, in other words, the quality loss due to freezing and thawing is very small.
For this purpose the skewer position according to the invention, which has the aforementioned and other advantages, consists mainly of a support in which blind holes are provided at suitable distances from one another, the dimensions of which are such that they are a skewer of a meat flare hold satay or the like in a position co-axial with the blind holes in question.
With the insight to better demonstrate the characteristics of the invention, hereinafter, as examples without any limiting character, some preferred embodiments of such skewered meat according to the invention are shown, with reference to the accompanying drawings, in which:

Figure 2 shows an embodiment in which the support 1 is in the form of half a body of revolution, in other words, either semi-cylindrical or semi-spherical or in another shape, and wherein the aforementioned blind holes 3 are arranged radially.
Figure 3 shows another embodiment in which the meat flares, satays or the like 2 are arranged in blind holes 3 which are provided with a disc-shaped support 1 in the circumference, wherein additional blind holes may or may not be present in the upper surface of such support 1. 3 can be arranged in which the meat flares, satés or the like 2 are arranged in the manner as shown in figure 1.

Of course, the present invention is by no means limited to the positions described above and shown in the drawings, but such skewered meat can be realized in all shapes and sizes without departing from the scope of the invention.
