Abstract

A process for decaffeinating green coffee comprising treating green coffee with at least one acetal of the general formula <IMAGE> wherein R1 is a hydrogen atom or a methyl group and R2 and R3 are each a methyl group or an ethyl group, as an organic solvent, and removing solvent residues by steaming the treated green coffee.
